Part 1 of foods from Japan. Just came back from our honeymoon in Japan! Food was incredible and there was so much to try and see. Did not have time to capture everything but here is a taste of some of the amazing things we could try. 1st is a potato salad that you have to mix thoroughly yourself;it was warm and delicious! 2nd & 3rd is a skewer stand with eel, scallops, sea urchin, and A5 Wagyu Beef! The fattyness just melts the meat in your mouth! 4th is a rice ice cream pudding popsicle with fresh fruit. I wish I had two! 5th was a teahouse in the park with traditional matcha tea and small cake to go with it! “Wagyu ZABUTON ブトン”
Zabuton is a cut of meat with loads of flavor and that just melts in your mouth.
It’s a rarer cut of beef because there’s not as much Zabuton meat compared to other cuts.
Just behind the neck you will find a large primal known as the Chuck.
And it’s from the Chuck that we will find the Zabuton which is so named because of its resemblance to the flat Japanese cushions used for sitting.
This cut is getting very popular as it is tender and flavourful.
Go into any respectable Yakiniku restaurant and you should be able to ask for Zabuton.
So the Zabuton is cut from the Chuck Roll which is the portion of the Chuck between the ribcage and the shoulder blade.
The Chuck Roll is divided into the Chuck Eye Roll and the Chuck Underblade. The Zabuton is cut from the Chuck Underblade (Chuck flap) which is the muscle attached to the outside the ribcage. All these muscles which line the ribcage are excellent as Karubi as they have excellent flavour and well marbled. Rather than being just tender and juicy, they have a bit more bite and can be pleasantly chewy.
