It’s finally looking a little like Spring over here in Pennsylvania. My bones are starting to thaw ♥️ One of my favorite places to be is outside in the sunshine and all the better if it involves foraging. I only started foraging a few years back and have SO much to learn, but nothing brings me so much joy as learning the seasons through food, how to identify trees and zones, and above all, edible delicious, wild, nutrient dense food. .
When getting into foraging it is really important to learn from those who do it sustainably and responsibly. Learn how to harvest so plants can continue to thrive for many years to come and be understanding and loving enough to just admire some plants from afar while not harvesting because they may be endangered if not returning. Also, it is important to learn areas that are sprayed vs. not and to stay off roadsides for this very reason.

Ramps are everywhere in my area this time of year and there is one beautiful spot that just keeps on giving 🙌🏽🤗. I cook with them on the regular (delicious on eggs!), but will also be preserving them by dehydration to make a ramp salt, making ramp vinegar, and going to attempt a ramp kraut. Let the foraging season begin!

I decided sauerkraut would go great with dinner and instead of just one kraut, I dished up 3 different ones to enjoy. Fermented veggies are not only healthy and delicious, but they make a quick side dish for almost any meal! Sometimes even I forget that, until I look in the fridge of course 😜. .

Homegrown/local soup day. The last couple of days have been soup weather, for sure. The timing is quite good, though 😊 I have been thinking lately that we growers are quickly heading into the busiest, most physically demanding part of the year. It's wonderful work, but it takes a lot of strength and endurance.. and I have been thinking that I ought to be eating better now, in order to properly prepare myself.

It's challenging sometimes, though, to eat well coming out of winter. There isn't much fresh food in the gardens just yet, but there is this delicious arugula (it's such a forgiving plant!), so I picked a bunch and started a pot of bone broth to simmer for the day. (Duck bones and turkey necks, reserved from our previous holiday roasts - locally raised)

Thinking about food medicine, I decided to add some mushrooms and homegrown kale, both of which I had dehydrated last year. I also mixed in some salt preserved lemons, which I had made a little over year ago, and a bunch of Italian herbs that I had harvested from our gardens and dehydrated last fall.

The whole thing began to take on a kind of Zuppa Toscana feel, and the end result was wonderful. Even without much fresh food, we still had a LOT of nutrition tucked away from previous harvests. Eating the last of some of last year's harvest felt a bit like coming full circle, as we are replanting and tending many things now.. and we will need all the strength we can get 💪

Slow baked Quinces drizzled in local Honey and cooked in Lavender & Peppermint Tea, dessert last night with some vanilla yogurt made by Michael. A mix of Pineapple, Champion & Smyrna Quinces from our Quince Orchard, we still have some available to sell, they are $2.50 a kilo, organic and grown using Permaculture Principles. In Europe Acorus calamus was often added to wine, and the root is also one of the possible ingredients of absinthe. It is also used in bitters. In Lithuania Ajeras (Sweet flag) is added to home baked black bread.

What had happened was... 😬 I got too many jars. Got my spring/summer stash organized, still have a cupboard full, and that last picture is the pile of mason jar boxes up for sale or barter. Pints, quarts, half gallons. Some 100 yr old antiques. No cracks, great for canning. Ball, Kerr, Star, Crown, and more. Some of these are $15-25 EACH on etsy/eBay. For real I'd take some healthy young chickens as a barter or a good cash deal. Holler.. I'm really trying to tip the minimalist/hoarder scale here y'all. Virginia 23936

We’ve been really into homemade sodas lately, and turned the lingering plum blossoms from the backyard into a heady nectar then fermented with a ginger bug.

Make the ginger bug with a half cup sugar and a half cup water (warm, not hot) + small knob of ginger, grated. Leave on the counter, loosely covered, for one or two days, stirring a couple times a day, then feed with a spoonful of sugar and a spoonful of grated ginger. After a couple days, you should see bubbles. Strain a quarter cup to use for your soda. Meanwhile, make a simple syrup (a cup of sugar, a cup of water). Simmer just until sugar is dissolved, stirring. Turn off heat, add about a cup of plum blossoms, and cover. Strain off about a half cup of syrup (save the rest for cocktails or another batch of soda!), and combine with cool water (about a quart.) When mixed well, add the strained quarter cup of ginger bug, then funnel the whole mixture into a flip top glass bottle. Leave on the counter for a day or two, then pop in the fridge to chill before opening.

You can try just fermenting for a day, chilling, and then tasting. If it’s too sweet or not fizzy enough, leave out at room temp another day. Enjoy!

Pink Lettucy has been a prolific producer of leaves and flower shoots, aka raab, this season. It has a mild flavor that’s great raw or cooked and even lacto fermented. I have a few jars of dried fermented Pink Lettucy mustard stashed in my pantry now. Chopped fermented mustard greens are yummy in soup. The olives are simply layered in pure salt, in a foodsafe, perforated vessel, and left to do their thing for upwards of a month. I laid down some cheesecloth as a bit of a buffer against the rough edges of the basket - the only suitable container I had - and protection from bugs and birds. The basket now sits in a dry corner outside (on the ridged lid of a storage bin, to catch any black olive juice clear of the basket). At most, the salt will need to be topped up now and then. This is my first go at curing black olives this way: not only should this method provide the dry-cured olives that I love, but it requires far less effort than wet-curing. If it all works out 😬🖤🇬🇷⠀

Home made fruit leathers, AKA ‘roll ups’. Made using home grown + bottled fruit purée, thinly spread out on my fruit leather trays in my Fowlers Vacola dehydrator. I dry them until still bendy but not too sticky. These will be kept in the fridge though, as it is still hot and bit humid weather to keep them safely in the pantry when they are still a touch chewy. #fruitrollup #fruitrollups #realfruitflatout
Home made fruit leathers, AKA ‘roll ups’. Made using home grown + bottled fruit purée, thinly spread out on my fruit leather trays in my Fowlers Vacola dehydrator. I dry them until still bendy but not too sticky. 1. Celery salt. 
2. Cream of celery soup (batch-frozen).
3. A nice, rich veggie stock. 
4. Along with a lengthy stay in the crisper.

Reynoutria japonica is an invasive plant and commonly invades disturbed areas with high light, such as roadsides and stream banks. This plant is native to eastern Asia and was first introduced into North America in the late 1800s. Reproduction occurs both vegetatively (rhizomes) and seeds, making this plant extremely hard to eradicate. The dense patches shade and displace other plant life and reduce wildlife habitat. It is also a serious problem and it is considered a major weed and a threat to conservation, and it is legally prohibited to introduce Japanese knotweed into the wild. Its early emergence and great height combine to shade out other vegetation and prohibit regeneration of other species. Thus it reduces species diversity and damages wildlife habitat. It does not appear to be a threat in undisturbed forest and other low light areas, but it is likely that, if unchecked, it will continue to expand its range in open habitats. Once Reynoutria japonica has established it forms large, almost pure stands which are extremely persistent and difficult to eradicate

Big, brilliant bunches of bodacious basil🌿 I adore growing loads of basil, but it’s been a challenge finding ways too preserve this delicious herb, outside of using it fresh. Basil looses a lot of it’s luster once dried, so I prefer to preserve it other ways, though I do keep one jar of dried leaves on hand just to have. I love to just freeze it, packed in olive oil. Then I make sure to use that tasty basil-infused oil too. You can even puree the leaves with the olive oil and freeze in ice cube trays and pop as needed into sautés, vinegrettes, soups and such. If you want to keep that bright green loveliness, just give the leaves a super quick blanching before drying and freezing. What about basil-infused vinegars? Super yummy! This summer I plan to explore making up a batch of basil sugar to sprinkle on strawberries🍓 If you’re interested in exploring more of basil’s medicinal benefits, you can make up a tincture with 1:2 ratio of basil to vodka. Basil is packed full of all good herbal juju like antioxidants, anti-inflammatories and relaxing properties. And if your groove is to stick with using it fresh, extend your bounty by storing fresh basil in a jar of water on the counter, just like you would cut flowers, just make sure to provide fresh water daily. Pickled Grapes. I know sounds weird, but I’m told they are divine. They taste pretty amazing today, but I’m told they take 24 hours to pickle. The sweetness of the grape followed by the tartness of the vinegars with a hint of cinnamon & spices. Looking forward to testing them tomorrow....
