Let’s talk ginger benefits 👊🏻
Maybe you know them already, maybe you’re wondering what the fuss is all about, considering it’s zesty, peppery flavor (my boyfriend actually finds it disgusting 😂).
I will name the most important ones and you can decide for yourself if you want to give it another go 😉
The health benefits of the ginger root are largely due to its antioxidants, anti inflammatory properties and content of therapeutic compounds like gingerol, shogaol, paradol and zingerone. I know that sounds very scientific but bare with me 😅
Raw ginger contains a diverse array of many important vitamins and minerals like Vitamin C, B6, potassium, magnesium, iron and manganese, just to name a few. Keep in mind though that we mostly consume a very small portion of ginger, so it should be combined with a variety of other nutrient dense foods in order to meet our micronutrient needs.
🌱 eases inflammation 🌱 blocks bacterial infections 🌱 promotes proper digestion 🌱 improves brain function 🌱 lowers cholesterol levels
🌱 regulates blood sugar
Research is just beginning to scrape the surface when it comes to the multitude of benefits associated with ginger root.
From personal experience I can say that it helped me fight my flue in no time! Of course paired with nutritious food and even if I didn’t like it: sleeping and resting.

This is my new favorite vegan meal - SPRING ROLLS!! And I really want to share it with you because it's so easy and really a good lunch alternative 🌱
What you need:
🔸 Rice paper
🔸 Your favorite greens (I filled mine with salad, cucumber, carrot, bell pepper, kale, red onion, mango, red cabbage)
🔸Hummus (make a big portion and store in the fridge) 🔸Peanut sauce (make a big portion and store in the fridge)
🌱Hummus: 2 packages of chickpeas, 1/2 tsp cumin, 1 tsp tahini, 1/2 lemon, 4 garlic cloves, 1 tsp parsley, 2 tbs olive oil, a bit salt, a bit water.
🌱Peanut sauce: 2 dl peanut butter, 1/2 fine chopped chili, 1 1/2 tbs fine chopped ginger, 2 fine chopped garlic cloves, 1/2 squeezed lemon, 2 tbs white vine vinegar, a bit salt, 0,7 dl soy sauce, 3 tbs maple syrup, a bit water.
Soak the rice paper in water, fill it with your favorite greens. Add some hummus and sauce - and you're good to go! Enjoy your healthy meal!!

Largest animal rights march San Francisco has ever seen took place today. Tens of thousands of people watched the march happen & the normalcy of speciesism was questioned in a major way today. It was awesome to chat with the bewildered people watching the march from the sidewalk, answer their questions & watch some of them make the connection 💞🌱
