When avo Monday meets toast Tuesday... Pink hummus with spicy chickpea, asparagus and our loooovely microgreens🌱or a.k.a.  vegetable confetti.
As I asked you before if you want to know more about them this post is for you. Here you see on the right side beetroot  microgreens and below amaranth ones. They both are so easy to sprout. No need for any excuses. You can grow them anywhere. First get your seeds, soil and a small pot or container. Cover the container bottom with moistened soil.(two inches) Scatter seeds on top of soil. Cover the seeds with a thin layer of soil. Then use a water spray bottle and spray on top of soil a bit. And wait for 3 to 7 days. While waiting don't forget to keep soil moist. Once or twice water spray would be enough. Once they grew keep watering it daily. And use them on top of salads, toasts, smoothies...
Recipe For Pink Hummus
2 Cups chickpea (boiled)
1/2 Cup tahini
3 Tbsp orange juice
1 Tbsp beetroot powder @farbgeil
1 Tbsp lemon juice
Blend them all in the food processor.
Roasted Spicy Chickpea
1/4 Cup boiled chickpea
2 Tbsp olive oil
1Tbsp turmeric
1Tbsp red pepper flakes
1Tsp black pepper
1 Tsp cinnamon
Pinch of salt
Mix all ingredients in a bowl. Roast them in a pan or in the oven.

Today, there was not much I did for iftar. Platter had lots of cut fruits and lassi. But the din din is super yummy creamy Palak Paneer with some phulkas. 
Finally, i took out the time to update the post with step by step photos to make this restaurant style Palak Paneer at home. Looking at this Palak Paneer picture, I was having a laugh when i compared the old picture of palak paneer which i had on my blog. And that Palak paneer was shot by mobile somewhere back then 2013 😂 ! I didn’t had a camera then to shoot my food pictures for blog. 
Now, I feel happy to see this picture!

Yesterday, I scrolled through my feed and then I suddenly saw a picture from @veggie.jam , where she had made those lentil tortillas. I couldn’t stop thinking of them all day, so I had to make them for lunch. 🤤😋 In the filling, I put black beans, onions and tomatoes and spiced it with lemon juice. Topped with peanuts, it was so good ☺️🤩. How do you deal with STRESS? When I’m stressed, I start to yell at other people for very little reasons and I’m so sorry after. I just do all the things I have to do, without having fun or enjoying anything. But there’s a light at the end of the tunnel: I know, these times will be over and I will be able to have fun again. How do you deal with it? I hope, you are not letting everything stress you out 💚💚

Quite honestly, I haven't been transparent with you all. ✴ I am posting regularly, and sharing my medical troubles, but I haven't spoken of how my mentality and passion has been lacking. But today I am focusing on doing a mental reset, so I can begin providing you all with higher quality, more educational content. Hearty lentil soup for this harsh autumn weather.

Soup: boil potatoes, sweet potato and pumpkin together until soft. Add that to the blender along with one sautéed leek, onions and garlic. Blitz it up with some veggie stock. Pour it back into the pot along with lentils, fresh chilli and spices (cumin, coriander powder, garam masala, tumeric and paprika). Bring it to the boil and serve once the lentils have thickened into the soup. I garnished with spring onions and nooch 👌#vegan

Polpette di verza viola, tofu e farina di ceci al pomodoro fresco.
Ho lessato la verza viola tagliata a julien.
Ho messo a marinare il tofu in acqua aromatizzata con erba cipollina, olio e granulare bio ( vedi ricetta sulla mia pagina instagram), per mezzora. Poi ho frullato il tutto e messo in un pentolino a fuoco basso per ridurre l'acqua in eccesso. Ottenuta una crema spessa, l'ho mescolata alla verza con 6 cucchiai di farina di ceci.
Formate le polpette, le ho impanate in farina di crusca e messe in forno a 180°C per 40 min.
A parte ho tagliato a dadini i pomodori, della cipolla e con olio evo in pentola per fare il sugo a pezzettoni.
Una volta pronto, servire con polpette.
Io ho tenuto da parte anche un po' di verza.

Breakfast on the porch this morning as I get ready for another day at work. We start a little later today she I had some extra time to put together something a little more involved. I made sautéed mushrooms, a sliced orange, and a porch egg on top of avocado and whole wheat. Yesterday work was so busy I had to skip lunch so I’m hoping this meal will power me through most of the work day!

Montagabend treffe ich mich mit zwei unglaublich tollen Menschen, Conny und Ari ( @plantbased_food_and_travel & @ari_goes_to_wonderland ) das wird bestimmt super. Ab Mittwoch bin ich dann auf der Vivaness und freue mich schon sehr darauf. Super Menschen wieder zu sehen, die ich schon viel zu lange nicht mehr gesehen habe, tolle neue Produkte und Firmen entdecken, Spaß haben mit netten Kollegen und hoffentlich auch etwas Zeit um selbst mal über die Messe zu schlendern.... .

Experimenting with food. I love looking at pictures of food and thinking about ways to make them vegetarian. This is a vegetarian ‘meat’ loaf. Using zucchini, onion, eggs, ricotta, tomato, spices. Thinly sliced sweet potato lined around the tin like a little blanket. Topped with feta, asparagus and onion. I had a salad of rocket, edamame, parmazen cheese and seeds/nuts to go with. Experimenting with food. I love looking at pictures of food and thinking about ways to make them vegetarian. This is a vegetarian ‘meat’ loaf. Using zucchini, onion, eggs, ricotta, tomato, spices. Thinly sliced sweet potato lined around the tin like a little blanket. Topped with feta, asparagus and onion. I had a salad of rocket, edamame, parmazen cheese and seeds/nuts to go with. ¿Habéis probado a comprar los espárragos crudos y cocerlos en casa? Quedan muy ricos!!! Los espárragos crudos blancos se pueden cocer y quedan muy buenos acompañados de mahonesa o en ensalada. 
Hay que quitarles el extremo de atrás (no la punta que es lo más rico) y las capas más exteriores (nosotros lo hacemos con un pelador) porque si no están demasiado fibrosos. 
Los espárragos destacan por ser diuréticos y depurativos. Aportan fibra, vitaminas y minerales.

Cosa sono le Nespole? Sono un frutto primaverile, molto simile alle albicocche, ma dal sapore più acidulo. Questo strano frutto che proprietà ha?
* sono frutti ricchi di acqua e quindi apportano poche kcal: sono ideali nelle diete e aumentano la diuresi
* contengono zuccheri semplici dal basso indice glicemico e questo le rende perfette per i soggetti diabetici e per chi è a dieta e deve fare uno spuntino.
* sono ricche di POTASSIO fosforo e magnesio, ma apportano anche ferro, rame e manganese * sono ricche di Vitamina A, che sappiamo tutti essere indispensabile per il corretto funzionamento degli occhi e della vista.
* i grassi contenuti sono solo lo 0,2% ma contengono gli acidi grassi essenziali omega 3 e 6.
* le Nespole non troppo mature svolgono un'azione antidiarroica
* la pecorina contenuta diminuisce l'assorbimento intestinale del colesterolo * grazie alla vitamina A e ai FLAVONOIDI, come l'acido ferulico, l'acido clorogenico, l'acido cumarico, ... hanno proprietà Antiossidanti contro i radicali liberi

ผลปรากฏว่า..... เหยย อร่อยยยย กลิ่นมันม่วงหอมมาก แถมยังสามารถปรับเปลี่ยนความใส/ข้นได้ตามอัตราส่วนน้ำที่ผสมอีกด้วย 💕

When you attempt to make baklava.... it would be rude not to have it for breakfast! It's entirely vegan too :) the wallnut filling was delicious, and syrup was super-sweet. Substituted the honey for maple syrup,  and butter for free-from butter to make the recipe Vegan! Definitely not the healthiest breakfast, but we all need a treat every now and then :)

Steamed kale, sweet potatoes and the homemade goddess sauce is worth the time and effort if your a slow at prepping and multitasking like me 😅 but it’s a 10/10 and would make this time and time again! 🌱 I hope you all have a good evening 😴

*La magia della natura* ieri mattina mi sono ritrovata a fotografare questa cassetta piena di frutta e verdura di ogni tipo per un lavoro che mi hanno commissionato! Ho provato a scattare non so quante foto e nessuna riusciva a mio avviso a dare davvero il senso di quanto la natura sia magica e ci regali tutte  queste meraviglie! I colori, le forme, i profumi che ogni singolo frutto o ortaggio possiede sono preziosi e ci fanno capire quanto siamo fortunati a poter approfittare di questa abbondanza, spesso ci sembra scontato acquistare frutta e verdura solo perché sappiamo che “dobbiamo consumare cinque porzioni al giorno”, ma se ci fermassimo a riflettere e prendere consapevolezza di quello che regaliamo al nostro corpo ogni volta che consumiamo una di queste porzioni?! Non sarebbe meglio?! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Vi invito a farlo, prendetevi il vostro tempo e quando mangiate fatelo con consapevolezza è un piccolo esercizio quotidiano che vi aiuterà a prendere contatto davvero con quello che avete preparato e portate in tavola! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
