These words are resonating with me this morning so how's about this for some #mondaymotivation ?? It really is true that when you find something which you love doing it doesn't feel like "work". You never have that dread before you go to start. I absolutely LOVE Monday's - it's my Group Day, I get up buzzing and that doesn't stop until Tuesday evening after Tuesday's Group (and very little sleep Monday night) when I crash exhausted but happy. The adrenaline & feel good factor of doing something which affects others lives in a positive way is indescribable ❤ (I think fellow Consultants will be nodding their heads and agreeing 😊) So, for this Monday & brand new week re read the quote, does it resonate with you? Are you currently happy doing what you do?
Rustic potato salad
Ready in: 30-60 Minutes
Syns per serving: FREE
Half a bunch of scallions, trimmed and finely chopped
4 plum tomatoes, halved, seeds removed and chopped
For the dressing
¾ cup (6oz) fat-free plain yogurt
1 garlic clove, minced
1 tsp mustard powder, mixed with 2 tsp water
Juice of 1 lemon
Small handful of chopped fresh chives
Salt and freshly ground black pepper
1) Cook the potatoes in a pot of lightly salted boiling water for 12–15 minutes or until just tender. Drain well and set aside to cool. Halve lengthwise and put into a large bowl.
2) Meanwhile, put the eggs in a small pot and cover with water. Bring to a boil, reduce to a simmer and cook the eggs to your liking (7–8 minutes for just hard-boiled). Cool under cold running water then peel and set aside.
3) Add the scallions and tomatoes to the potatoes. Roughly chop the eggs and add to the salad then toss the ingredients together and tip everything into a food storage container.
4) Whisk all the dressing ingredients together and put into a screw top jar.
5) Chill the salad and dressing until you're ready for your picnic. Drizzle the dressing over the salad before serving.
Morning!!! Trying to decide on the gym, or a long walk today?!? I LOVE exercising, it's easy to fall in to the trap of doing it to undo eating. This isn't a healthy cycle to get in to, exercise for other reasons. I really enjoy switching off, I enjoy how I feel after and I like feeling fitter, toned and stronger. Going to gym is also social for me.
You hear a lot, I danced off my syns, or I went over by a lot, but I did go to the gym 3 times. Weight loss is mainly what you eat, calorie wise you'd need to exercise like a crazy person to burn enough off to try and undo too many syns. It's more about building muscle and being healthy. The amount of serious diseases it can help to combat is amazing. At Slimming World anything that gets your heart rate beating faster is classed as body magic.
Whatever you do, see it as enjoyment, not punishment. Trusty Food Diary is coming into play again this week too as that always helps to really see what is going in your cakehole, as well as a few EESP days. Syns, no guilt and good times will be enjoyed come next weekend....a contrast from flying solo with The Tribe end of this week, to actually flying solo by myself (and some of my favourite grown ups!🙌🏼)come Saturday...I won’t know what to do with myself!!!🤫

Spent the morning with 22 fabulous members from across the Northants and Oxford district who all took the next step into finding out more about being a #slimmingworldconsultant With 10 consultants/team developers in the room also it was buzzing.
