Almond Pecan Coconut Sugar Shortbread cookies - these gluten-free cookies literally melt in your mouth and they contain no refined sugar! They’re sweetened with coconut sugar, a natural sweetener made from the sap of the coconut palm tree. Traditional shortbread cookies are made with wheat flour, but these are made from a combination of almond flour and pecan meal. Usually when you modify a recipe to make it healthier there’s at least a small sacrafice in taste but these cookies actually taste BETTER than tradtional shortbread cookies. Growing up in Peoria, Illinois, some Saturdays meant Dad made a donut run to Lester's donuts. Glazed, chocolate glazed, chocolate cake (my fave!❤️)...there were always a dozen in the box, but who knows how many Dad ate in the car on the way home. ***Zero judgement** Now 78, Dad has Type 1 diabetes and follows a pretty regimented diet--and one that doesn't include donuts. These donuts, made with @swervesweetie, are something he can enjoy and not as much about his blood sugar. I hope he enjoys these and that they bring back good memories of Saturday morning donuts with the family.

What’s your fave Girl Scout cookie?
In my last cooking class for my clinical nutrition program, we are addressing illness and disease from a Traditional Chinese Medicine and macrobiotics approach. This week we’re focusing on imbalance of Earth energy which represents the Chinese spleen, pancreas, and stomach, and specifically focusing on diabetes and being overweight.
One of the recipes I’ve created is this Pear and Bok Choy smoothie bowl. It’s heavy on bok choy to help assimilate nutrients and balance an over-whelmed liver, mildly sweet pear to balance Earth energy and support spleen-pancreas function, (and also a great source of flavonoids shown in research to support blood sugar regulation), anti-inflammatory chia seeds and almond butter for healthy fats, pungent ginger, and sweet-tart lime juice and a little vanilla protein powder to balance and sustain for several hours in between meals. Using foods to balance the system in this way is one I’ve been dabbling in and definitely feels much more nourishing, free of a restrictive mindset, and intuitive than counting macros, calories, or opting out of entire food groups. Traditional wisdom, modern meals.
