Vegan stir fry! So delicious and easy I literally just put water, garlic and Braggs aminos in the pan and chopped onions and peppers and started throwing in all the veggies! And I made zoodles and threw them in and red pepper flakes and a cup of cooked brown rice for extra protein. 10 minutes. Who says you can’t cook healthy fast?

Stir fry mixed veggies in garlic(asparagus, bell peppers, broccoli, mushrooms & riced cauliflower)
Don’t forget liquid aminos, which is flavorful and a healthier version of soy sauce, but still watch portion because of sodium content.
Top with cashews and add nutritional yeast if you’d like some “cheesiness” which I did after this picture.

This is one of my son's favourite lunch, it's easy, simple and quick. Perfect for busy mom (I know mom is alwaayyysss busy 😝). ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Tofu Shimeji Mushroom Stir Fry
2 pcs garlics
1 block of white tofu, cut into cubes
1 pack of shimeji mushroom
1 tbs oyster sauce
1 tbs sweet soy sauce
2 tbs vegetable oil
Roasted white sesame seeds to garnish
1. Heat 2 tablespoon oil in a saute pan over medium heat. Add garlic and stir.
2. Place the mushroom in the pan and stir fry for 3 minutes. Add the oyster sauce.
3. Add the white tofu cubes and sweet soy sauce.
4. Stir fry carefully so that you don't destroy the white tofu.
5. Add 50ml water, and close the pan with the lid for around 3-4 min. Set the low heat.
6. Serve immediately with warm white rice. Don't forget to top with white roasted sesame seed.

I think I’ve developed a habit of eating out of Tupperware😂. I’m home for a few days so I don’t actually need to make my meals ahead of time. I made two portions of this stir fry yesterday. Since the kitchen was a mess, I just ate out if the container I stored it rather than dirtying more dishes.
The stir fry is carrots, corn, and red onion in red wine vinegar, Worcestershire sauce, ginger, garlic, salt and pepper. I added quinoa and chicken.
