Some of the goodies I've eaten today.
Took a bag of apples to work with me & had most of them eastern by the time I remembered to document, lol. Then had strawberries and a little after a snack of dried seaweed (can see part of it in 2nd pic), mandarins. Ended the night with a spicy burrito bowl of rice with Chipotle pepper sauce (tomato puree, Chipotle peppers, garlic, onion, paprika, vinegar & whatever spices you like), mashed pints and summer squash, onion and sweet peppers sautรฉed in the Chipotle sauce. Lots of water too.

Most people who make this dish use raw cauliflower, but I think the marinade works better if itโ€™s steamed for a few minutes before drenching it in citrus juice, garlic and chilies and left to sit overnight in the fridge to help all of the flavors to get to know each other! Another great Engine 2 meal! This is called Beet-Orange supper bowl. I modified a bit with what I had but the basis is greens, beets, red onion, brown rice and an orange. I added some edamame because I needed to use them up. There is only 1/2 cup of rice and about 3 cups of mixed greens. Fresh Thyme is listed but I only had dried. A sprinkle of cracked pepper and that was all that was needed. No dressing. No salt and it was still delicious. It was very fresh tasting for sure. Good stuff!

Easy and delicious dinner: mung bean & buckwheat patties, plus a mega salad with spicy tahini dressing. I batch cooked the beans and buckwheat on the weekend, so was able to make and bake the patties in under 30 minutes! .

This one had diced mushrooms, squash, zucchini, and onions cooked in soy sauce and sweet and sour sauce and was delicious!
If you have some veggies, some sauce or spices, and an idea of what flavors you crave, you can turn simple ingredients into wonderful, compassionate creations. 
Using your imagination is one of the best aspects of cooking because there are no recipes or rules to follow. I call it Intuitive Cooking because if you listen to your body, it will tell you what it needs.
