Morning!! Hope you all had a lovely week and have a fab weekend planned, alas for me I am just going to be plodding around today as I am knackered so taking the opportunity to re fuel and rest before hoping to hit the gym tomorrow! Started the day off with this epic bowl of chocolate protein zoats which were incredible and tasted even better than usual as I haven’t had porridge in about 3 + weeks 😯😯😯😯 for this I simply added @vegavero_gb chocolate protein powder to my oats with a heaped tbsp of cacao, flaxseed, and pinch of salt then topped with berries, grapes and @pipandnut maple peanut butter 😍😍 I find adding protein powder to my oats make it a ton more satisfying and help improve my training! Hello again 😇 after a few days of just laying around and eating plain foods I finally start to feel a bit better... at least I can have fruits again with my meals! 😍🙌 I just finished this bowl of soaked overnight oats with flaxseeds, kiwi fruit, warm raspberry sauce and a few cacao nibs on top ❤️ did you know that soaking your oats is a lot better for the nutrients and also your digestion than the cooked version?  Especially if you add about a tbsp of ground flax or psyllum husks to them, which are a great source of fiber + healthy fats! 💪⚡ In Summer I tend to like overnight oats better anyway, as it is often already too hot for a warm breakfast 😰☀️ and of course because it's super easy to grab on the go if you don't have that much time or motivation to prepare yourself a fancy meal... you can even add the fruits into it the night before, too, so all you'd have to do in the morning is to grab your jar out of the fridge! 😊

My craving for simple, whole foods has been crazy lately. I’ve been listening to my body and eating the foods I crave and moving my body when I start feeling sluggish. It’s made such a difference! 💪🏻 I’ve especially been craving potatoes and guacamole this week 🤷🏻‍♀️ I ate this big plate of it after a yoga class and long walk with my dog niece! 🐶

LEMONY CHIA SEED MUFFIN TOPS🍋
>> 2 cups all purpose flour
>> 1/3 cup agave (maple syrup should work too)
>> 1/4 cup chia seeds
>> 1 cup water
>> 1/2 tsp lemon extract (*optional for extra lemony flavor)
>> 2 tbsp melted coconut oil
>> 1/2 cup coconut flour
>> juice & zest of one lemon
>> 3/4 cup unsweetened nut milk
directions:🥄
-preheat oven to 375*F line a baking sheet with parchment
-combine chia seeds and water and let sit 10+ min in the fridge
-whisk alllllll the rest of the ingredients in a large bowl
-add in chia seed "gel" & combine
-use an ice cream scoop to scoop out muffin tops
-bake for ~25 minutes and cool

Was scrolling through my camera roll and found this picture from January which I never posted! I was obsessed with Brussels sprouts at this time, so I had some roasted sweet potato, Brussels, spicy cauliflower, peas, black beans, and a tahini drizzle (my favorite brand is @soomfoods) all on a bed of some sort of leafy green I imagine 😋
I’ve been working on my ebook all morning and i have to say it’s coming along quite nicely! Can’t wait to share it with you all🤗Have a good long weekend friends! ☀️

ZUTATEN:

Obst nach Wahl (für einen Augenschmaus nehmen wir gerne Obst in der selben Farbfamilie!)
1 Zitrone
Minze
1-2 EL Krümelkandiszucker

ANLEITUNG:

1.  Obst in mundgerechte Stücke schneiden.
2. Zitrone pressen und den Saft über das Obst geben.
3. Die Minze (ich nehme gerne drei Stengel, damit schmeckt der Salat richtig schön frisch und sommerlich) klein schneiden. Ich empfehle ein Wiegemesser damit die Minze schön fein wird. Gehackte Minze auf das Obst geben.
4. Als letztes auf das Obst, den Zitronensaft und die Minze noch ein bis zwei Esslöffel Kandiszucker geben. Den Salat schön durchmischen damit sich alle Zutaten miteinander vermengen und die Minze ihr Aroma entfalten kann.

The most unappealing bowl of cakey oatibix for breakfast this morning before my shift 😂 tasted great nevertheless 😏 just oatibix heated up with hemp milk then stirred in @vivolife cacao protein, ground ginger and a pinch of salt! Topped with apple and @pipandnut maple peanut butter 😍🙌 they forgot to rota me on for my evening shift so I’ve taken the morning/lunch time shift instead! Easy pasta recipe to make for a Friday night🍝⠀
This alfredo pasta is so creamy and delicious, I wish I had some more😍⠀
The main ingredient in this alfredo sauce is cauliflower, which makes it really creamy😋⠀
I used red lentil spaghetti, but feel free to use whatever pasta you want😉⠀
Serves 2⠀
Ingredients:⠀
- 2 cups cooked cauliflower⠀
- 1 onion⠀
- 1-2 garlic cloves ⠀
- 1/4 cup nutritional yeast⠀
- 1/4 cup plant milk⠀
- Salt & pepper to taste⠀
- 200 grams spaghetti⠀
- 1 cup cherry tomatoes⠀
- 2 cups spinach⠀
Method:⠀
1. Start by cutting your onion and garlic, and sauté them in a pan with some water until translucent, set aside⠀
2. Cut your cherry tomatoes in halves and sauté them in the same pan, adding a splash of water so they won’t stick⠀
3. Add cauliflower, onion, garlic, nutritional yeast, and plant milk in a blender and blend until smooth. Add salt and pepper to taste⠀
4. Cook the spaghetti in pot with salted water⠀
5. Add the spinach to the tomatoes and let it cook down⠀
6. When the spaghetti is done, drain it, rinse and add into the pan with the tomatoes and spinach⠀
7. Add the Alfredo sauce and mix it all together⠀

1 cup of rolled oats
1 cup of almond mylk
15g of peanut flour / powdered peanut butter (tastes sooo good & is pretty high in protein too) 
2 tbsp of flax & chia blend (you don’t need 🐠 for omega 3s) 
80g of frozen blueberries 
soaked overnight + topped with: 2 bananas + more frozen blueberries + a tsp of date syrup & some goji berries

such a good way to switch things up. I need more insulin when I have grains for breakfast vs when I have the same amount of carbs from just fruit, but just a few extra units isn’t a big deal.🌻 #type1diabetes

Portland... you did us dirty. Today I had (ALL VEGAN! duh) berry🍓 compote waffles with scramble🍳 and jackfruit bacon + coffee☕️ for breakfast. Then I had a swirl choco vanilla🍦🍦 soft serve (first vegan soft serve experience!), then an oreo peanut butter donut🍩🥜 AND a maple cream donut🍯🍩 (!!), then Ethiopian vegan feast for dinner🍛🥔🍠🥕🌶. I AM DEAD YALL. I’ve never had so much amazing vegan food available to me in my entire life. We went to bookstores, vegan bakeries, coffee shops ... and went to @herbivoreclothing !! and i bought sooooo many amazing beautiful things and gifts for all the kick ass vegans in my life. so excited & inspired. really love this city ✨🌿👌🙏🏔 #portland #vegan
