With Earth Day yesterday, I decided I would take a small step towards sustainability by reducing my use of plastic bags. It’s frightening how much plastic we are creating and how all the plastic is literally choking the life out of our planet.
This week, I’m dedicating my posts to sharing my small steps towards reducing waste.
Let’s talk about food waste. It’s no secret that I buy a lot of fruits and vegetables for my kids’ cooking classes. I do try to combine my recipes so I can utilize the produce instead of letting it go to waste.
One thing I can do better at is preparing herbs like cilantro and parsley so that they’ll last a bit longer. I often scoff at the huge amount that supermarkets sell of these herbs and I lament that I can’t usually use it all before it goes to waste.
Here’s a way that you can make your cilantro and parsley last longer. 🥗
Snip off the bottom of the stems with scissors and make sure the leaves are dry. They’ll spoil quickly if they’re wet. Don’t rinse them until you’re ready to use them (like berries). 💧
Then, fill a jar or a water glass ¼ full with water and place the stem ends of the herbs into the water in the jar. If you have a small plastic bag, cover the leaves loosely. (I couldn’t figure out a way to make it work without the plastic bag). 🌿
These herbs will last 2 weeks if you keep them this way! 🍃

Here’s tonight’s #80DayObsession approved dinner! Cooked kale salad with organic @lightlifefoods smokey tempeh, sunflower seeds and a dash of lemon vinaigrette dressing 🍃🥓🌻 This dish was so quick to make and tasted incredible as well! Plus it’s vegan but packs a punch of protein thanks to the tempeh. Here’s how to make it —> Heat a medium pan and add 1.25 cups kale with stems removed. Add 1 tsp water, juice from 1/2 squeezed lemon, and a dash of salt. Meanwhile, in a small frying pan cook up 4 strips of @lightlifefoods organic smoked tempeh. Add kale and tempeh to a bowl and top with 1 tbsp lemon vinaigrette dressing and 1 tbsp raw sunflower seeds. Enjoy! #eatclean#cookingonhudson

This weekend I had a delicious shrimp biryani from @chutneymasala In Irvington, NY. The following day I used the leftover rice and sautéed some wild domestic shrimp from @wholefoodswestchester to create this satisfying dinner. 😋

- I do not believe in movement just for the sake of movement... Developing Muscle memory - a type of movement with which the muscles become accustomed to over time - is achieved by building neural pathways that will give the muscles a sense of connection and response. In other words, even without thinking, the muscles will get accustomed to this process. They do not have to tell the body to walk; the body just knows how to do it, this is down to the neurons which communicate with the muscles and say, “do it this way", so... if you have an imbalance (like all of us have) and you just move, for the sake of moving, you will have no sense of developing your awareness when it comes to your best alignment, which will never be perfect, but definetely can be improved.
