It does seem the world went hop-ping mad recently!
Interestingly there are around 80 different hop varieties in use all given their own flavour profiles.
American varities such as, 'Chinook' and 'Cascade' are more popular these days, both giving a flowery and citrus led aroma. ⠀
I am definetly a fan of a nice IPA, I tend to reach for @brewdogofficial Punk IPA but what do you guys choose at the beer counter? 🍺😋

I love being out in the wild searching for edible plants and flowers to use in drinks. Flowers also make fantastic garnishes too! I tend to stick with Violas due to their vibrant colours. ⠀

I had the pleasure of eating @silobrighton and sitting at the pass recently. I've been meaning to visit for sometime now from friend recommendations and I was not dissapointed. ⠀
It was great to meet Douglas @mcmasterchef himself. The man really is a pioneer in sustainability and it was great to hear we share many of the same ideas and principles!⠀
They even have their own flour mill on site which is used to create this epic sourdough bread served on a plate made from recycled plastic bags. ⠀

Not long until @gravetyemanor is back open but over the closure we have been making the most of the time off. Yesterday we had two fantastic supplier tours organised, @brightonfishsales and @bedlam_brewery. Being able to drink Bedlam pale ale straight from the tank was pretty special! We stopped off at The Bull in Ditchling for a pub lunch where obviously I had the beer battered fish and chips 😋 🐟

Absolutely delicious, they also added an Advocatt ice cream around the edge of the glass and a marble cake garnish. Flipping incredible! 😬
Good shot courtesy of @mbevjp of the tasting today. Fantastic to meet Jerome Dupont himself. Dupont Calvados has always been a strong favourite of mine, now even more so learning about the process of his craft. Also trying a 1988 vintage was pretty special!

If I had to choose it would be the Hors d’Age as my favourite, simply sublime 🤤

My final day in France has ended with a sightseeing tour of Paris. The spectacular city has given me a lot of inspiration for some new recipes due to the Parisian lifestyle and the grandeur and elegance of some of the architecture. Our day in Champagne started with a wonderful tour of the cellars of Taittinger. Incredible to see such a large selection of Jéroboam and Methusalem sizes! The tasting as to be expected was fantastic with the Comtes De Champagne 2006 stealing the show 🍾🥂🤤 I love the fact this proud house is still a family run establishment with their own vineyards in the region. 🍇#champagne
Another great tasting in the area of Cognac and this time at Leyrat distillery. A single estate vineyard producing exclusively from the Fin Bois region. Great tasting hosted by @abk6cognac.eu who even let us enjoy my favourite cognac, the Leyrat Glory. 😋🥃
Our tour at @hennessy concluded with a visit to the distillery and a tasting with the incredible Jean Michel Cochet. A man with an impressive depth of knowledge of the Hennessy brand and production. Such an honour to meet him! With @horacebuckenham #bartender#hennessy
Today has been truly special with a tour of Hennessy headquarters. A sensory education was then followed by a visit of one of their cellars and a tasting of their VSOP and XO. Tonight, @horacebuckenham and myself will be dining with Jean Michel Cochet, the brand ambassador at Chateau Bagnolet, to understand more on Cognacs role in the future of the bar world. #bartenderlife
