Colourful fresh and healthy, these past few weeks I’ve had a few days each week where I’ve eaten really badly, I’ve eaten out with friends drunk a lot of alcohol and not exercised but the rest of the week I’ve done really well and I’ve found that despite those few bad days I’m still managing to lose weight last week was only 100grams and this week only 300 grams but still moving in the right direction, so these few weeks have proved to myself that just because I had a few bad days dosent mean my whole week will be ruined, I can have fun with friends and still lose weight.

Well, when I started blogging a year ago, I had absolutely no idea what I was doing, I wanted to talk about travel, well-being, cooking and fashion too. If I were a veggie, I would be a kale because of my natural curly hair. Plus, I love this veggie so so much, that it totally makes sense to name this account The Curly Kale Kitchen. Must haves for salads? Pleasing playing and multiple textures!! Beautiful meals really do taste better. I love taking a little extra time to make my food look proper, put together and appetizing...it’s a quick, easy way to practice self care and invest in your mental, physical and emotional health. But it’s not ALL about looks!! This salad was also amazing because of the variety of textures - the crunchy greens, meaty mushrooms, refreshing cucumber, and chewy, crispy tofu. Adding cooked ingredients to salads bulks them up, makes them more satisfying and plus...I love cooking so this is always a must for me! Virgil wanted buttery 'doodls with sprinkles (nutritional yeast) so I turned mine into a quick pasta salad with a few handfuls of spinach, crumbled tofu with some apple cider vinegar and salt to make it feta-y, grape tomatoes, lotsa fresh cracked pepper, a bit of nutritional yeast, and dried herbs. I kept wishing some of the spinach was fresh basil and lamenting my inability to keep plants alive 😂 but alas.

Like I state in my blog, I’m not a huge fan of salads! I tend to eat much more of them in the summer but generally speaking - not a fan! I think I ate waaaaaayyyyy to many when I was dieting in my 20’s - and boring ones at that! However, I think I’ve managed to overcome my distaste for salads by creating some fun, fresh and colorful new ones for summer! Ya know when you start your day off right and you wanna keep doing things that are gonna make you feel more like a badass? That was me today. I had lab this morning then I came home and crushed @barre3 30 minute workout (you can find this FREE video on their website under their blog about filming in a new studio) , and an at home arms + abs workout I made myself. Finished it strong and made this amazing lunch🤩💪🏼🌱
✨cruelty free salad✨ roasted some chickpeas for 15 min at 425 degrees seasoned with turmeric, chili powder and paprika. Put them on top of some spinach with red bell pepper, 1/2 avocado, cherry tomatoes, edamame, and hemp hearts. Dressed it with my favorite goddess dressing from @traderjoes 🥗🥑🍅
Mixed some of my favorite fresh aromatic herbs, added roasted summer veggies, red quinoa and toasted pine nuts, drizzled extra virgin olive oil and got the best Mediterranean salad!
