So I got a little “fancy” with my turkey burger 😂. I spruced it up with some mozzarella cheese and pasta sauce. It was delicious. Really. I don’t like eating off big plates and my good friend Mr. Dishwasher was cleaning all my small ones for me so I borrowed a plate from my minions (they only have about 100 😐) and it worked just fine. I feel like I ate soooo much, but I didn’t. It was all portioned out in my containers and I didn’t skimp on flavor whatsoever. I may have been lazy tonight, but it didn’t taste like it 😂😂. I think the Halloween plate was appropriate for my apron choice 💚🖤🧡. Plus, Halloween is awesome, amiright?! ☺️
Instead of my milkshake bringing all the boys to the yard (which @inkedfitdude would be extremely confused if there were a bunch of boys in our yard 🤷♀️) my life is more like "any food I have in my hands brings every animal in my house as close to me as possible." #furmom life amiright??? Quinoa, roasted bell pepper, roasted sweet potato, black beans corn, avocado, jalapenos, cilantro and all topped with this addicting sauce 👉🏻 Blend 1/2 cup cilantro, 1/3 cup plain greek yogurt , 2 tbsp red wine vinegar and olive oil, 1 tbsp @beeseasonalhoney honey, 1 tsp dijon mustard, 1/2 tsp red pepper flakes, 1/4 tsp cumin & paprika + 2 cloves of garlic. I swear I could drink the sauce it's that good.. ok maybe not drink but I swear it's 💯👌 Hope Wednesday is treating you well friends 💛
QUINOA PORRIDGE POTS. 🍒🍯😋 When AUTUMN is upon us, it's time to warm our tummies with some nourishing soul food.
One of my favourite ways to start the day is with a bowl full of warm
Quinoa Porridge. Super easy and super TASTY.
Simply warm some pre cooked Quinoa in a pot with a little coconut oil, Add homemade nut milk or coconut milk, a teaspoon of coconut sugar + sprinkle of mixed spice + some fresh or frozen berries + stir through and let simmer for a few minutes. I added a teaspoon of hazelnut honey near the end as I love the extra nutty flavour. Simply DELICIOUS. Topped with some coconut yoghurt, berries and nut clusters.

Quinotto con champiñones al ajillo
250gr de quinoa
1cdt de ajo molido
1 1/2 cdt de aji amarillo
1/2 cdt de aji panca
100gr de champiñones
1/4 de perejil
1/4 de queso parmesano
1/4 de taza de vino blanco
Sal y pimienta al gusto
Picar la cebolla es cuadritos y sofreir con el ajo, luego agregar el aji amarillo y aji panca sofreir por 2min, lavar la quinoa y agregarla al aderezo, cubrir con 1/4 de taza de vino y despues agregar 1 taza y media de agua x cada taza de quinoa.
Para los champiñones:
Es una sartén pequeña a fuego bajo agregar aceite de oliva, el ajo, los champiñones y el perejil, dejarlo por unos 5 a 8min.
Chekear la quinoa que este bien cocida, cuando el agua se ha consumido en la quinoa, agrega los champiñones y el queso parmesano, puedes acompañarlo con pollo a la plancha y ensalada!

The BEST Zucchini Cakes I've ever made! Wondering if it was how I tweaked the recipe with some new herbs or the fresh local zucchini from my friends garden? Either way- making these again for a simple summer- vegetarian dinner. Also, this cold quinoa salad got a remix also- I added lemon juice with honey jalapeño mustard as the dressing 😍
Recipe for Z cakes:
🌱1 large zucchini shredded (squeeze in towel to get out all excess water) 🌱2 eggs (or for vegans a flax egg)
🌱1 cup gluten free breadcrumbs
🌱1/2 cup Parmesan cheese (or for vegans 1/4 cup nutritional yeast)
🌱1 teaspoon Herbamare 🌱1/4 teaspoon black pepper 🌱1/2 teaspoon cumin
Mix all ingredients, wet your hands and roll into balls and press into rounded cakes. Bake at 425 for 10 minutes, flip and bake 15 more minutes.
Recipe for Quinoa salad:
Cook 1/2 cup quinoa, cool and add 2 tablespoons fresh cilantro, 3 tablespoons of chopped red and yellow peppers. Juice one lemon and add 1 tablespoon of @msifoodiesbox @wwwilder honey jalepeno mustard and drizzles over salad- mix together well and chill for 30 minutes or overnight ✨#vegetarian#veganrecipes#zucchini#gardentotable#quinoa#salad
