It’s salad season and I ain’t even mad about it. Also, I basically put everything on the grill this time of year. BBQ Tofu, Grilled Corn, Organic Red Leaf, Organic Tomato’s, Organic Shredded Carrots, and very-much-not-Organic-croutons, because I deserve it. I almost always make my own vegan ranch, some combo of vegan mayo, lemon juice, garlic, dill, and whatever herbs I’ve got in my cabinet.
Homemade Vegan Graham Crackers just in time for the long weekend and s’mores (or ice cream sandwiches)!!! Another assignment completed for my @rouxbe #essentialvegandesserts class.
I can’t believe how easy these were to make. The secret here is to toast the whole wheat pastry flour first. I also subbed coconut sugar for the organic cane sugar it called for.
I made traditional shaped crackers and rounds. Which were perfect for these ice cream sandwiches. But, not any ice cream sandwich!! These had Cold Brew Coffee flavored vegan ice cream sandwiched between those graham crackers, then dipped in chocolate and chopped, toasted almonds! 💁🏻♀️ Yeah s’mores would be fun to make with these, but if you want to kick it up a notch - these ice cream sandwiches were AhMAZing!! 😃😋

Flax seed is incredibly high in fibre and magnesium, but is also one of the richest sources of plant based omega-3 fatty acids! I always try to add some to my smoothies and desserts 🤗🥛💙 If you don’t like sweet milk it might not be the one for you, but the sweetness makes it taste amazing in cereal, oatmeal and desserts! I seriously recommend the brand @ooomega_flaxdrink , all their different flavours are amazing, they even have a macchiato flavour to put in your coffee 🤗💚

It’s the BANK HOLIDAY WEEKEND 🎉🎉🎉! 3 days of bliss. YES! In celebration here’s my vegan freakshake that i made last night at @sainsburys event showcasing their Deliciously Free From Iced Desserts. They’re so creamy and with three flavours, chocolate, strawberry and vanilla you can make your very own Neapolitan. I had such a great night getting creative with @sarahkirbyblog @gluteninterrupted @beckyexcell @fittiefodmapldn @eat.travel.london @veganvacationist @londonveganquest and @littleluxuryfoods. This freakshake is made with one tub...yes one tub of strawberry iced dessert and some almond milk. Fair to say that almost 24 hours later i still have a bit of a sugar buzz, especially with all that vegan whipped cream! 😄🍍🍓#deliciouslyfreefrom#freeshake
I made this zucchini noodle Pad Thai for dinner last night and oh my goodness!! 😋😋I definitely didn't miss the noodles on this one! I added some cilantro from the garden but man...I'm just not sure about cilantro 😣. I wish I liked it, but I just can't bring myself to like it!! Açaí officially has my heart ♥️ but for real though, I had açaí for the first time a couple weeks ago and now I am ADDICTED 😍 this one was topped with granola, goji berries, chia seeds, and banana, and it was scrumptious 🙌🏼 I have only bought it so far but am really interested in making it myself. What you’ll need!
Quorn vegan spicy chicken burgers
Mediterranean style vegetables
What to do!
1) Boil rice
2) Hollow Peppers
3) Place chicken strips in oven
4) chop and fry onions, spring onions & mushrooms
5) Add soy sauce to frying pan
6) Add parsley to rice
7) Add rice into frying pan and mix together
8) Stuff Fried rice into Peppers and place in oven
9) Place Mediterranean style veg in a baking tray, Add apple sauce & olive oil
