Wrapped up this busy Monday with a glorious bowl of red onion, summer squash, red bell pepper, zucchini, roasted in balsamic vinegar and spices served alongside steamed sweet potatoes; all topped with fresh cilantro and nooch and enjoyed with a glass of Pinot Noir. Perfect summer din din!

Potato cleanse update (Week 9): I feel like summer weather makes me want to eat all the food 😬 Not necessarily bad food, but I have deviated a bit and dabbled into some apples and fries (like actual deep fried fries, not the healthy kind) and maybe I've been exposed to a little too much maple syrup 🙄. I think it's because the other night I did overeat quite a bit and now I feel like I'm struggling to let go of that rush of eating foods other than potatoes and veggies. And now I feel like I've gained weight and feel as though maybe I shouldn't weigh myself next week because I get stressed when I feel I didn't do my best. Potatoes get a bad rep and I’m really not sure why. Potatoes contain: vitamin c 🥔 vitamin B6 🥔 fiber 🥔 iron 🥔 potassium 🥔 and there’s so many benefits to eating potatoes other than the fact that they’re delicious. I go through a bag of potatoes every single week and I have for about the last 3 years. I always cook mine with no oil, and I soak them for 20 minutes before cooking so they’ll get nice and crispy in the oven (make sure to pat them dry before adding your seasonings) 😋 favorite dips are vegan ranch & guacamole. 🥑
When you’ve been traveling and not eating as clean as you’re use to, you make tofu scramble breakfast burritos packed with all the veggies you have on hand. We had fun, but it’s so good to be home cooking. What made it even more enjoyable was enjoying it with my favorite people on the back patio while talking and laughing. Ingredients: tofu, air fried taters, bell pepper, onion, spinach, tomatoes, mushrooms, avocado, salsa, and fresh cilantro seasoned with turmeric, garlic, smoked paprika, chili powder and kala namak. 🌯🥑🍅🥔🌶😍

I had this @mandysalads the other day with my awesome coworkers and friends @nicalligraphy and @c_scarpone and it was SO GOOD. What was supposed to take me just a few hours to do, ended up taking the whole day. I had packed a snack amount of potatoes and string beans to sustain me. Car dealings shouldn't take all day *sigh*... But it ended up working in my favour so I'm happy about that 😄 So for dinner, we went to a salad place and since I'm allowed to have veggies now, it was perfect! However, the salad did have avocados and Tofu but I figured I didn't have much to eat anyway and it would keep me full until the next day, so I figured it was okay 🙈 I even added roasted sweet potatoes to keep it legit 😅 PS. I need to lose over 100 lbs. yeah I know but anyways I’m ready... over the previous month I had been trying diet pills and other things with no success, what was gonna make this any different? I wasn’t gonna be hungry and plus side is I love potatoes! Try explaining to your family your meals will be potatoes and they look at me like I’m gonna stave them. So I have to figure out what will work with being a busy Mom and feeding a family. Peekaboo! Sorry I’ve been a little MIA 🙈 I met up with a friend from college and we took a trip down to LA for a couple days, then I showed her around SF. 🌉 It was a great week filled with laughs, celeb spottings, and some of the best food I’ve ever eaten. 🍱🥘🥗🐷 On that note, I’m trying out the potato diet for the next week to help get rid of some of my vacation bloat and kick my butt back into gear! 🥔🍠🍟

Since recently switching from a SAD to a HCLF Vegan diet I've been going through many changes both physically and mentally. Most of the changes are vast improvements in energy and mental clarity but there's still one thing I have come to realize I need to work on ASAP. My relationship with food. I used to binge almost daily on a standard American diet bc of stress and out of habit. My hunger signals have become hard to recognize and my palette has become completely overloaded over the years. It's time to get simple. So the next week I'll be noshing on some beautiful potatoes in addition to other non starchy veggies and plenty of water. Weight loss would be nice (it's been happening anyway naturally) but it's not the goal. Wish me luck!! 😊 ...but rest assured I'll update on any progress!

Little Sunday life update: I got my first school field-related full time job for the summer & I couldn’t be happier! Finally feel like that much more of an adult and it’s scary but exciting! Been travelling and enjoying life until that begins. Won’t lie my gym game has been PATHETIC. It just hasn’t felt enjoyable or natural for me the past few weeks but the motivation is BACK and I’m ready to crush it when I’m home!!
One of my favourite sauces lately has been this random veggie/meat sauce i made. It can be used as a filling for jacket potatoes, bolognese sauce, burrito filling, pie filling, the options are endless to be honest. It's awesome to have in the freezer so i can just grab and serve however i like which is perfect seeing as I'm still not fully back to normal life after my holiday, this week I'll be getting back in the kitchen and creating more content for you guys. Recipe is below - - - -
2 cans @vegiedelights casserole mince
1 can diced tomato
1 can black beans, drained
handful of mushrooms, diced
2 carrots, diced
2 onions, diced
3-4 cloves garlic
1 veggie stock cube
2-3 tablespoons cajun seasoning (optional, you can use paprika instead if thats what you have)
2-3 tablespoons ground coriander
1 tablespoon turmeric
2-3 tablespoons mixed herbs
chilli to taste
salt and pepper to taste - -
Start off by sauteing your veggies in garlic and a dash of water, once soft add all other ingredients to pan and cook on medium heat for 30-40 minutes, stirring occasionally, this allows the flavours to really soak in.
