#mealprep 🙌🏻 I have a long day of work today so I prepped my lunch and some snacks yesterday! All the good stuff to keep me going: my fave smoked tofu with rice, veggies and avo, fresh mango, grapes and a @cocovi_superfood protein brownie 😛
My two favourite things lately have been homemade pesto and this new smoked tofu I tried for the first time couple of days ago! 😋🌱
This meal is also super easy to mealprep and it is just as delicious when eaten cold! I used some wholewheat pasta and added some cucumber, capsicum and green peas to the dish!
recipe for the pesto:
1 cup basil
1/2 cup green peas
1/2 cup spinach
1 garlic clove
2 tbs lemon juice
2 tbs nutritional yeast
It is always so nice having a meal ready at home after a long busy day! That’s why I always make big batches of food and freeze the leftovers. For dinner today I had these home-made veggie patties that I heated up from the freezer. All I had to do when I got home was to cook up som rice and veggies! 🌱😋
Tried this tomato and basil tofu a couple of days ago and I really like it! It is from a brand called ”so fine”. 🙌🏻 I served it with baked sweet potato and some steamed kale for my lunch that day! Would have added an avocado as well and it would have been on point 👌🏻but didn’t have any at home ☹️
A very green lunch today 🌿 Chickpea-pesto pasta and green beans! 🙌🏻 I made the pesto using some fresh spinach and basil, almonds, lemon juice and garlic. It was actually my first time making my own pesto but it turned out suprisingly good!

Made these chickpea brownie muffins today! 🍫🙌🏻 They turned out really yummy so I thought I would share the recipe! I originally planned on making blackbean brownies but didn’t have any blackbeans on hand. This was a nice variation and they actually taste even better with chickpeas!
1 can of chickpeas
3tbs cocoa powder
1/2 cup oat flour
1tsp baking powder
1 flax egg
1/4 cup coffee
1/4 cup plant milk
(optional) chocolate chips
Mix everything together in a bowl and divide in to muffin tins. Bake in the oven for 10-15min. Enjoy! 😋🍫
So excited about these @pulsinandbeond raw bars that came in the mail today! 😍🙌🏻 I already tried the maple & peanut one and it was really good! I love having a couple of these in my bag so that I have something healthy to snack on whenever I need it! 🌿👌🏻
I was so hungry and tired after my bike ride this evening so I made this super quick lentil thing 😅 I just threw a bunch of veggies and spices in a pot and let it simmer! And it actually turned out suprisingly well! I used some chopped tomatoes, carrot, red lentils and an indian spice mix! Super simple and delicious! 🌿🙌🏻
