1 Cup GF flour
1/2 Cup Oat flour
1/3 Cup coconut oil
1 Egg
Pinch of salt
2/3 Cup of water (approx)

Mix together Flours & salt.  Blend in coconut oil until crumbly. Blend in egg.  Then water 1 tbsp at time until dough holds together.  Place GF floured parchment paper and place another piece on top for rolling.  Then use round cutters for tart shells; place in tart tins.  Fill with heaping tsp of filling (I use Presidents Choice suet free version) and bake 425 for about 12-13 minutes! •

2 tbsp granulated sugar 
1/4 tsp salt 
1 tsp vanilla extract 
4 cups Bobs Red Mill Gluten free flour •

FILLING 
1/4 cup unsalted non dairy butter
1/2 cup light brown sugar 
1 tbsp + 1 tsp cinnamon

GLAZE
1/2 cup powdered sugar 
1 tbsp unsweetened almond milk •
•
DIRECTIONS
Add almond milk and butter to medium sauce pot and heat until melted. Transfer to large bowl and let cool until it is around warm bath water temperature. Add yeast, stir and let sit for 10 minutes. Add sugar, vanilla and salt. Stir and let rest for another minute. •
Add flour to milk mixture 1/3 cup at a time, stirring. You want to achieve an unsticky ball. You may need slightly more or less than the four cups. Cover and let sit in a warm spot for one hour. •
Pre heat oven to 350. Mix cinnamon and brown sugar in a small bowl. •
Lay out Plastic wrap or parchment onto counter space (2-3 sheets wide) and sprinkle with gluten free flour. Roll out dough to 1/4 inch thick trying to achieve a rectangle. Cut off jagged edges. •
Melt butter and smear into dough. Sprinkle cinnamon and brown sugar mix all over. Using the wrap or paper, roll into a long roll. Cut into 1 inch pieces and place into baking dish. Bake for 20-25 minutes. •
Mix powdered sugar and almond milk, drizzle over cooked rolls. •

1 cup finely shredded, unpeeled zucchini (do not squeeze or dry) 
1/4 cup cooking oil 
1 egg
2 tbsp lemon juice
2 tbsp lemon zest •
GLAZE
•
1/2 cup powdered sugar 
1 tbsp lemon juice 
1 tsp lemon zest •
Combine all wet ingredients in one bowl and add sugar. Combine all dry ingredients in another bowl. Mix both together. Spoon batter into a greased pan. Bake at 350 degrees for 50-55 minutes or until golden brown. Set on cooling rack and once room temperature, combine all ingredients for glaze and drizzle over top. •

1/2 cup pure maple syrup. 
2 tsp vanilla extract. 
1 flax egg or regular egg. 
3 cups of packed kale leaves. 
1/3 cup shredded unsweetened coconut. •
Preheat oven to 350 degrees. Put liners into a cupcake tray (spray with cooking spray so muffins don't stick to the paper). Mix all dry ingredients together with exception of coconut. 
Put all wet ingredients into a blender and blend until smooth. 
Add dry ingredients to wet and mix. Add coconut. 
Spoon into liners and sprinkle with more coconut. Bake for 20-25 minutes. •

2cups halved strawberries - cook in a medium saucepan on medium for five minutes or until strawberries soften. 
Remove from heat and add 1 tablespoon lemon juice, 4 tablespoons chia seeds, one tablespoon honey 🍯 (optional). Stir up and then either mash for chunky jam or blend for smooth. Allow to cool for half hour and transfer into mason jar. Store in the fridge. •
