Ramadan Day 7: Eggplant fattah is one my favourite must have recipes during the month of ramadan.  Simple to make and absolutely delicious, I used @aseelfood corn oil to fry my pita chips and eggplant cubes, @Aseelfoods Tahina to make yoghurt sauce to pour over the pita chips and eggplants, and finally I used @aseelfoods extra virgin olive oil to lighly fry the pinenuts to pour over the yoghurt to give my dish a wonderful nutty bite. طبق فتة الباذنجان هو من أفضل الأطباق التي لا تفوت على مائدة الطعام خلال شهر رمضان. بسيطة الطبخ ولذيذة للغاية، استخدمي زيت الذرة من أصيل لتقلي رقائق البيِّتَا ومكعبات الباذنجان. أضيفي طحينة أصيل بصلصة الزبادي وفوقها رقائق البيِّتَا والباذنجان، وأخيرًا استخدمي زيت الزيتون البكر الممتاز من أصيل ثم قَلِّبي الفطائر الصغيرة على الزبادي لإعطاء الطبق لمسة رائعة. آملين أن تستمتعي بالطبق، الوصفة أدناه

Ingredients: -  4 eggplants, cut into 2 cm cubes - ¼ flour - 1 tbsp. pomegranate molasses -  2 tbsp. lemon juice -  2 tsp. honey - 2 pita breads, cut into small squares - ¼ cup pinenuts - 2 ½ cup yoghurt -  ¼ cup Aseel tahina sauce - 1 tsp. garlic, minced -  ½ cup pomegranate seeds - ½ bunch parsley, finely chopped - salt - Aseel Corn Oil to fry - 1 tbsp. Aseel Extra Virgin olive oil 
Directions: 
1. Fry pita bread until light golden brown. Remove from oil and place on a paper towel 
lined tray to drain excess oil. 
2. Toss eggplants in flour. Deep fry until fully cooked (should have a light golden brown

Ingredients:
• 1/4 cup bam dates, pitted and cut into halves
• 3 eggs
• pinch cinnamon
• salt
• 1 tbsp. butter 
Directions:
1. In a non-stick pan, add butter and sauté bam dates, with a pinch of cinnamon, until it softens.  Crack eggs over the dates, season with salt and scramble together.

Delicious crispy pita bread is topped with fried eggplant tossed in a garlic lemon and pomegranate dressing and finally topped with wonderful tahina and yoghurt sauce. The key to delicious recipes is to use quality ingredients, and with @aseelfoods I know the flavour of my dishes will not be compromised.

1. Wash lentils thoroughly and drain. 
2. In a medium sized pot, sauté onions until 
golden brown. Add lentils, water, salt,

cardamon, and bring to a boil. 
3. Puree ingredients with a hand blender 
until the soup has a smooth texture and 
leave to simmer on low heat for 5 
minutes. 
4. Serve with a slice of lemon on the side

Ingredients: - 12 small Courgettes - 12 Small Eggplants - 2 cups Calrose rice - 250g roughly minced lamb - ½ cup vegetable oil - 3 tsp. salt - 1 tsp. black pepper -  1 tsp. white pepper - 1 tbsp. 7-spice 
Sauce - 1/3 cup tomato paste - 1 tsp. salt - 1 tsp. white pepper - 1 tsp. 7 spice - 
Directions: 
1. Soak Calrose rice for at least 30 minutes. 
2. Wash the courgettes and eggplants, cut the tops and core out the centre. 
3. In a large mixing bowl combine rice, minced lamb, vegetable oil, salt, black pepper, 
white pepper and 7 spice. Loosely stuff the courgettes and eggplants three-quarter full, 
allowing space for the rice to expand when it is cooking. 
4. In a large pot arrange the courgettes and eggplants, fill the pot with enough water to 
cover all the vegetables. Add the tomatoes paste and season with salt, pepper and 7 
spice; on high heat bring liquid to a boil, cover, reduce the heat to medium heat and 
leave to simmer for 45 minutes. 
5. Serve with cucumber and yoghurt salad.

Directions: 
1. In a medium size sauce pan combine 500ml water, one pack of Maggi Mushroom 
Excellent Soup and a string of thyme. Bring the liquid to a boil, lower heat add a 
couple tablespoon of lemon juice and leave simmer for a comple of minutes. 
2. Heat the broiler, top baguette slices with 1 to 2 teaspoons blue cheese each, and 
place on a baking sheet. Broil until cheese is bubbly and toast is crisp, about 1 to 2 
minutes. Float 2 to 3 toasts in each bowl and serve.

Bring the liquid to a boil, lower heat add a couple tablespoon of lemon juice and leave simmer for a comple of minutes. 2. Heat the broiler, top baguette slices with 1 to 2 teaspoons blue cheese each, and place on a baking sheet. Broil until cheese is bubbly and toast is crisp, about 1 to 2 minutes. Float 2 to 3 toasts in each bowl and serve.

Creativity is the root of some of the most delicious recipes, this delicious parsnip and date molasses humus is a delightful variation to a traditional humus molasses.  The parnip are roasted to give it a nutty base then mixed with date molasses to give it a subtle sweet flavour, @aseelfoods tahini to give it a delicuus rich creamy textrue and seasoned with cumin for wonderful flavour.  Serve with fresh warm bread to enjoy the ultimate bit.  Recipe below!

Cooking time: 20 minutes. 
Ingredients: 1 can chick peas - 2 tbsp. Aseel Tahina -  ½ tsp. garlic, minced - ½ lemon, juice - 3 parsnips, peeled cut into large chunks - Aseel Extra Virgin Olive Oil - Salt - ¼ cup water - 1 tbsp. date molasses - 1 tsp. cumin - ½ tsp. chili 
Directions: 
1. Pre-heat oven to 200 degrees Celsius. 
2. Place parsnips on a baking sheet, drizzle with Aseel extra virgin olive oil and drizzle 
with salt and pepper. Roast in over for 20 mins. 
3. In a food processor, add roasted parsnips, garlic , chickpea, Aseel Tahina, lemon 
juice, date molasses, cumin powder, chili powder, and water; blend ingredients until 
it has a smooth creamy texture. 
4. Serve on a plate with a drizzle of aseel extra virgin olive oil. Delicious with vegetable 
crudités or crackers on the side.

Marinating time: at least 1 hour 
Cooking time: 15 minutes 
Ingredients: -  For the shish taouk marination: - 750 g chicken breast fillets, cut into medium size cubes - ¼ cup lemon juice - 3 tablespoons vegetable oil - 4 cloves garlic, crushed - ½ cup yoghurt or 125 ml -  1 teaspoon tomato paste - 1 teaspoon dried oregano - 2 cubes Maggi Chicken Cubes with Natural Herbs ¼ teaspoon ground cinnamon - ½ teaspoon white ground pepper - 2 small green capsicum peppers or 200 g, cut into medium cubes 
Directions: 
1. In a bowl, combine and mix all shish taouk marination ingredients. Cover and 
marinade in fridge for at least 12 hours. 
2. In a wooden skewer, arrange chicken and capsicum. 
3. Grill the shish taouk on medium heat for 5-7 minutes from all sides or until it’s 
cooked and golden brown in color. 
4. Serve with rice or salad on the side.
