Was craving Shrimp, so made this Cajun & Garlic marinaded Shrimp Bowl...

Salad:
Fresh Spinach (I chopped it)
Baby tomatoes (slice in half)
Cucumber (1 cup chopped)
Salt
Black Pepper
Fresh Lemon juice
Cold pressed Olive Oil
(I always keep all my ingredients & spices simple, don’t like to overpower the flavors of my foods)

Argentinian Red Shrimp (from @traderjoes)
Pressed fresh Garlic
Fresh Lemon Juice
Smoked Paprika
Cayenne Pepper
Black Pepper
Ground Thyme
Ground Oregano
Olive Oil
In a medium bowl, combine the shrimp, oil, and spices mix well. Use right away or cover with plastic wrap and marinate in the fridge for up to 24 hours. 
Heat a large non-stick pan to medium-high heat for 2 minutes. Once the pan is hot, coat the pan with a light drizzle of oil and cook the shrimp for 2 minutes per side or until charred and cooked through. Do not over-crowd the pan & do not over cook. ( I cooked mine 10 at a time ate it fresh & hot & refrigerated the rest for later )
You can also serve it on tacos, burritos, or rice. ( I chose to eat mine with a salad )

The best way to eat fresh seafood is to minimize cooking and seasoning so you can taste the delicious natural flavors of the sea. We did a light crisp of our Rock Fish from our @realgoodfish delivery and topped it with some fresh salsa. Yum!

Insert ➡️ (Veggie packed) Pasta salad with a honey dijon vinaigrette
For the salad:
1 box @ancientharvest elbow pasta, cooked and cooled
1 pint cherry tomatoes, halved
1 cup cucumber, peeled and diced
2 cups broccoli, blanched
Fresh basil (I used dried but think fresh would be better!)
For the vinaigrette:
1/2 cup olive oil
1 1/2 tbsp Dijon mustard
2 tsp lemon juice or ACV
2 tsp honey
Salt & pepper, to taste

Raise your hand if you’re headed to a BBQ this weekend, but don’t want to spend your time inside preparing your side dish 🙋‍♀️ Insert ➡️ (Veggie packed) Pasta salad with a honey dijon vinaigrette For the salad: 1 box @ancientharvest elbow pasta, cooked and cooled 1 pint cherry tomatoes, halved 1 cup cucumber, peeled and diced 2 cups broccoli, blanched Fresh basil (I used dried but think fresh would be better!) For the vinaigrette: 1/2 cup olive oil 1 1/2 tbsp Dijon mustard 2 tsp lemon juice or ACV 2 tsp honey Salt & pepper, to taste Wishing you all the best weekend!!

One of the easiest and quickest meal preps is smoothies. You can add all the ingredients minus the liquid and protein powder to a ziplock bag and store it in the freezer. Then when your ready to make it simply dump the contents into a blender add your liquid of choice and protein powder then blitz it for 30 seconds 👌. -

A healthy, nutrient-dense meal does not need to be complicated nor time consuming. This took about 10 minutes if that. Pan seared wild-caught salmon on a bed of arugula and butter greens with beets and sprouted pumpkin seeds, dressed with extra-virgin olive oil. I hope you can see by many of the recipes I post that this is not a time-consuming process but it is intentional. I intentionally choose to eat anti-inflammatory healthy nutrient-dense food every day for every meal. If I crave plantain chips I’ll eat some, but a healthy version, same goes for potato chips which I love. I found some made with only coconut oil or avocado oil. I also enjoy coconut milk based fudge bars and ice cream. I am 59 years old and feel healthier and better than I did in my 20s! Peanut Butter Banana Oatmeal Cookies 🍪 
This recipe is 100% vegan and vegetarian friendly 😊

Ingredients: 
2 cups rolled oats (I used whole wheat but you can use whichever kind you like) 
1 whole banana ~6 tablespoons peanut butter 
Directions: 
1. Mix all ingredients in a large bowl until a dough like consistency. 
2. Place a tablespoon of the dough on a lined cookie sheet about 1 inch apart. 
3. Cook at 375 F for 5-6 minutes on convection or 7-8 minutes on normal. 
This recipe makes 16-20 cookies
Total time ~ 10 minutes

I used to skip breakfast but now I look forward to eating a healthy meal with my family. 
My son even requested spinach and mushrooms in his eggs. A little turkey bacon to change it up a bit.

Remembering the cruise to the Virgin Islands 🏝. I had to make a tropical smoothie bowl this morning😊. Made a trip to @earthfare to find açaí packets. I found @sambazon frozen packets!  Yay! Açaí is a superfood. There are so many benefits. They are very high in antioxidants. This smoothie bowl has 1 frozen banana, 1/2 cup of mango, 1 large chunk of pineapple, 1 tbs flax seed, and 1cup of unsweetened soy milk. Topped with @gefen_foods coconut chips, papaya, banana, slices almonds and kiwi. This is really good and has plenty of protein from the frozen packet and soy milk. I’m going to have to request my grocery store to start carrying the açaí packets! I can’t travel to Johnson city every week 😕. *
