The way things are named often fits how they feel. Words may recall the time we have been gloriously happy just as the one we have been lost in the darkness. Words are feelings, which, by the way, usually led to emotions. Then how about "zuppa inglese"? Quite a fun sound... Then, why should such words remind us the softest sponge cake, just wet exactly how it takes not to stuck but just melting in your mouth, while the most exquisite sense of liquor explodes into the warm freshness of sugar, exalting the cake in a way you wouldn't imagine to be possible... In my humble opinion it's just simply wonderful and astonishing how the right amount of custard plays, then, such a fundamental role in stratifying the sweetness, fulfilling into every bite the true essence of spongecake, which regularly hides behind an intoxicating mask of sugar. While taking even a small bite of this dish, time seems like slowing down as to allow you to dive into a rainbow of blooming flavors, and, in order to complete the experience nothing would be more appropriate than a crunchy, smokey bite of chocolate, where cacao's vegetable oils push something I would try describing as "an alcoholic smell of flour" leaving you with the best satisfaction. Finally, I can not help mentioning the sugar chip topping the dish, which, as in a chemical reaction, catalyzes the process.
In conclusion I couldn't help having a good time even if I wanted to. But there is a detail which made this experience extraordinary over my bravest expectations, as there was no well dressed figure waiting my table but a young man in a dirty chef suit from the previous turn, tired in the eyes, with a big smile on his face. I was receiving my dish right from the hands of the person who made it for me. And so it was for the rest of the meal, that I was supplied by three other young chefs, willing to surprise me, gladly engaging the challenge that every single dish represented. There is no such a place as @spazio_nikoromito shining in the cold nights of #rivisondoli as a light for new generations.
I will soon return to Spazio, hungry for more.
