Entre otras cosas lleva crema de coco, que viene en lata pero no es leche de coco, si te da hambre la foto ve comprándolo que pronto daré instrucciones. Every run doesn’t have to be your best run, your fastest or your longest. I get up most days and put on those trainers because whether it’s a quick 20 minute shake out, my commute to work or a long run - it’s my headspace - it’s how I enjoy my body - it’s how I enjoy time for myself. ⠀
But sometimes you line things up to make it a good one. Before yesterday’s race pace long run, I had a long lie in, I planned a new route and made these vegan, gluten free pumpkin pancakes to fuel and it worked 💁🏼♀️ oh and I listened to Stephen Fry’s Harry Potter and the Philosophers’ Stone audiobook (highly recommend as a running soundtrack) ⠀
50g canned pumpkin⠀
1 tbsp unsweetened apple sauce ⠀
9g egg replacer (2 egg whites for none vegan)⠀
30g (2 tbsp) buckwheat flour ⠀
Pinch of salt ⠀
1 tsp baking powder⠀
Mix all the ingredients. Heat a few sprays of @thegroovyfoodcompany coconut oil spray or your oil of choice and add tablespoon amounts of mixture to make small pancakes. Cook on a medium heat for a few minutes and then flip. ⠀
I served with coconut yogurt, frozen berries and cacao nibs.

Pancake RECIPE for 2:
• 2 cups rolled Oats
• 1 cup almond/soy/non-dairy milk
• 1/2 cup canned pumpkin purée • 2 TBS ground flaxseeds • 2 TBS apple cider vinegar • 2 TBS baking powder (aluminum free)
• 1/2 tsp pumpkin pie spices (cinnamon, nutmeg, cloves)
—- Add everything to a #vitamix blender and blend away until thick, smooth and creamy!
—- heat a non-stick pan and pour little fun pancake shapes with the batter as you like!

Pumpkin pie spiced paleo pancakes with peanut butter. 🥞🍌🥜🍯These pancakes were so easy, I just threw an egg, banana, some steamed pumpkin, almond meal, cinnamon, ginger and nutmeg in a blender with a splash of almond milk and blended it up until it reached a thick and creamy consistency. Topped with @mayversfood dark roast PB mixed with a splash of water until light and creamy. So yum! These can also be made with steamed sweet potato, or just the banana instead of pumpkin. Another fave combo of mine is banana chai pancakes, using bananas and chai spices. The options are endless!
