Dinner by him 😍😋
My boyfriend was the chef for the night and decided to do something he just loves: Ramen. His version was super easy, basically one pot:
In a pan, put the following ingredients:
• 200g ramen noodles
• 1 head broccoli, cut into pieces
• 1 carrot, chopped into sticks
• 8 big mushrooms, cut into big pieces
• 1 onion, cut into four big pieces
• 1,5l boiling water
• 2 tbsp peanut butter (we used @greenchoicesverige spicy one)
• salt, pepper and paprika
Cook in high heat until noodles are cooked.
(Optional) Meanwhile, make a sauce to grill both tofu and bok Choi with 3 tbsp molasses, 1/2 tsp salt, 1 tsp paprika and 1/2 cup water. Mix until homogeneous and pour in a frying pan. Then add 1 bok Choi, cut in four, plus 200g firm tofu, cut into thin slices. Let bok Choi soften and tofu grill.
To finalize, just arrange ramen with veggies in a bowl, topping with tofu and bok Choi. Enjoy 😘

Hoje meu namorado foi o chefe e decidiu fazer algo que ele ama: Ramen. A versão que ele fez foi super Simões, basicamente usa só uma panela:
Serve 2 porções .
Em uma panela coloque os seguintes ingredientes:
• 200g macarrão de Ramen
• 1 cenoura cortada em fatias compridas
• 1 brócolis • 1 cebola cortada em 4 pedaços grandes
• 8 cogumelos grandes
• 1,5L água fervente • 2 cs manteiga de amendoim
• sal, pimenta e páprica .
Deixe cozinhar até o macarrão ficar ao dente
(Opcional) enquanto isso, faça um molho pra grelhar 1 bok Choi cortado em quatro e 200g de tofu cortado em fatias finas com 3cs melado de cana, sal, páprica e 1 copo de água, misturando até homogêneo. Coloque em uma frigideira e adicione o bok Choi e o tofu, deixando o primeiro cozinhar até ficar ao dente e o tofu grelhar.
Para finalizar, coloque o macarrão com legumes em um bowl e adicione o tofu e bok Choi. Aproveite 😘

Cashew veggies, yellow eggplant curry, and vegetable fried rice. 🍚🍜That’s the typical big meal I’ve been having daily. Everything is so fresh it’s crazy! The cooks prepare everything fresh, straight down to chopping the veggies for each dish. Locally grown and super fresh veggies are used.
I could get used to this kind of fast food haha.
The Thai people are so incredibly nice. We have a little spot that knows us now and makes everything veggie only 😊🌱

When we saw Luciano for the first time, he was trembling with fear. He had been abused in a silly game in which he had to start running and lots of people would chase him and, whoever could catch him, would « win » him and be able to kill him. How come, within so many people, no one could notice his sad little eyes, that he was just a frightened little baby running for his life ? Luckily, a kind-hearted person was able to see all of this and intervened to save his life, however his inner world had already crumbled to pieces. It had to take a long time, lots of love and patience, for him to feel safe and happy again.
Got out of my bad mood on Tuesday 🙌😊🙏 - nature walks, good chats with adventurous fellow travel people, some uni work, cooking for myself and enjoying some good food (chickpea-zucchini-tahini stir fry with spicy millet!) AND SUN!! Ohh, it affects me so much, it's crazy - I might shouldn't ever move back to Northern Germany/Scandinavia or some other northern hemisphere, grey weather sucksss! 😬
Plus: I tried some New moon ritual - excited how it's gonna work! 😊

A few months ago I did a 2 week raw chef certification in Bali. It was a wonderful experience and I learned a lot my body. Unfortunately, I realized that my body doesn’t do well with so much raw food. As much as I wish I could be raw and eat endless amounts of raw vegan desserts, I know that my body has a difficult time digesting such an extent of uncooked food. 😩
However, today I was craving raw food and I attacked this raw som bowl. It’s exactly what my body was asking for. Yesterday was a hard day for my system. About once a year (since I can remember), I have a sharp dull pain near what appears to be my appendix (right of the belly button.) It feels inflamed and its burdensome to do most things... I’m still uncertain why this happens and if I should be alarmed. 🤕 All I know is that every time this happens it gives me an opportunity to reflect on what a gift it is to have a healthy body. No matter what you’re going through whether it be emotional or physical please take moment and internally express gratitude for what you have. 🙏

I've had a bad day today. Not feeling well. Too less to do, bored out and also the sun has been hiding the last days - well, it's the time of the ice saints atm, so that's totally normal and better weather is around the corner..(+ it's New moon today, so probably that effects me too!) It's these days, when I feel so upset inside, worrying about anything and everything, doubting a lot - my personal strengths, achievements ect. And feel so so lonely within this world. I feel the urge to travel, move around, see new places but also missing home and friends! Someone to have a deep discussion or just be totally weird with, someone to hug me and tell me, everything's fine!
Like wanderlust and being homesick at the same time??! Is this weird or can someone relate to me? 🤔😢

Went to an incredible vegan buffet yesterday before the Jardim Botanico - around $12 for all organic, vegan buffet at @vegetarianosocialclube . We are just blown away by the price and availability of everything here! Rio is a vegan heaven. @jonschory had several plates of vegan feijoada (rice, stewed beans, saffron breadcrumbs, green) + vegan yogurt, grilled tofu, raw vegetables, roasted squash and stewed mushrooms + a fresh carrot, beet, celery, spinach juice to wash it all down! Note to self: do hiking-type activities BEFORE lunch, always 😅🌱🇧🇷✌️

Random question... how do you guys feel about oil? Do you avoid it or embrace it? It seems like lately Marcel and I have been asking for restaurants to omit it. While our lunch looks tasty, it was super oily. Afterward we ate this, we immediately felt so tired that we came home and wanted to pass out. Just keeping it real and honest 🙃

Let the good times roll… Today we tried a new restaurant in Chiangmai and we immediately connected with the food and owner. Do you ever feel that your food tastes better when you know it’s made by a passionate chef? For me, without a doubt, if my meal is made with love I can taste the difference. When our dish was placed in front of us it had the appearance of affection and a little commentary to go with it. For example, these raw rolls were composed with handmade pumpkin and sesame sauce. I just love eating food that fills my stomach and my heart!
