•1 sheet Brooklyn Bred Bistro Sticks (1/2 package)
•2 cups strawberries, hulled and chopped
•2 cups rhubarb, chopped
•1/2 cup granulated sugar
•1 tablespoon water
•1 large egg
•2 tablespoons heavy cream or milk
•1/8 teaspoon ground cinnamon •1 tablespoons butter
Basil Whipped Cream:
•3/4 cup heavy cream, whipped
•1 tablespoon chopped basil
•1 tablespoon confectioners’ sugar
Strawberry Rhubarb Filling: •In small saucepan, over medium heat, combine strawberries, rhubarb, sugar and water. Cook 10-15 minutes, stirring frequently until mixture is thick.
1.Remove 1 sheet Brooklyn Bred Bistro Sticks from package. Separate/cut sheet into 3 pieces of 3 sticks each.
2.Cut center of bread to make a pocket using a small knife.
3.Fill each pocket with about 2 tablespoons strawberry rhubarb mixture.
4.Beat egg, heavy cream and cinnamon in medium bowl until blended well.
5.Dip each bread pocket into egg mixture, turning to coat.
6.Melt butter in a large nonstick skillet over medium heat. Place bread in skillet; cook about 2 minutes on each side, turning once. Remove and set aside.
Basil Whipped Cream: •Gently fold basil and confectioners sugar into whipped cream.
Serve French toast with basil whipped cream and more strawberry-rhubarb mixture and don’t forget to thank Mom!
