Thursday is Curry night ☝🏻 Weather has been blistering hot during the day with thunderstorms and showers at night. Honestly... my absolute favourite. Reminds me of Bali in rain season 💥
As I used to be the advocate to make everything from scratch 🙈 I now mostly don’t have the courage, time or cringe at the thought of all the mess 😂 so I happily mix a good brand thai curry paste with some coconut paste and coconut milk.
Curry paste // leftover veggies, i used koolrabi, leek and sugar snaps // fresh cucumber chopped // sliced radishes // hot pepper flakes *duh* // coriander // shrimps cooked in garlic butter // coconut milk // onion // garlic // Have a great evening

A week ago we had this delicious meal: rice, fried tempeh with a selfmade vegan gravy and it was so good. We got the recipe from our cooking class and we love it 😍 It's very easy to make. Let me know if you are interested in the recipe 😊

(ad) Hands up who is loving the sunny weather? 🙋♀️ ☀️We have been making the most of it and getting outside and active every day.
Going on long walks and paddling in streams makes us hungry, so we always make sure we travel with tasty and healthy snacks like @9ninebrand, which is why we have become an ambassador for them, to share with you all how much we love them and that they are a part of our every day snacking.

Made a really easy soup today (I have a slow cooker which helps but isn't necessary) and I thought I'd share as it didn't take much prep and it was something our 6 month old baby, 2 year old son and both grown ups could all enjoy. It also has the potential to be a one pot wonder but I am forbidden from blitzing stuff in it in case I damage the none stick coating. But I like that I can be busy with the kids and know it won't burn on the bottom or I would just do stuff with in a large saucepan. 3 onions and 5 peppers and I use veg stock as I'm veggie but you could use chicken stock instead. Final ingredient was 1 tbl spoon of paprika. Fry of for 15 mins then add paprika (spicy, smoky, sweet your choice) add the stock (about 1.5 pts) cook with the lid on/in the slow cooker for at least an hour. If you had time to do it for a few hours in the slow cooker. Then blitz with a food processor.

And here we have tacos 🌮 a la Tracie: tempeh taco meat, green onions, tomatoes, salsa, and lots of guacamole, with a red cabbage “wrap” (use your imagination for that last one)...
This is my 2nd version of lunch...sat down to my 1st version- a plate of leftovers I "should" eat but in no way wanted. I wanted warm, cheesy, and bready.
With 15 minutes to cook and eat, I threw together this quesadilla type concoction (tortilla + cheese + avocado + tomato + spinach + cheese with garlic and salt) - perfect!
Last nights #dinner was this super SIMPLE split pea soup 💚 all we did was soak the peas in a cooking pot for 2 hours, then rinsed the peas and added fresh water to boil. We seasoned our peas with salt while cooking and once they were soft enough we used a potato masher to cream the peas. no blender, no hassle, everything in the same pot! To complete our dish we added a scoop of basmati rice, chilli and a drizzle of olive to taste ✨
