This salad was so good! I posted about it last week but it deserves another look 😍. It's #vegan and had a yummy homemade dressing made from vegan mayo, lemon juice and relish 🤔. For the salad base I used kale and red leaf lettuce. Topped with avocado 🥑, roma tomatoes, chickpeas and vegan brats.

I take my banana bread for a trip to Cuilcag Way in Northern Ireland with my friends @sylk12 @coeurvod this Sunday and we had slice each on top of the Mountain. 10 friends 10 slices turn out just perfect. It was very rewarding to get to very top and to see their faces enjoying it all ♡

The impossible burger! I generally don’t eat a lot of “alternative” meats, but I tried this one twice in the past 4 days and I’m quite pleased. The flavor is on point however it lacks the visual stimulation. Looks like a dry meat patty, kinda like the meat on a McDonald’s cheeseburger. Nonetheless, If you are vegetarian/vegan and want a meatier alternative to the black bean burger patty or a meat eater that want to try a tasty alternative meat, I would highly recommend. But be warned, it is pink inside and it’s the more costly burger option on the menu. Another delicious option is the #beyondmeat patty. I was surprisingly able to get my boys to indulge in those. Nimai Delgado is a vegan athlete and Professional Bodybuilder from the USA. Nimai was raised in Mississippi as a vegetarian from birth and then made the move to a 100% vegan diet in 2015. That’s right he has never eaten meat in his life. It wasn’t until Nimai won his first bodybuilding competition that he no longer suppressed his identity and begun to understand who he was, where he fitted into society and learned to own it.
Nimai uses his social media presence to spread his message about the vegan lifestyle far and wide …his message is truly powerful. He is living proof that humans do not need animal products to build muscle or to thrive. Check him out on instagram @nimai_delgado…trust me, you will be seriously impressed when you see his physique. In this episode we go over his story from the beginning, when he was a child, all the way up to the present…and yes I ask him how much protein he has! I am sure this will just be one of many times he jumps on the Plant Proof podcast. He is a truly humble guy and speaks a lot of common sense so this podcast will be enjoyed by all, vegans or not.

what a wonderful world🌎🦋 My obsession with @petajean_ ’s book #EarthIsHiring and yesterday being Earth Day has me feeling quite grateful today for the small but significant space I hold on this planet of ours✨
I’ve had an honest conversation with myself recently about many of the things I’m passionate about but don’t necessarily give my all to 24/7.
Do you believe in respecting other beings? Helping your fellow human thrive? Leaving the Earth better than you found it? Me too.
When I approached a vegan lifestyle almost 4 years ago mainly for my health, it opened my eyes to so many more reasons living this way was so powerful. I began to feel like I was apart of something substantial, a bigger movement towards something greater for the planet and for myself.
I don’t by any means have the overall lifestyle down but I have started to be much more aware of how my actions, what I consume and my awareness of these things impacts our beautiful home.
What daily habits can you alter to contribute to positive change?
Bringing a reusable cup for your morning coffee, adding in plant based meals, ditching the plastic cutlery for reusable, choosing not to support the industries that are destroying our eco system...don’t doubt ever that you can make an impact.
The world is beginning to wake up to the reality that’s staring us right in the face but there’s so much more we can do at a more urgent pace.
I encourage you to be mindful if you took the time to read this🙃and have an honest conversation with yourself too... What could you change today that could make for a better tomorrow?

Life is too short to play victim or complain. It is for this reason I don’t feel betrayed or offended by the dairy, egg or meat industry etc for making me feel like I needed them to grow strong when I was an impressionable kid growing up. Well played with your marketing guys, you got me and many others good - now I understand your agenda and what’s really in your products I’ve happily moved on to other sources of nutrition. There’s no point dwelling on the past - what’s done is done and together we can build a brighter and healthier future for this planet and all of its inhabitants by pooling our positivity together and focusing on what can be and not what should of been. ⠀⠀⠀⠀⠀⠀⠀

On Saturday we took the worlds highest, furthest cable car up to Fansipan Mountain ⛰ and then walked to the top! What an incredible experience. They’ve also built that huge Buddha on top of the mountain! 🇻🇳👫🌏
