Here is a delicious recipe for Keto Bread by @ruledme!

CALORIES/MACROS
Makes 8 servings Keto Bread. Each serving comes out to be 134 Calories, 8g Fats, 3g Net Carbs, and 8g Protein.

INGREDIENTS
-6 large eggs, at room temperature
-1 cup coconut flour, sifted
-Β½ cup flaxseed meal
-1 teaspoon salt
-1 teaspoon baking powder
-Β½ teaspoon baking soda
-Β½ cup water
-1 tablespoon apple cider vinegar
.
DIRECTIONS
1. Preheat your oven to 350F and grease pan(s). Then sift the coconut flour into a mixing bowl.
2. Add remaining dry ingredients and whisk.
3. Add eggs, water and vinegar.
4. Stir until batter comes together. It will be thick.
5. Press batter into pan(s) and bake until cooked through, about 40 minutes.
6. Allow bread to cool in pan until just warm, then remove from pan, slice and enjoy.

Makes a total of 36 Keto Tater Tots. Each 9 piece serving comes out to be 236 Calories,19g Fats, 5.5g Net Carbs, and 9g Protein.

INGREDIENTS
-1 medium head cauliflower
-ΒΌ cup grated Parmesan cheese
-2 ounces mozzarella cheese, shredded
-1 large egg
-Β½ teaspoon onion powder
-Β½ teaspoon garlic powder
-2 teaspoons psyllium husk powder
-Salt and pepper to taste
-1 cup frying oil (I used Bacon Fat)

DIRECTIONS
1. Cut cauliflower head into florets. Steam until tender. Pulse in food processor until it resembles mashed potatoes.
2. Let cauliflower cool, then put into a dish cloth and wring out any excess water.
3. Add cheese, egg, and spices. Mix together until mixture is thickened and can be worked with. Add 1 tsp. extra psyllium husk powder at a time if needed.
4. Roll batter into tater tots, then heat oil. Fry 6-9 at a time, flipping as they brown on each side.
5. Lay on paper towels to cool, then serve.

-2 lbs. Ground Beef (85/15)
-8 cups Spinach (~8 oz.)
-1 cup Rao's Tomato Sauce
-1/4 cup Parmesan Cheese
-2 medium Green Bell Peppers
-2/3 medium Onion
-1 Tbsp. Olive Oil
-1 Tbsp. Cumin
-1 1/2 Tbsp. Chili Powder
-2 tsp. Cayenne Pepper
-1 tsp. Garlic Powder
-Salt and Pepper to Taste
DIRECTIONS
1. Chop the onion and bell peppers to size of your liking. Then, season with salt/pepper and sautee in olive oil on medium-high heat stirring occasionally. Once the beef is browned, reduce the heat of the vegetables to low and let cook.
2. Put your ground beef in a pot over medium-high heat and start to brown it. Season with salt, pepper, and spices.
3. Once the beef is browned, add the spinach to the pot. Let stream for 2-3 minutes, then mix in well.
4. Add low carb tomato sauce to pot, stir well, then reduce heat to medium-low and cook for 10 minutes.
5. Add in the parmesan cheese and then stir together, then add the vegetables in and stir again. Let cook for a few more minutes and serve with toppings of your choice when ready.

So what fats should you be eating with the ketogenic diet?

The answer is simple.

You should be getting your fats from healthy fat sources like avocados, eggs, butter, fatty meats, and oils like avocado, MCT, olive, and macadamia 80% of the time. These foods are high in micro nutrients and are high in polyunsaturated, monounsaturated, and saturated fats which are great for the ketogenic diet.

The other 20% of the time you should be getting your fats from other sources like full fat cheeses, milk, flax seeds, chia seeds, nut butters and nuts. .
The 20% options are great keto fat sources, but should be consumed in moderation becasue of the amount of carbs in these foods can add up quick!

Remember the 80/20 Rule the next time you are selecting your keto fats. Opt for the healthy fats 80% of the time and incorporate the other options 20% of the time.

Makes 10 servings of Keto Chocolate Pie. Each serving comes out to be 449 Calories, 44g Fats, 6g Net Carbs, and 9g Protein.

INGREDIENTS
For the crust:
-1 Β½ cup almond flour
-Β½ tsp. baking powder
-1/8 tsp. salt
-1/3 cup granulated stevia/erythritol blend
-3 Tbsp. butter
-1 egg
-1 Β½ tsp. vanilla extract
-1 tsp. butter
For the filling:
-16 oz. cream cheese, room temperature
-4 Tbsp. sour cream
-4 Tbsp. butter
-1 Tbsp. vanilla extract
-Β½ cup granulated stevia/erythritol blend
-Β½ cup cocoa powder
-1 cup whipping cream
-2 tsp. granulated stevia/erythritol blend
-1 tsp. vanilla extract
DIRECTIONS
1. Preheat oven to 375. Butter a 9” pie pan with 1 tsp. butter
2. In a bowl, combine almond flour, baking powder, salt and 1/3 cup stevia/erythritol blend, whisk all together.
3. Add butter. Using a pastry blender, whisk or a fork, cut the butter into dry ingredients until the mixture forms into crumbs.
4. Add egg and vanilla extract and form dough into a ball.
5. Put ball in the pan and spread out the dough until it covers the bottom and sides of the pan. Using a fork, poke holes in the bottom and sides of crust to prevent bubbles.
6. Place crust in the oven and bake for 11 minutes. Remove crust from the oven and cover edges with foil. Bake for 5 to 8 more minutes. Allow crust to cool completely before filling.
7. To prepare the filling, place cream cheese, sour cream, butter, vanilla extract, Β½ cup stevia/erythritol blend and cocoa powder in a bowl.
8. Using a mixer on low speed, blend ingredients, then increase to high speed and beat until fluffy.
9. Place the whipping cream in a small bowl. Using mixer beaters, whip the cream until it peaks. Add the 2 tsp. sweetener and 1 tsp. vanilla extract and beat until stiff peaks form.
10. Gently fold 1/3 of whipped cream into the cream cheese mixture to lighten. Add remaining whipped cream mixture and fold it in gently.
11. Scoop the filling into the crust and smooth the top with a spoon. Cover and refrigerate your keto chocolate pie for at least 3 hours before serving.

Using a pastry blender, whisk or a fork, cut the butter into dry ingredients until the mixture forms into crumbs. 4. Add egg and vanilla extract and form dough into a ball. 5. Put ball in the pan and spread out the dough until it covers the bottom and sides of the pan. Using a fork, poke holes in the bottom and sides of crust to prevent bubbles. 6. Place crust in the oven and bake for 11 minutes. Remove crust from the oven and cover edges with foil. Bake for 5 to 8 more minutes. Allow crust to cool completely before filling. 7. To prepare the filling, place cream cheese, sour cream, butter, vanilla extract, Β½ cup stevia/erythritol blend and cocoa powder in a bowl. 8. Using a mixer on low speed, blend ingredients, then increase to high speed and beat until fluffy. 9. Place the whipping cream in a small bowl. Using mixer beaters, whip the cream until it peaks. Add the 2 tsp. sweetener and 1 tsp. vanilla extract and beat until stiff peaks form. 10. Gently fold 1/3 of whipped cream into the cream cheese mixture to lighten. Add remaining whipped cream mixture and fold it in gently. 11. Scoop the filling into the crust and smooth the top with a spoon.
