Warm banana bread with peanut butter.... sounds good doesn’t it!
My favourite thing to cook when I have overripe banana’s.
RECIPE: Healthy Banana Bread - dairy free and nut free - Serves 8
120g Pitted dates chopped/pulsed finely
200g wholemeal spelt flour
1 teaspoon of baking soda
1/2 teaspoon cinnamon
1 tablespoon honey
90ml olive oil
3 ripe banana's - mashed
1 banana cut in half to place on top of loaf when ready to cook.
120ml almond milk
1.Preheat oven at 180C fan force. Grease and line with baking paper a (approx.) 25x23x8cm loaf tin.
2. Blend all dry ingredients together, then add all the wet ingredients.
3. Pour into loaf tin and bake on bottom shelf for approximately 1 hour or until skewer comes out clean.
NOTE: Great to keep individual slices in the freezer!
