So today’s lunch is very simple and fast spring onion sambar with rice, rice papad, gun powder and mango for dessert😁. You know what’s the best way to eat mango? Wash the mangoes well , start biting from the bottom side of the seed, suck up the juice as you bite in and really don’t bother spitting out the skin, chew it and swallow it. No I’m serious that’s how I love to eat mango and it makes me so nostalgic . Every time I ate mango like that when I was little. Though my kids still haven’t got the hang of eating whole mango I do show them some days how it’s done 😜.

Super simple dinner tonight, a cheese quesadilla and a salad.  My Lodge Logic cast iron pan cooks this so quickly I barely had time to throw the salad together!  Any time I'm having a "beige" main course I try to load up on veggies so I pumped up my salad with some chopped granny smith apple, shredded carrots, sprouts, slivered almonds, chopped walnuts and sunflower seeds.  I also made sure to leave one slice behind for tomorrow; that way I don't gorge myself on the ENTIRE quesadilla!!

-1 rotisserie chicken
-3 avocados
-1/2 bunch of cilantro, roughly chopped -1 large jalapeño, diced
-1 lemon or lime
-3 garlic cloves, minced
-S&P

Shred the chicken, dice the avocados, add in the cilantro, jalapeño, and lemon/lime juice. Season with salt and pepper, mix it up, and you’re done 🙌🏼 I also add a few dashes of Tabasco for some extra heat 🔥 Eat it solo or as a dip with your favorite tortilla chips. #thekaleouseks

1 lb of your choice of meatballs
1 cup of dry Balibites Peanut Sauce mix with 3/4 cup of Hot Water 
1/4 cup of crispy shallots or onion 
2 stalks of green onions for garnish
Indonesian Sweet Soy Sauce

Heat up meatballs or prepare meatballs, then add the sauce.  Thoroughly mix till all balls covered with sauce, then add shallots and garnish with green. To add an extra Indonesian taste, drizzle it with Indonesian Sweet Soy Sauce. Serve with rice or your favorite pasta!

It’s a “whatever Greens I got in the fridge and in my yard” Pesto Pasta kinda night. I’ve been enjoying dandelion greens over the last week. I added a handful of those, plus a few cups of arugula, spinach, dill, cilantro, parsley, toasted pine nuts (other nuts /seeds work well too), fresh Parmesan (nutritional yeast for vegan/dairy free), olive oil, lemon, garlic, s&p. I caramelized an onion, sauteeed mushrooms and a chicken breast then tossed in the pesto and topped with olives. Dinner in less than 30 👍🏾

Tonight’s easy dinner: baked pesto chicken thighs topped with tomatoes and roasted asparagus. Not Paleo due to the Parmesan in the pesto, but #keto perhaps? The tomatoes roast as the chicken cooks and are just insanely delicious!

You can get fall off the bone chicken that tastes like it’s been cooking in a Dutch oven for HOURS after only about 30 minutes in the #InstantPot —- seriously this is the best invention and I’m so glad I finally pulled this out of the box and started using it!!! Directions: turn the InstantPot to the sauté setting and heat up some olive oil. Add salt and pepper to each side of the (bone-in) chicken breast and sear about 3 minutes/side. Remove the chicken, then add a little chicken stock, 1/2 a chopped onion and garlic. Cook for a minute or so then add in a bag of baby carrots and cook for 2 minutes. Turn the InstantPot off, add back the chicken breasts plus about 3 1/2 cups of chicken broth. Set on manual and cook for 26 minutes. Literally the chicken falls off the bone! .

✍🏼INGREDIENTS: turkey sausage, zucchini, yellow squash, sweet potatoes & cracked pepper.

✍🏼DIRECTIONS: Slice meat & toss into the skillet w/ olive oil (or coconut oil) over medium heat. While the meat cooks, chop your veggies & add to the skillet w/ a few twists of cracked pepper. Stirring occasionally, mixture should be good to go in about 10 minutes! 💥👊🏼😜

I say this all the time and I will continue to stand by it 100%....When in doubt, quinoa salad!! I always have some quinoa in the cabinet so when I’m not sure what to make for dinner, all I have to do is search the fridge to see what I can throw in with it to make a complete meal! .

Tonight I came up with this Asian inspired quinoa salad using my ginger miso dressing! It has a little sweetness from some clementine wedges and chopped red bell pepper, a little bit of heat from a diced jalapeño, and a nice freshness from some chopped scallions and fresh cilantro! I added the edamame in there for a good protein source and some chopped avocado (because who doesn’t love avocado? 🥑) All these delicious flavors mixed together with the ginger miso dressing and some freshly ground pink Himalayan sea salt and black pepper were a stellar combo!!! .

And to top it off I added some shrimp that I sautéed in ginger, garlic and cilantro (I used the gourmet garden pastes that you find in the produce section. 1/4 tsp garlic, 1/4 tsp cilantro,1/2 tsp ginger and sauté until the shrimp turn pink! So yummy!!) .

This dish is super easy to prepare and I always make my quinoa salads in big batches because they make EXCELLENT leftovers for lunches!! (Meal prep anyone?) Just cook 1 cup of raw quinoa according to package instructions. When quinoa is done cooking, add the clementine wedges (from 3 clementines), bell pepper (1 whole pepper, chopped), scallions (about 5, chopped), cilantro (big bunch, chopped), and 1 cup edamame. Add in 1/4 cup and 2 Tbs of Appalachian Naturals ginger miso dressing (or dressing of your choice). Mix everything together adding salt and pepper to taste. Add avocado to each serving before eating (to prevent from browning in leftovers). Cook shrimp separately and add to top of each portion before serving! 👌🏼

Today started out great. I got up early, made my bed, wrote in my gratitude journal, ate a healthy breakfast, and paid bills. #crushingmonday.

But then I got really bad cramps (like the debilitating ones), missed a bus and had to wait forever because LA only pretends to have reliable public transportation, and the microwave at my office space was broken so I had to settle for lukewarm coffee (the worst!!!).

Needless to say, washing, prepping, and cooking veggies with dinner was pretty much the last thing I felt like doing when I got home, which is why I’m OBSESSED with frozen veggies. All you have to do is heat and eat. That’s it! Broccoli is my fav, and depending on my mood, I’ll either steam it for about 5 minutes, or microwave it for 1 minute.
