The Candied Hazelnut is a brand new cafe/restaurant (opened in Waterford by a lovely lady who I went to college with called Thersea Heffernan.) It is all completely vegan, gluten free and peanut free (for anyone who has allergies to gluten or peanuts)
Was well looked after here today and got to have a few different things on the menu! Everything was delicious 😋 would really recommend getting down here and trying it if you haven't yet 🤗

Chocolate smoothie bowl with hemp seeds, frozen raspberries and FOUR INGREDIENT granola 🍫 
This is the easiest granola recipe ever. You can just throw the ingredients in a bowl, mix, and then cook for a few minutes. It’s also oil free and just lightly sweetened so it isn’t sugar and fat filled like shop bought versions. 
Granola recipe:
100g oats 
5 tbsp agave
2 tbsp cinnamon
4 tbsp mixed seeds
•Bake @200°C until golden brown (approximately 10 mins).

It is a way of eating that involves a huge dietary increase in the number of unprocessed and uncooked fruits and vegetables, as well as seeds, nuts, grains (mostly sprouted) and beans. A food is considered raw if it is uncooked or “prepared” below 116°F, as above this temperature range, food begins to lose its essential nutrients and enzymes, or its “vital life force.” The more we can eat foods that maintain that aliveness, the more “life force” we ourselves will be able to embody. Remember Life=Life and Death=Death. More than half a century ago in his book Prescription for Energy, Charles de Coti-Marsh explained, “By eating live foods you create a live body. Live foods contain essential nutrients the body needs to create and maintain energy. Dead foods speed age, decrease ability, and decrease energy … they are useless when dead…” The best way to approach raw foods is to gradually incorporate more and more raw fruits and vegetables into your diet. A good start is to try to eat 75% raw and 25% lightly cooked (especially in regard to whole grains). Although I personally do not condone eating meat, I have added the safest meats to eat (upon request from consumers) in this general raw food diet plan so some people can make a gradual transition to a 100% raw diet.

The Downsides of Cooking Food

When we cook foods, we inevitably destroy some of the enzymes, vitamins and minerals necessary for good health. If we eat too much overly-cooked, microwaved and processes foods, it can clog our colon, which may lead to a whole host of problems, including, cancer, heart-disease, diabetes and many other degenerative diseases.

Going raw changed my taste buds.

I stopped craving coffee every morning, and no longer needed alcohol to end my night. Sugar cravings got replaced by more savory ones, and if I did crave sugar I’d feed myself a super indulgent yet still healthy raw dessert, which did not have the same negative effect as eating a whole roll of Mentos or Skittles, my former vices. I now miss it when I don’t have a green smoothie for a few days if I’m traveling, and junk foods don’t even factor into any of my decisions around food anymore.

The mental benefits of a raw food diet are being visible after the first 3-4 weeks, if you had raw food experiences before, or after the 6th or 7th week if not. I guess this lag is related to the adaptation period, and with the fact that your eating habits are being strongly challenged, which in turn takes a lot of your focus. But after this detox period, you will notice that without any trace of confusion.

Mental clarity

This is related to all of your mental states, being relaxation, moderate activity or intense focus. In each and every mental states I experienced an increased clarity and quality. I wish I could explain in a more scientific way the causes for that, but, since I’m not a scientist, I guess I’ll pass this. I just feel a lot of thinking intensity and a greater solving problem capacity. It’s not related only to the blogging activities, but in all areas, from simple day to day life planning, to more complex activities, like planning the move to New Zealand. This mental clarity itself would be enough for me not to try to go back to cook food.

Rainbow Juice ​ .
This lovely juice is very easy to prepare and it is packed with nutritious ingredients. ​ 
You will need: ​ .
a juicer

3 apples

1 pear

2 oranges

1 handful of spinach

1/4 small beetroot

1 carrot

1 slice of lemon ​ ​ ​ ​ ​

How to : ​

Place the apples, beetroot in the juicer. Then place the juice in a jar. Then juice the oranges, lemon and the carrots. Pour the juice in the jar carefully so it stays on top of the apple juice and does not mix. This way you get the beautiful rainbow colours.  For last place the spinach in the juicer followed by the pear. Then add the green juice on top. Get your straw and enjoy your sweet rainbow juice.

Add ice, if you wish. ​

You can also make ice pops with this wonderful juice and serve during Summer.

Just place them in the ice pop container and freeze for few hours. The kids will love it.

Raw chocolate and coconut brownies that I made for my friend 🥥🍫 These brownies are so tasty and can be used as a healthier sweet treat or energy bars to grab on the go 🏃‍♀️They’re also vegan (of course), gluten free and refined sugar free 🌱 
Recipe:
100g desiccated coconut
100g coconut flour 
75g ground almonds
200g soaked dates (in 150ml water)
7 tbsp cacao
2 tsp vanilla
1 tsp salt
•Blend the dates (with the water they were soaking in). Mix in the rest of the ingredients until well combined. Mixture should easily press together - if it’s too dry add more water. Place in a lined tin and refrigerate for at least 2 hours. Top with shredded coconut (optional). Cut into squares and enjoy!

A couple of interesting bars of vegan dark chocolate that I tried recently.

From Aldi there was Moser Roth brand sea salt dark chocolate. It comes in five individually wrapped bars, good for portion control, obviously not great for the environment. The chocolate is great though, nice rich taste, a good amount of salt. Can't remember how much it cost but it's from Aldi so it wasn't expensive.

I spotted Diablo hazelnut dark chocolate in EuroGiant for €1.50. It is sugar-free, sweetened with maltitol, which gives it a malty taste that I find oddly satisfying. The chocolate isn't particularly dark, but the chopped hazelnut gives it a nice texture. .

More Vegan Tuck Box treats, Go Vegan wholewheat croissant and a Real Handful chocolate orange bar. .

The croissant was interesting, in a good way; it was much softer than I was expecting given that it is shelf stable, fluffy and bready rather than flakey, and there was a definite hint of lemon. .

The bar reminded me of a 9 Bar with orange flavouring. I liked it but didn't love it.

Well it's been a busy week, but still managed to sneak in some awesome food on a day trip to Galway @tgofalafelbar, an amazing, mostly vegan falafel café in the city centre. I had a beetroot arancini burger, my friends had falafel salad and traditional falafel in pitta, they have amazing garlic mayo too...and desserts - jackfruit and walnut brownie and oat and choc cookie. My favourite vegan milk at the moment. Pricy at €2.30 a litre compared to my usual Tesco soya milk at €0.79. It’s the closest to tasting to dairy milk IMO so it’s a good choice for those transitioning to veganism.
