Do you love seafood?
Was craving Shrimp, so made this Cajun & Garlic marinaded Shrimp Bowl...
Fresh Spinach (I chopped it)
Baby tomatoes (slice in half)
Cucumber (1 cup chopped)
Fresh Lemon juice
Cold pressed Olive Oil
(I always keep all my ingredients & spices simple, don’t like to overpower the flavors of my foods)
Argentinian Red Shrimp (from @traderjoes)
Pressed fresh Garlic
Fresh Lemon Juice
In a medium bowl, combine the shrimp, oil, and spices mix well. Use right away or cover with plastic wrap and marinate in the fridge for up to 24 hours.
Heat a large non-stick pan to medium-high heat for 2 minutes. Once the pan is hot, coat the pan with a light drizzle of oil and cook the shrimp for 2 minutes per side or until charred and cooked through. Do not over-crowd the pan & do not over cook. ( I cooked mine 10 at a time ate it fresh & hot & refrigerated the rest for later )
You can also serve it on tacos, burritos, or rice. ( I chose to eat mine with a salad )

Insert ➡️ (Veggie packed) Pasta salad with a honey dijon vinaigrette
For the salad:
1 box @ancientharvest elbow pasta, cooked and cooled
1 pint cherry tomatoes, halved
1 cup cucumber, peeled and diced
2 cups broccoli, blanched
Fresh basil (I used dried but think fresh would be better!)
For the vinaigrette:
1/2 cup olive oil
1 1/2 tbsp Dijon mustard
2 tsp lemon juice or ACV
2 tsp honey
Salt & pepper, to taste

Sunday funday riding day! My favorite day of the whole week. "You deserve a donut" or two... I woke up craving donuts this morning... I don't know when is the last time I've had one, but that is what I needed and wanted so that's what I got! •

Not sure, but what I do know is this smoothie has given me life - literally. Sliding down the staircase with the sheet marks still imprinted on my face to make a quick breakfast and this Strawberry Matcha Power Smoothie perked me right up. 🍵

Sweet potato smoothie bowl this AM inspired by @beazysbites 🙌🏼 This one is definitely gonna be a regular breakfast for me from now on 💯 It honestly tastes like I’m eating dessert for breakfast except it’s actually good for you and it’s so easy to make 👌🏼 Breakfast dEATS: 1 large frozen roasted sweet potato 🍠 , blended with 1 frozen @chiquitabrands banana 🍌, @chobani Greek yogurt, almond milk, peanut butter 🥜, cinnamon, nutmeg, and cloves, and then topped with cacao nibs 💯
Peanut Butter Banana Oatmeal Cookies 🍪
This recipe is 100% vegan and vegetarian friendly 😊
2 cups rolled oats (I used whole wheat but you can use whichever kind you like)
1 whole banana ~6 tablespoons peanut butter
1. Mix all ingredients in a large bowl until a dough like consistency.
2. Place a tablespoon of the dough on a lined cookie sheet about 1 inch apart.
3. Cook at 375 F for 5-6 minutes on convection or 7-8 minutes on normal.
This recipe makes 16-20 cookies

Here is a simple meal replacement shake that is jam packed with nutrients. Nutrients we tend to lack in the average daily diet. Health isn’t about deprivation, yet adding in more of the good to fill in the gaps. Keep it simple.
Remembering the cruise to the Virgin Islands 🏝. I had to make a tropical smoothie bowl this morning😊. Made a trip to @earthfare to find açaí packets. I found @sambazon frozen packets! Yay! Açaí is a superfood. There are so many benefits. They are very high in antioxidants. This smoothie bowl has 1 frozen banana, 1/2 cup of mango, 1 large chunk of pineapple, 1 tbs flax seed, and 1cup of unsweetened soy milk. Topped with @gefen_foods coconut chips, papaya, banana, slices almonds and kiwi. This is really good and has plenty of protein from the frozen packet and soy milk. I’m going to have to request my grocery store to start carrying the açaí packets! I can’t travel to Johnson city every week 😕. *
It's already the 12th day of Ramadhan, and my cooking ideas are sort of running out, so does my groceries stock in the fridge 😁 ... But I always thank Allah for giving me the ability to provide food on the table, no matter how simple it is.
