Recipe
Ingredients:
I used a 4x8 Pyrex
Walnut Fig Base
½ cup walnuts
¼ cup almonds
2 tbsp dried coconut
2 tbsp flaxseeds
½ cup dried figs
½ cup medjool dates (pitted)
½ tbsp water
½ tsp cinnamon 
Vanilla Coconut Cashew Cream
½ cup cashews (soaked in water overnight or boil water, wait 2 minutes, then pour into bowl with cashews and let soak until ready to blend)
½ cup coconut milk
½ cup dried coconut
2 tbsp maple syrup
½ tsp vanilla extract 
Fresh fig slices to decorate

Directions:
1. For the base, add all ingredients into a food processor and process until the mixture sticks together when pressed between the fingers.
2. Line tray with cling film.
3. Pour mixture into tin and carefully press firmly using the back of a spatula until base is completely flat and even.
4. Put into the freezer to set, whilst you make the vanilla coconut cashew cream.
5. For the coconut cream, add cashews to a food processor and process for a few minutes.
6. With the food processor still running, slowly add the coconut milk, maple syrup and vanilla bean paste.
7. Keep processing until the mixture becomes very smooth and creamy.
8. Add driedcp coconut and pulse to combine.
9. Pull the walnut fig base out of the freezer and fill with the coconut cashew cream layer.
10. Put back into the freezer for 2 hours to set. Slice can be kept in the freezer until serving (let defrost for approximately 15 mins for cream to soften).
11. Decorate with fresh figs, slice carefully with a sharp knife and enjoy this delightful treat with your family and friends.

Today or tomorrow? I say BOTH! And I actually say that these are so good 🤤 that I could eat them EVERYDAY! They take a while to make though... but the time is worth it! Swipe for ingredients and process. Everything is cut into very little pieces (I used my food processor) and sautéed in a wok. Also, I used 2 SHEETS OF RICE PAPER on top of each other per dumpling (using only 1 makes them too breakable). They are NOT FRIED, just GRILLED ON THE BBQ after brushing lightly with oil. So, SUPER CRUNCHY BUT HEALTHY, YAY! Have a great weekend my insta friends!

Don't let the name fool you, this thing is BOMB! My grandmother used to make it when we were little, and I remember it being so moist and delicious and raisin-ey. It tasted like love... and a whole lot of butter 😂 so this is my vegan version, and yes it does have tomato sauce in it 😉

🍟 Vegan Poutine🍟 aka Fry Heaven.. what else would you make on FRYday?! 🤤

Bake some fries to crispy perfection (toss cut russet potatoes in olive oil, salt, and paprika) 400° until crispy.. my oven takes about 40 mins.  Could always go oil free but the fries get softer while under the gravy so I like to start with some major crunch 😋😋 Then make your gravy, top with @followyourheart mozzarella shreds, and slice some green onions 🌿 DELICIOUS!!! I tested a "typical" gravy too and I prefer this mustard gravy with the fries.. adds a nice tang 🙌

Vegan Gravy:
3 tbsp vegan butter @earthbalance
2 tbsp flour
2 cups vegetable broth
2 tbsp yellow mustard
1 tbsp soy sauce
1 tsp tapioca starch

Add butter to a pan on medium heat, once melted whisk in flour and gently cook the flour for 2-3 minutes turning the heat down if needed, continuously whisking to not allow for burning.  Heat back up to medium/med high and add in veggie broth mustard, soy sauce, and tapioca starch.. whisk to combine, and let gently simmer for 3-5 minutes until it's thickened slightly.  If it's too thick add more veggie broth.

To build poutine: add crispy fries to a dish, cheeze, gravy, more cheeze if you like to live dangerously, green onions, and freshly cracked black pepper.  I've also added cheeze to the baked fries and popped them back in the oven for 5 mins.. great either way 🤤🤤🌱🍟

La mejor manera de empezar el día es con un buen smoothie.
Primero porque si desayunas un smoothie ya has comido saludablemente más o menos el 30% de tus comidas, y eso puede hacer que tu cuerpo te pida más comida saludable.
Además puedes incluir todos los macronutrientes que necesitas, incluso algunas cosas que no te gusten.

Lo importante es hacer un batido balanceado, agregando frutas, verduras y “superfoods” para un resultado muy nutritivo y delicioso!!

I was meaning to have this for breakfast but then it got later and later and later so now this is my lunch 😆 all I did was chop up some spring onions, mushrooms and red peppers and fried them in a sauce pan with some garlic powder, turmeric, smoked paprika, salt and pepper, then added in chickpeas and fresh spinach, stirred to get everything evenly coated with the spices and allow the spinach to wilt. Then served it on some multigrain rye bread 😋 my original plan was to use tofu but this is a great trick when you don’t have time / can’t be bothered / too hungry to care 😬 I’m so loving the weather today I feel like I’m on vacation 😭 why can’t it stay like this 😞 I really hope we will get more sunny heatwaves like these soon! If not I’m buggering off to Malta 🇲🇹 I hear it’s amazing this time of year 😍 what’s your plan for today? Hope you get to enjoy the sun if you’re in London - and whatever the weather is wherever you are! You can find joy in any type of weather, make it a game! .

Los pancakes 🥞 más deliciosos, perfectos para un desayuno especial

Para hacerlos necesitan:
🥞 1 taza de leche 🥛 vegetal, yo los hice con leche de coco
🥞 1 cda de aceite de 🥥 coco
🥞 1 huevo “vegano” (1 cda de linaza molida remojada 5 minutos en 3 cdas de 💦 agua)
🥞 1/2 taza de harina de avena
🥞 1/2 taza de harina integral
🥞 2 cditas polvo de hornear
🥞 1 cda de miel 🍯 de agave
🥞 1/2 cdita de sal

De esta mezcla me salen entre más o menos 12 mini pancakes o 6 pancakes normalitos.

Para prepararlos:
• Mezcla la leche y aceite de coco, la miel y el “huevo” y revuelve bien.
• Aparte mezcla las harinas, el polvo de hornear y la sal.
• Luego mezcla ambas con movimientos envolventes, sin batir.
*Esta es la forma óptima, pero si quieren agilizar, pueden simplemente poner todo en la licuadora 😬 y listo.
• Calienta un sartén y engrásalo con un poco de aceite de coco y vierte una parte de la mezcla, cuando se llene de burbujas, voltéalo y espera a que se dore.
• Repetir hasta tener una deliciosa torre de pancakes y servir con tus toppings favoritos.

1) Drain & press tofu.  I'm not a fan of thick tofu so cut yours according to your liking.. I cut the tofu widthwise in half and then use a glass to cut circles from the middle section of each piece.  Then cut the two circle pieces in half so I have four circles total.  I crumble the rest for tofu scramble.  Covered in the fridge, it will last about 3-4 days.  DM for my favorite recipe 🤤💙
2) In a shallow plate with an edge, whisk to combine: 1/2 tsp black salt, 1/2 tsp turmeric, 1 tbsp soy sauce, 1 tbsp nutritional yeast, 3 tbsp water, 1/2 tsp black pepper.  Lay all pieces of tofu in marinade letting it soak for about 2 mins, flipping if needed until coated.
3) Lightly oil pan over medium heat, when warm add tofu egg and let cook 3-4 mins on each side or until golden brown and a little carmelized 😋🕺🎉💜💜

Después de que decidí excluir la carne 🥩 animal de mi dieta, comencé a leer e investigar mucho, y conocí el término especismo, que se refiere a la discriminación de los animales 🐾 por considerarlos especies inferiores -un paralelo del sexismo o el racismo- que me hizo reflexionar y me llevó a cambiar otros aspectos de mi vida además de la dieta, con el fin de evitar el sufrimiento de los animales (esto siempre identificándome como vegetariana). .
Por ejemplo, dejé de comprar ropa o accesorios que tuvieran productos animales como cuero 🐄, lana 🐑, seda 🐛o plumas 🦆. Nunca volví a lugares como zoológicos 🦒o acuarios 🐬 ni jamás asistí a espectáculos con animales como circos 🐅, corridas de toros, mucho menos peleas de perros 🐕 o gallos 🐓. También comencé a buscar y utilizar productos cosméticos libres de experimentación en animales 🐇. Además, decidí también nunca comprar animales de compañía 🐈, sino siempre adoptar animales abandonados.

Sin saberlo, desde ese entonces, ya estaba dando un paso hacia el veganismo, porque aunque aún no conocía el término, estaba tomando decisiones incluidas en esta filosofía de vida.

1/2 cup cocoa powder
1 1/2 tbsp baking powder
1/4 cup of sweetener of your choice
1 cup soy milk
2 tbsp almond or other mild veggie oil
1 tsp vanilla extract
METHOD
1. Preheat a non stick skillet over medium heat.
2. Place a large sieve over a medium sized bowl and whisk flour, cocoa powder, sweetener and baking powder so that all lumps are broken down through the sieve into your bowl.
2. In a separate bowl or cup, pour together milk and oil.
3. Pour liquid mix into dry mix continually whisking to ensure everything is well combined. Don’t over mix.
4. Now use a spoon to make your pancakes, wait for the bubbles to appear and then flip.
5. Repeat this until all the batter is used up. Makes about 8 pancakes.
 Served  with whipped coconut cream, berries and cherries and lots of choc-shot! I .

🍟 Loaded fries 🍟
Used my go to cashew cheeze sauce, added beans and topped with vegan bac'n bits and sour cream.. ugh SO good!!

This made just enough cheese sauce for two loaded fry plates: 😋😋
1/2 cup raw cashews (if using a high speed blender like a Vitamix, just toss them in.. otherwise soak overnight or in hot water for at least 10 mins, drain and rinse)
2 tbsp nutritional yeast
1 tbsp lemon juice
1/2 tsp paprika
1/2 tsp garlic powder 
1/2 tsp onion powder
1/2 tsp salt
1/2 red bell pepper
1/4 cup water

1) Put everything in your high speed blender and blend until creamy.  Keep blending on high to warm the cheeze.  Taste, add s&p to liking.  Add more water if you want it thinner.

I baked the fries, drained and rinsed a can of black beans @wholefoods and added them to the cheeze I put in a bowl.  Layered the fries, bean/cheeze, bac'n bits, green onions, and thinned out some @tofuttibrands sour cream with water (I use a condiment bottle to make the drizzle lines 😋😋) grab a fork and dive in 🏊‍♀️😁 thanks @mzamanda13 for the loaded fry idea, love this community and all the ideas 🙌🙌🕺💜

In a separate bowl or cup, pour together milk and oil. 3. Pour liquid mix into dry mix continually whisking to ensure everything is well combined. Don’t over mix. 4. Now use a spoon to make your pancakes, wait for the bubbles to appear and then flip. 5. Repeat this until all the batter is used up. Makes about 8 pancakes. I served it with whipped coconut cream, berries and cherries and lotsa choc-shot! I wonder if I should turn any other cake classics into pancake equivalents. Vegan Sunday roast inspo: @gardein turk’y cutlets with creamy vegan scalloped potatoes with thyme by @garlicandzest - I added some cooking sherry, nutritional yeast, garlic and dijon mustard to the potatoes as well. We also served this with asparagus and sautéed mushrooms. I sautéed those in @earthbalance vegan butter and garlic, then added the @gardein Turk’y cutlet gravy to them. 'sup punks, who's stoked to go back to work tomorrow? 🙌 Here's a post from our Brighton food adventures...a few weeks ago we were lucky enough to visit Brighton and take in all of their awesome vegan eats, including @purezzauk for their rad, innovative vegan pizzas.
• We tried the Parmigiana Party (it was awesome), the special board Meatball pizza, their amazing pesto for crust dipping (because, well duh, pizza crusts were made for dipping), their cheese stuffed dough balls as well as the superfood green smoothie 'V Gains'. It was all incredible.

Para prepararlas: - Dejar remojando las lentejas de un día para otro.
- Botarles el agua en que se remojaron y ponerles agua 💧fresca.
- Ponerlas a cocinar a fuego 🔥 alto.
- Después de un rato, echarles papa 🥔 y zanahoria 🥕 en pequeños cuadros y hogao y seguir cocinando a fuego 🔥 medio.
-  Si se secan ir agregando agua💧de a poquitos para que no nos vayan a quedar muy agudas.
- Puedes probarlas, cuando la papa, la zanahoria y las lentejas estén suaves puedes retirarlas del fuego y servir.
- Acompáñalas con lo que prefieras y a disfrutar!

Toasted wholemeal pitta stuffed with roasted peppers, olives, hummus, spinach and sweet chilli sauce. Guys this is currently my go to pick me up. Could easily swap the hummus for avocado if you want to change it up and tastes even better! 🤤😍 but I couldn’t find any good avos at the store so reduced fat hummus it is 😋other options are sweet potato cubes, black beans, chickpeas, bbq tofu... 👅 can you tell I’m hungry? 🙈 .

Lil Anthony helped me prep this salad by churning the veggie spaghetti maker and chopping the mini orange and yellow peppers. He even prepared one of the mangoes! The "dressing" is just plain old salsa verde made of yellow chile peppers. Cómo se habrán dado cuenta, yo soy fan #1 de los jugos verdes, pero OJO! 👁 yo no los tomo por qué sean “detox” (cosa en la que no creo)... yo me los tomo porque me parecen una forma muy práctica y rica de incluir mas vegetales en mi dieta (especialmente esos que no gustan pero que son fundamentales para una alimentación saludable y equilibrada)
Hay que recordar otra cosa, un jugo verde no reemplaza una comida, es un complemento a nuestra dieta.

Lo bueno de estos jugos verdes es que los podemos variar para no aburrirnos y nos aportan grandes cantidades de nutrientes.

Consejos para preparar y tomar jugos verdes:
- Aunque se pueden colar, es mejor no hacerlo para aprovechar toda la fibra.
- Variar siempre los vegetales de hojas verdes para no comer de uno solo en exceso y así asegurarte de obtener cantidades balanceadas de nutrientes.
- Limitar el uso de frutas, especialmente si vamos a colarlo. Lo ideal es usar máximo 1 ración de fruta
- La proporciones ideales serían 1 taza de verdura + 1 taza de agua + 1 fruta (opcional) puedes agregarle también otros alimentos como espirulina, jengibre, aloe, etc. Y te recomiendo ponerle un chorrito de jugo de Limón
-Tomarlo en ayunas o al menos después de 40 min después de tu última comida, con tu estómago vacío obtendrás mas nutrientes. Evita también comer algo por 40 min después de tomarte el jugo
- Intenta tomar el jugo verde recién hecho para que no se oxide

Because A big rear view mirror can create distractions & it could lead to a fatal accident. 
Same thing could happen in life too. When we keep looking to our past & keep whining, complaining & remembering what happened, we basically distract our focus from future to the past. Even if we keep thinking how good was the past, still it’s a distraction. We should only take a quick look into the rear view mirror/our past to be extra cautious & put full attention to driving our car/future straight in right direction unless you wanna do a parallel parking 😜

If you know me then you know how much I love Thai food! And since it’s Thai New Year, known as Songkran, I’m celebrating with some Thai Green Soup using @bluedragonuk Green Curry paste pot! Here’s what I used and how I made it! You will only need 7 ingredients to recreate this, it can’t get any simpler than that and yet it’s so delicious! 🙈
INGREDIENTS for 2 people:
2 pots @bluedragonuk Thai Green Curry Paste 
400ml @bluedragonuk Reduced Fat Coconut Milk
1 cup savoy cabbage, chopped
1 cup spring greens, chopped
1 cup broccoli florets, chopped
1 cup cooked basmati rice 
1 cup Edamame soy beans
1 red pepper, finely chopped
METHOD:
1. Add curry paste to pan and fill up with coconut milk.
2. Heat on medium heat, bring to the boil and stir until paste has dissolved. 
3. Add veg + rice and cook another 2-3 minutes.

White chocolate & springy sprinkles made for the perfect chewy cookies 😍🌷 My tricks for these cookies:
- Melted @becelca vegan margarine in the batter
- Flatten the cookies slightly prior to baking to help them spread (I find if I don’t do this, my cookies tend not to spread well)
- Sea salt (always sprinkle on a pinch at the end before baking!) ... I also made regular chocolate chip cookies, a version filled with white chocolate and peanut butter, and a cranberry-chocolate chunk version. They didn’t last long in my kitchen - @karam_16 was all too happy to snack on them 😋

I mixed in some spinach with my sauce and voilà!  I had @kellyscroutons "Just Crumbs" on hand and it's beyond perfect on pasta (or literally anything 🤤) they make the BEST croutons and this is their crouton crumbs that have nooch and a cashew parmesan.. literally Heaven in your mouth ✨💃

The other day I made a big batch of these savory lentils in my Instant Pot. They turned out so good I decided to make a quick post about them!

10-Minute Savory Lentils:
2 cups dry lentils
1 TBS soy sauce
4 cups low sodium vegetable broth
4 large carrots
1/2 yellow onion
Small handful of fresh parsley

Finely dice the parsley and vegetables. Then throw everything in your pressure cooker and cook for 10 minutes. To do this on the stove top, simply bring it to a boil then cover and simmer for 10-ish minutes until the liquid has absorbed.

This made a big batch that I ate with brown rice all week. It was cheap, filling, healthy, and tasty. Instructions are on the blog, as well as a short story about my new Emergency Essentials SuperPail, aka 44lb bucket of lentils that I am PUMPED about! And yes, you read that number correctly. 😉 This was the first dish I made with my new stash and I'm really happy with how they turned out. Enjoy!

Vegan Cream Cheese & Scallion Wontons 😍
For "research" sakes I had to see if a different type of cream cheese would work.. and YEP, absolutely works 😋

8 oz container @followyourheart cream cheese
1/4 cup scallions, sliced thinly- use more/less depending on your love for it
1/2 tsp garlic powder
1/2 tsp onion powder
pinch of pink salt
Package of vegan wonton wrappers (typically 48, I had 15 remaining.. I'll tell you what I did with the remaining wrappers down below 😁🍫🕺)
Sweet and Sour Sauce
·
1) Scoop the cream cheese out of the container and into a bowl.  Allow it to come to room temp a bit and add the garlic, onion, salt and mix it all together.  Grab a small bowl and fill with water.. you will use this water to seal the edges of the wonton wrappers.
2) Lay out 6 wonton wrappers at a time and cover the rest with a towel so they don't dry out.  Take 1 tsp of the cream cheese filling and put it right in the center of each wrapper.  Dip your finger in the water and trace the outermost edge of each wrapper, getting it wet. (Watch a "how to" video on YouTube if this is your first time with wontons 💙) Then seal the edge by taking the two opposite sides together.  I then took the longest straight edge and overlapped the corners, getting more water on those edges to seal.  And continue until you've used up all your cheese filling.
3) Heat up your choice of oil and depending on your pan size drop as many as your pan will allow.  Each wonton takes 45-60 seconds.  When fried, place on a towel so it soak up excess oil.
4) I found an accidently vegan sweet and sour sauce but there are a lot of recipes online too.  I loved them hot out of the fryer but they were also sooooo good cold the next day!!! Keep them covered in the fridge and they'll last (minus a little crunch) for about 4 days💃 to the remaining wontons I cut up strawberries and added them along with chocolate chips.. SO good!!! I also made some with pb but the 🍓🍫 were 👌

Mantequilla de almendras hecha en casa 🧡!

Saben que es lo mejor de esta mantequilla? Que es natural, no tiene azúcar ni aceite! Además es absolutamente deliciosa, y se puede personalizar dependiendo de lo que queramos! .
Lo único que tienes que necesitas es almendras crudas sin sal y un procesador o licuadora.

Para prepararla:
- Pon las almendras en una bandeja y mételas al horno (precalentado a 180 grados) por 5-10 minutos. Esto depende mucho de los hornos, solo asegúrate de estar muy pendiente para que no se te vayan a quemar.
- Sácalas del horno y ponlas en tu procesador o licuadora. Si vas a hacer bastante, te recomiendo ir haciendo por partes, es más fácil y rápido.
- Comienza a procesarlas. Cada cierto tiempo recuerda parar el procesador y, con una pala, limpiar los lados y revolver bien.
- Las almendras, igual que el maní, van liberando su propio aceite, así que no necesitas agregarle, simplemente hay que tener paciencia.
- Continua procesando hasta que consigas la textura que buscas.
- Guárdala en un recipiente de vidrio esterilizado (hiérvelo en agua y déjalo secar).
- Y listo! Y esta lista para disfrutar

Además es absolutamente deliciosa, y se puede personalizar dependiendo de lo que queramos! . Lo único que tienes que necesitas es almendras crudas sin sal y un procesador o licuadora. Para prepararla: - Pon las almendras en una bandeja y mételas al horno (precalentado a 180 grados) por 5-10 minutos. Esto depende mucho de los hornos, solo asegúrate de estar muy pendiente para que no se te vayan a quemar. - Sácalas del horno y ponlas en tu procesador o licuadora. Si vas a hacer bastante, te recomiendo ir haciendo por partes, es más fácil y rápido. - Comienza a procesarlas. Cada cierto tiempo recuerda parar el procesador y, con una pala, limpiar los lados y revolver bien. - Las almendras, igual que el maní, van liberando su propio aceite, así que no necesitas agregarle, simplemente hay que tener paciencia. - Continua procesando hasta que consigas la textura que buscas. - Guárdala en un recipiente de vidrio esterilizado (hiérvelo en agua y déjalo secar). - Y listo! Kale & Pine Nut Pizza by @missmarzipancom 💚

INGREDIENTS
Dough:
250 g strong white bread flour
250 g spelt flour
5 g powdered dried yeast
1 tsp salt
325 ml warm water
Around 1 tbsp olive oil
1 handful of semolina or polenta for dusting
Toppings-
Homemade pizza sauce or red pesto 
Vegan cheese of choice
A bunch of kale, woody stems removed, rinsed and hacked
A little coconut oil
A few marinated sundried tomatoes (if not using pesto), drained and chopped
A handful of pine nuts
Half a lemon
Salt & pepper to taste

DIRECTIONS
In a large mixing bowl, combine the flour, yeast and salt
Make a well in the middle of the dry ingredients and add the water and oil
Mix together until it forms a dough
Turn out onto a floured surface and knead until smooth and silky. Leave the dough to rest for a few minutes, then cut it into three pieces.
Preheat your oven to 225°C/425°F.
Roll out a portion of dough, as thin as you can, onto a clean surface and then pop onto a baking tray that has been dusted with semolina or polenta. Top it with a slick of pizza sauce or pesto and your favourite vegan cheese, then pop it in the hot oven, baking it for 10–12 minutes, or until the base is crisp and the top bubbling.
While the pizza is baking, sauté the kale with the coconut oil for 3-4 minutes adding the pine nuts for the last minute and tossing the mix in the pan to allow for even toasting (and to prevent burning). Remove the baked pizza from the oven and top with the kale and pine nuts. Dress with a squeeze of lemon juice and finish with sundried tomatoes, a sprinkle of salt and crack of black pepper (to taste). Slice and serve hot.

Acá en esta casa somos los locos de la pasta 😂, es fácil y rápida de preparar y es difícil que quede maluca

Unos tips para cuando la cocinen👇🏼
- Pongan a hervir el agua solo con sal, no le agreguen aceite.
- Usen el tiempo que viene en el paquete como referencia, por lo general funciona Perfecto (igual saquen uno y lo prueban a ver si esta en el punto que les gusta)
- No boten el agua en que la cocinaron, pueden utilizarla para darle un toque especial a la salsa con la que se la van a comer
- Para que no se pegue, pónganle un poquito de aceite de oliva

🍅 Tomates
🍅 Ajo en polvo
🍅 Aceite de oliva
🍅 Champiñones
🍅 Pasta de tomate
🍅 Miel de agave

Preparación:

1. Pela los tomates 🍅 y córtalos en cubos pequeños.
2. Ponlos a cocinar en una olla con un poquito de aceite de oliva. Luego de 1 minuto, agrégales un poquitín de agua 💦 y déjalos cocinar bien.
3. Agrega pasta de tomate y un toquecito de miel de agave, o agrega salsa de tomate (cualquier opción funciona muy bien)
4. Deja de cocine y agrega un poquito de orégano y de albahaca 🌿 
5. Corta los champiñones 🍄 y agrégalos a la olla.
6. Deja cocinar por otro rato y listo.

The original taco just has sauce, chick'n, lettuce, and cheese.. I made some loaded tacos by adding chopped red onion, tomatoes, and cilantro.  I used @so_delicious cheese, jack & cheddar blend.  Both were great but call me crazy.. the more veggies, the better 😋😋😋🌱🙌
