Thank god it’s Friday! Was a good week work wise like usual. Busy busy, but to be honest training has been far off... I trained once this week.. I’ve been making a lot of changes in life lately so I’m trying to figure that out and get used to them. I’m pretty angry at myself though at the same time since I haven’t trained more then three times a week in the last month. But shit happens! Lucky for me I have stuck to my diet properly, haven’t lost or gained in that time! But time to step it up and focus my energy back into my training and fuck everything else! This has been on my mind for a long time and I’d like to share...largely drawing on my experiences.
#Empathy is the glue of human connection. More people need to work towards understanding the meaning and importance of being empathetic. If not for kindness sake then for how it serves you in all you do. Deploying empathy at all costs should be a top priority and will develop a habit of thinking that will expand your being.
Yes, most people in life will let you down at some point. Yes, people will screw you over and take advantage of your kindness. In all situations there is no excuse not to be empathetic. This thought process may not come easy but as you work towards it you will be delighted as you detach from your selfish and needlessly painful emotions. I say none of this lightly as I know it is a truth of a happy human existence. Something to ponder. 😊🙏
New low carb meal prep!🎉
Made a new recipe this week for hubby's lunches and he says it was a good one! He could always just be telling me that because who's gunna tell the person that makes their meals that they suck! Hehe But try it out anyways.😊 It was another super easy one to throw together, it's called low carb sour cream beef bake. Heres the recipe;
12oz cauliflower rice
1.5lb lean ground beef (we used moose)
15oz can of tomato sauce (I make sure no sugar is added)
1/2 C sour cream
1 1/4 C cottage cheese (I use full fat)
2 C shredded cheddar cheese
1/2 C sliced green onions
1 tsp salt
1 tsp ground black pepper
Preheat oven to 350.
Place the cauliflower rice in a 2.5 quart baking dish. Microwave 4-5 minutes or until tender but not mushy. After cooking, set aside (leave in the casserole dish).
In a large skillet or pot, cook the ground beef over medium high heat until browned, 7-10 minutes. Drain and stir in the tomato sauce, salt and pepper.
In a mixing bowl, stir together the cottage cheese and sour cream. Mix in the sliced green onions.
Pour the sour cream mixture into the cauliflower rice (that’s in the casserole dish) and mix well.
Pour half of the beef mixture over the cauliflower rice mixture. Spread with the back of a spoon to even. Top with 1 C of the cheddar cheese.
Repeat with the remaining beef mixture and cheese, ending with the cheese.
Bake at 350 for 20 minutes. Enjoy!!
