Cooking & dining al fresco (outside) tonight — Yes, I had a cookout with my Instant Pot. The weather was too perfect to cook indoors. This was the first time I used my Instant Pot with this recipe, and I’m really pleased with how it turned out. Catch my Stories to watch me make it. I used my Vitamix to blend the broth.

Açaí Bowl for breakfast. If you’ve been following my Stories, then you know I’ve relocated to Las Vegas. If not, you may have been wondering why I haven’t posted in a while. I’m sorry for the lapse, and hope to share my tips for healthy eating during this transition period without a home kitchen over the next several weeks until we get into our new house.

The food, juices and nutmylks are incredible — they let us taste a few, and the ambiance is so cozy and amazing, I told Jen I want to move in there 🤣
Super friendly service, too. They graciously made my golden milk with coconut nectar instead of honey, and it was delicious. Highly recommended! 😊💗

Buffalo Jackfruit Tacos for dinner with black beans, sautéed veggies (red onion, yellow bell pepper and portobello mushrooms), salsa, avocado and cilantro. Soooo simple but soooo delicious.
I got the jackfruit pieces canned from @traderjoes, drained, rinsed and pulled the fibrous bits apart, and then marinated it for a few hours in Buffalo hot sauce from @wegmans. A quick, 10-minute simmer in a little more sauce was all it took for the jackfruit to be taco ready.
I had batch-cooked and frozen the black beans, so they were a quick defrost, and I lightly sautéed the veggies separately. Whole grain tortillas. It all came together really easily. Check out my Stories to see the cooking in action. 😊👍

Thai Sweet Potato Peanut Curry served over Red Quinoa and topped with chopped cilantro and raw peanuts. This was our dinner tonight. You can watch me make it in my Stories.
Sauté a chopped red onion in 1 Tbsp olive oil until soft. Stir in 3 cloves minced garlic and 1 thumb sized piece of ginger, minced. Add 1/2 cup white wine, simmer until half evaporated. Add 4 chopped sweet potatoes and a half cup of water. Turn the heat to low, cover and simmer for 25 minutes. In the meantime, start simmering a cup of red quinoa in 2 cups of salted water (20 minutes). In a small blender (I use a Magic Bullet), blend 3 Tbsp Thai red curry paste with 2 Tbsp powdered peanut butter (PB2), a splash of rice vinegar and 1/2 cup water. Add it to the simmering potatoes, along with a half cup of coconut milk. Add a dash of cayenne pepper. Stir and simmer for 10 more minutes. Chop a small box of baby spinach. When the potatoes are completely soft, turn off the heat and stir in the spinach until wilted. Cover to keep warm. Chop a handful of fresh cilantro leaves and a handful of raw peanuts. Plate the quinoa, then the potato curry, and top with cilantro and peanuts to serve.

Basil-Spinach Pesto Vegetable Farro for dinner tonight. Once you’ve got the homemade vegan pesto on hand (I had made it over the weekend), this recipe comes together pretty easily and makes a yummy, healthy weeknight meal. Farro is a high-protein whole grain, and when you get the “10 Minute Farro” from Trader Joe’s, it cooks up in 20 minutes (which is funny, but that’s still much quicker than the 40 minutes regular non-pre-cooked farro takes). I made this with red onion, red bell pepper, broccolini and portobello mushrooms. I also cooked some French green lentils - they take the same amount of time to cook as the farro, so I did it side-by-side in separate saucepans on the stove, and it was all ready at the same time — easy! 😊💗👍

I made an amazing discovery in the bulk tea section of my local @wegmans store:
🤩 Jasmine Globe Green Tea 🤩
A cross between jasmine green tea and a blooming herbal tea, these little beauties blend Chinese green tea and jasmine flowers with pink amaranth flower, for an effect that is almost as much captivating performance art as it is delicately delicious.
Each “globe” is a large gumball size and makes 20 oz of tea.

Strawberry Mango Smoothie Bowl for lunch to push me through the rest of a busy afternoon. Worked so well, I didn’t get a chance to post this photo until late tonight. But it was pretty yummy. • 1 frozen banana • 1 cup frozen mango • 1 cup frozen strawberries • 1/2 cup plain unsweetened almond milk • 1/2 tsp vanilla extract • Blend ‘til smooth • Transfer to a bowl and top with your favorite granola. I used Ezekiel cereal. 😊💗⭐️

Vegan Peanut Butter Banana Chocolate Chip Muffins baked today. This was a riff on my basic banana muffin recipe, to which I added powdered peanut butter (PB2), and a little more almond milk to compensate for the added dry ingredients. Next time, I think I’ll go even heavier on the PB2, to make the peanut flavor even stronger. In the meantime, these yummy little nuggets will hold me over nicely. 😊

Vegan Miso Vegetable Soup with gluten-free Brown Rice & Millet Ramen from @lotusfoods.
Broth was made of shallots, garlic, ginger and water, I threw in thinly sliced carrots and celery, shiitake mushrooms, wakame seaweed, baby bok choy, and once it had all simmered, I blended a couple Tbs white miso paste separately with some of the broth, and stirred it in.
Served with a few splashes of soy sauce for extra flavor. My honey throws in some Tabasco for good measure, too 😊

Blueberry Mango Açaí Bowl for lunch today. Packed with major antioxidant power, which is fitting because I’m preparing to go live on FB tomorrow with a short presentation on antioxidants. Here’s today’s recipe:
• 1 frozen banana • 1 cup frozen mango • 1/2 cup frozen blueberries • 1 Tbsp freeze-dried açaí powder • 1 tsp vanilla extract • A few Tbsp plain unsweetened almond milk (just enough to keep the blender blades moving) • Blend until smooth • Transfer to a bowl and top with your favorite granola (today I used @bobsredmill Natural Granola)

Dinner tonight, so easy and delicious. Red Lentil Penne Primavera with a “side” salad that takes up more of the plate than the main dish.
I boiled the penne, and sautéed a red onion, bell pepper and broccolini, while simultaneously washing and chopping the salad greens. When the veggies were soft, I sprinkled them with garlic powder. Once the pasta was cooked (9 minutes), I stirred in my favorite tomato sauce. And then tossed the greens with a peach balsamic vinegar.
Onto the plate went first the penne, topped with the sautéed veggies, then I filled the rest of the plate with the dressed salad and sprinkled on some chopped pecans and dried sweetened cranberries. Success 😊

Minestrone Soup for dinner tonight. I made this in my Instant Pot and used adzuki beans in place of the usual red kidney beans. I didn’t add the kale until the soup was cooked, so it still looks vibrant. The giant croutons were pieces of the loaf of whole grain bread I baked myself earlier today and toasted. Gnocchi in tomato sauce with pesto sautéed veggies and roasted Brussels sprouts for dinner tonight. This is a restaurant worthy dinner but comes together so easily at home. Roast the Brussels in the oven for 30 minutes. In the meantime, boil frozen gnocchi according to package instructions. Sauté veggies (onions, bell peppers, zucchini) and once soft, toss with a couple tablespoons of pesto sauce. When the gnocchi float, drain and toss them with your favorite tomato sauce.
