Sharing this 15 minute delicious dinner recipe which is vegan and gluten free too! 
Firm tofu crumbled 
@wholefoodssacramento 
Avocado oil @chosenfoods 
1 tsp garlic powder @simplyorganicfoods
½ tsp salt 
1 tsp peanut butter @wild_friends 
1 tsp red chilli paste/sriracha @mccormickspice 
½ tsp salt
1 tsp Low sodium soy sauce
Vinegar
Pickled onions
Micro greens
Napa cabbage
Jalapeños  @wholefoodssacramento 
Directions:
In a non-stick pan, add a 1 tbsp of avocado oil/spray, garlic powder and add the crumbled tofu. Let it brown for about 5-7 minutes on medium heat. In a separate bowl mix well peanut butter, soy sauce, chilli paste, vinegar, salt and sugar. After the tofu it is slightly crisp, add the sauce that you have prepared. Mix, toss well and set it aside.

To the tortillas, add a generous helping of tofu, top with napa cabbage, pickled onions, micro greens and jalapenos.

They turned out so flavourful that I did not need any additional sauces! .

Hopefully being a little hungry means I’m on the mend. I woke up from a luxurious nap just looking for a quick meal. Fortunately I had a little leftover ingredients from my last @sunbasket delivery, so this is just a mish mash scrambled egg. Organic @wholefoods 365 eggs, Mexican simmer sauce, green chili peppers, and power greens with a slice of @daveskillerbread 21 whole grain bread. I think it will do just fine!! And it took 3 minutes to make. I was thinking how in the “old days” this could have easily turned into a crap food night. Chicken Noodle Soup

Whenever anyone is sick or recovering in our house, #chickennoodlesoup is my go-to. The recipe I use is #fast #easy and #delicious :

Sauté celery, onion, and carrot for five minutes (or until translucent), then add a few cloves of chopped garlic. Once the bits start to brown, add your chopped chicken and cook for a few minutes more. Add 1 tsp. salt, 1/2 tsp. pepper, as well as paprika and oregano to taste. Fill the pot with chicken broth and simmer until the chicken is cooked through. Cook pasta separately, then add it to the pot. Serve with toasted bread and enjoy!

Ok back to cooking tonight! So Day 2 of “15 minute veggies” is Parmesan roasted asparagus and it couldn’t be simpler or more of a crowd pleaser! Roasting vegetables is my go to way to cook the kids vegetables and adding Parmesan dresses them up a bit. The asparagus could easily be subbed with broccoli or zucchini.

To make, just drizzle evoo over the asparagus with salt and pepper and grated Parmesan. Roast at 375 for 10-12 minutes. Perfect with grilled chicken or fish. #tip leave them as full stalks when serving to kids and tell them you made them trees for dinner. Make food fun and they are more likely to try it! •

We check in each day to keep each other accountable with our workouts and nutrition. Today was a tough one for one of the newest members though. .
That definitely happens. I’m sure it’s not a foreign concept to anyone that life gets crazy and EVERYTHING will try to get in the way of you taking care of yourself. .
BUT the absolutely amazing thing about this bootcamp is that there are so many other ladies right there when those days come along. Everyone was there to support her and tell her tomorrow WILL be better. .
We’ve all been there and share with the group what has worked for us to try to help, but also just to give a shoulder to lean on. .
This is a regular occurrence in my group, but what has me so touched tonight is that all of this started before I even saw the first post about someone having a hard day. .
I may be the coach, there to lead and give tips, but it is so much bigger than that! These bootcamps are a community and I am so grateful my job allows me to be a part of that!
