This delectable cured meat gets its name from the part of the pig from which the meat is cut - the jowl, or guancia, which is Italian for cheek.
Pine Street Market sources the pork for our guanciale exclusively from @riverview_farms in Ranger, Georgia. The pork jowl is dry-cured with black pepper, chilis, and garlic and then carefully stored in our curing cave to age for 2 months.
Guanciale lends marvelous flavor to classic Italian pasta dishes, such as Carbonara and Bucatini all'Amatriciana, or can be used to flavor fresh spring peas or crisped to serve with a simple arugula salad. A little bit goes a long way!
