I put enough vegetables in this Lasagna so that even if the kids have ONE spoon they get their 5-a-day 😊 - onion - celery - mushrooms - tomato - butternut - pumpkin - sweet potato - carrots - golden beetroot ALL got crammed into the tomato 🍅 base with aubergine - fresh baby spinach & cheese layers following - hint adding mustard powder & sweet paprika to your white sauce roux gives it lovely flavour & this spice combination also goes well in the egg mixture of a quiche 👍 #vegetarianlasagna#vegetarian#homecooking#fridaynightdinner
Guys, this satisfying salad came together in less than 20 minutes! Try it out for lunch or dinner, especially when you are short on time. Here’s how I made it:
1. Dry sauté 1/4 cup quinoa over medium-high heat until nutty & fragrant. Pour over a colander and rinse under cold water. Then return the rinsed quinoa to the pot. Add 1/2 cup water, and sprinkle in desired spices (I used garlic powder, paprika, cumin, turmeric & salt). Bring to boil. Once boiling, cover with lid, put heat on low and cook for 12-15 minutes.
2. Chop up the veggies & add to your bowl. I included spinach, bell pepper, carrot & tomatoes. Pack as many colors in there as you can!
3. Open a can of black beans, rinse in colander until water runs clearly. Then add 1/3 to 1/2 cup to the salad bowl. You can use the rest of the beans in other recipes or more salads.
4. Make the dressing by blending the juice of 2 limes, a handful of cilantro, salt, pepper, garlic powder & 1/4 cup Greek yogurt (if you use non-fat yogurt, I recommend adding 2 tsp. canola oil). This will make 2+ servings of dressing so it can be used on more than one salad.
5. Once the quinoa is cooked, add half of it to the salad bowl. Drizzle on desired amount of dressing and enjoy!
I've been making blueberry, oat and coconut milk pancakes quite often this week; along side the coconut, banana & blueberry shake on the right. Both are vegan recipe's that are delicious.
BLUEBERRY & COCONUT EVERYTHING. ... Devin made us a pizza yesterday! He made everything from scratch (the dough was thick and beautiful) It was extremely tasty! He's addicted to baking.. He's hell bent on making vegan cheese so he's going to work on that later.

This, my friends, is why for the first time in human history, there are more overweight people walking the earth than underweight. Why might this be? Well for one, our planted landmass in the United States is largely taken up by wheat, corn and soy production. We eat much of these subsidized crops, but also a lot of it is refined into oils and sugar that is then fed to cows (which also get a hefty subsidy.)
5% of the planted landmass in the United States is dedicated to growing vegetables, which is perhaps one reason why they're relatively so expensive! 90% of Americans do not consume enough of them, according to the CDC, and may explain why the same proportion is deficient in at least one vitamin or mineral.
When you consider the research showing how one large daily salad (something I'm an advocate for and talk about in my book Genius Foods) might actually prevent brain aging, it becomes evident that society seems to want youthful, high performance brains to be a privilege of the upper class. Maybe that’s it’s way of maintaining the status quo. But I think we can change that. What say you?

Often times we are afraid or ashamed to receive. We’ve been taught well, even conditioned, to give outwardly as much as we can, because giving back to the self is ‘selfish’ in nature. This couldn’t be any further from the truth! This type of programming creates blocks to receiving, and often times leads to cycles of giving till exhaustion and burnout, with very little being given in return. The gift of giving should not come through an expectation of receiving something in return, but we must understand that in order to give we have to open up our hands, in order to receive, we must open up our arms. Once you change your belief systems, everything around you will start to change 🙏🏽
