Pappardelle with Lathorigani Sauce and Roasted Shrimp 🍤 .
Lathorigani is liquid gold.
I used it to coat my pasta, I marinated my shrimp in it before roasting, and I served it with bread on the table for dipping.
➖1 cup of Vrisi 36 Bold EVOO
➖3 tablespoons of freshly squeezed lemon juice
➖1 tablespoon of dried Greek oregano
➖1/2 teaspoon of minced garlic
➖1/2 teaspoon of onion powder
➖1/2 teaspoon of garlic powder
➖1/2 teaspoon of salt
✖️Add ingredients to a mason jar. Seal with lid and shake to combine.

Someone turned 4 today!! 🎉 Ok so I know this isn’t exactly picture perfect, but you know what it’s homemade and Z was so excited! That’s truly what matters. 💗 We have a local Alberta company @gf_insider that makes gluten free/dairy free/nut free baking mixes. Since Z can tolerate eggs (I guess we shall see if that’s changed 🤞), I tried a white cake mix and used 3 eggs plus half of a banana to cut down on the 4th egg which worked out great and added awesome flavour. I was worried the cake wouldn’t have enough room in the pan I used so I used two ramekins and made little mini cakes as well. 🎂

Once the cakes came out of the oven I realized the mini cake would work well as a little hill for the construction site. The “icing” is a coconut custard whip - I took a can of coconut cream that was chilled and whipped it up adding a splash of vanilla and cinnamon. Prior to that I made a vegan custard that I cooled in the fridge until I was ready to put it all together. I took a couple heaping tablespoons of the custard and added it to the whip and combined it. For the dirt @gf_insider also makes these great allergy friendly “Oreo” style cookies. It’s a good thing I planned to crunch them up because they were already crunched in the package. 😊 Birthday Banana Cream with Chocolate crunch, Z had lots of fun “digging” in! 🚧

We are nearing 90 degrees and all I want to do is sit on my patio, drink iced tea and get a sun-kissed glow... Oh and a big bowl of this colorful hummus with crisp veggies and pita wouldn’t hurt!

Ingredients
1 (15oz) can chickpeas, drained
1/4 cup tahini
1/4 cup olive oil 
1 tbsp lemon juice or apple cider vinegar
1/2 tsp ground cumin
1/2 t garlic, chopped
1/2 tsp sea salt
optional toppings: roasted chickpeas, chopped onion, chopped bell pepper, fresh herbs, paprika

Combine ingredients in a food processor and blend until smooth and creamy, scraping sides with a wooden spoon as needed. Refrigerate until serving. Scatter toppings before servings.

It’s asparagus season 😍😍 and pairing it with honey lemon salmon & sweet potato fries is my favourite.
Now that’s what I call a well balanced meal tho 👌 healthy fats, carbs, protein & greens.. what else do ya need?!?! No looking back since I started eating fish again this time last year, as it’s been a great contribution to my health as well as taste buds. I ain’t becoming vegan anytime soon, even though I eat plant-based 85% of the time already ✌️

Really into [messy] yogurt bowls lately 🙌
They’re super fast & easy to make, whilst also nutritious & yummy 👌 and that’s exactly what we need now that we’re both working full-time!
Not to mention, the weather has been amazing lately ☀️ so my body naturally craves yogurt / smoothie bowls rather than porridge 🤷‍♀️ do ya feel the same? Either way, since I’m a firm believer of listening to yo bod in means of being both happier and healthier, this is just one of these examples 🙂 #intuitiveeating .

So I went grocery shopping the other evening after work and realized, wow, I havnt been meal prepping or cooking much at all lately! Well friends, that's summer in a nutshell for me - I'm often wayyy busier than I ever expect in summer! And even though it's a lot of work and a lot of fun things (I really do love all the go-go-go) it really makes me appreciate home cooking and meal prepping that much more. Does anyone else get that way too?

Oh! And so I'm actually going to be in the same town for these next two weeks and I'm actually excited! Even though these weeks are going to FLY by and I love all the short and long distance traveling I do, there's really no place like home. Ya feel? 
Anyways, between my mini shopping trip to Natural Grocers the other night and our Imperfect Produce delivery, we have a TON of produce in our fridge. So much that I decided to just roast a lot of it for easy eats and to be able to toss into whatever meal we may decide to make. TIP: If you're really busy or have produce that needs to be eaten (this is kinda my go-to thing): chop them up and roast em! 
So that's exactly what I did here for dinner the other night. Roasted sweet potatoes, roasted orange cauliflower (naturally orange-crazy huh), lemon sautéed spinach, & grilled lemon garlic tempeh bites. Of course seasoned with some nutritional yeast and then some hemp seeds too! Not shown: a piece of the cheesy garlic bread loaf my sister brought home from Great Harvest the other night after work. Toasted and smothered in butter- my weakness. Mmm! 🤤

Finally, after a long time, i bought a portobello mushroon & made this low carb & glutenfree burger🍔 in cooperation with WMF. The mushroom is the bun! Thanx to my WMF food processor One for All, it really mixed the quinoa & kidneybeans for the patties perfectly!

Ich habe es getan, und tatsächlich den Portobello Pilz gekauft🍄 (nachdem ich seit Wochen immer wieder vorbeigelaufen bin). Damit lässt sich ein richtig genialer low carb Burger machen, denn der Portobello gibt hier quasi 
das Brötchen🍔. Nicht, dass ich keine Brötchen mag, aber Abwechslung muss sein😋. Und die vegane Pattiemasse besteht aus Kidbeybohnen und Quinoa!😻 Dank meiner WMF Küchenmaschine One for All aus der Serie WMF KÜCHENminis® ging die Zubereitung so schnell und effektiv, dass ich nachher doppelt so viel Zeit zum Genießen der Burger hatte. 👉Habt ihr den Portobello Pilz schon gegessen?

Saturday morning pre-workout fuel! No bacon, eggs, or pancakes for me. Nothing that will leave me lethargic and feeling weighed down. Just nutrient dense, whole foods that make my body happy and give me the sustained energy that I need to get through my workout! 👊🏻🌱🤩 I love weekend mornings because I get to be more creative with my breakfasts! Vegetable Green Curry Soup with Kidney Beans paired with pan-seared Shanghai Book Choy (Hot! — depending on the green curry paste you choose) #instantpot  #instantpotrecipe  Ingredients: 2 carrots 1 potato 1/2 onion 4 cloves of garlic 1 mini cucumber a few pieces Broccoli A few pieces of Cauliflower 4 cups of water 3 Tbsp of green curry paste 1 can of coconut milk 3 Tbsp of palm sugar or maple syrup 1 can of kidney beans (*I cook my dry beans in the instant pot for 30 minutes.) 1. Saute Veggies in instant pot for 10 minutes. 2. Dissolve green curry in 4 cups of water. 3. Add green curry liquid into pot, ensure there is enough water to cover all your veggies. 4. Pressure Cook in instant pot for 30 minutes. 5. Add Kidney Beans, coconut milk and maple syrup. 6. Serve! 7. I’m usually a lazy vegetarian, I don’t count my protein intake at all. In this soup, protein is provided by kidney beans. Kidney beans have 15g of protein per cup. But I think brown lentils have the most at 23g / 100g… and beef has 25g/100g. I can’t find brown lentils in my local grocery store. But you can always substitute with lentils for this recipe. 8. Eating hot curry in hot weather… feels like Thailand right? Shanghai bokchoy was seared in a cast iron skillet with olive oil on high heat for 5 minutes. I covered the skillet so it could steam it while it seared. Enjoy! Satay Chicken Skewers Letting my cravings guide dinner! Love it when there are no kids activities at night! 2 chicken breasts sliced 1/4 satay sauce 1/4 maple syrup 1. Marinate sliced chicken breasts for 1/2 hour with honey and satay sauce. 2. Thread chicken with bamboo skewers. 3. Bake for 15 minutes. 4. Wash and trim the roots of enoki mushrooms. 2. Cook them in a pan with Garlic Oil, Butter, Tomato Sauce for 2-3 minutes (*to make this vegan, skip the butter. ) 3. Tea Time with Books

Peanut Butter Chocolate Chip Balls
In a #foodprocessor or #vitamix, add 1 cup of oats, 1.25 cups of dates, 1 cup of mixed nuts, 1/8 cup peanut butter and 1/4 cup of chocolate chips.  Get hands dirty - make bite sized balls.  These are some heavy hearty snacks, they will definitely fill you up after working out, or gardening or as a nice treat to fill you up in the afternoon at the office.  I like to down these with tea and a book.

Books on Running

I try to read a book about running once a month so I stay motivated to keep on running.  I’ve run 5 half marathons, numerous 10 km races, and one marathon in the last 3 years.  However, I broke my ankle on ice when I was running in the winter and I find it really hard to want to devote more time to running again.  My time has been filled up with pottery class, volunteering at school, and now instagramming!  I’m maxing out at 10km at the moment…

Let your Mind Run by Deena Castor

This book was written by elite US Olympian runner Deena Castor.  I’ve never heard of her, but this book was on a top 11 of running books list by @JessicaMizzi @Signature… I liked 3 other books on her list, so I thought I would give it a shot.  It’s an autobiography about her running career from a high schooler, to university team runner, to the Olympic medalist, to until she retired.  She’s had an amazing career, it was interesting to learn how she got there.  In addition, there’s a lot of advice about positive thinking, and relationships between thoughts and how your body operates. Although not my favourite book on running, I liked being able to try to understand and adapt to her way of thinking as a runner.  She seems to have so much confidence with chasing the fast runners and surging ahead and becoming the champion in being the fastest.  This isn’t a mindset I’ve ever embodied as a hobbyist runner…I’m always thinking, I’m slow…”Feel free to pass me at anytime. I tell all my running partners this.  I don’t expect my body to move past.  So I liked how after reading this book, gently I started to tell by body to run faster, think faster…there has been a shift in my thinking and for that I am really thankful I read
