CHICKEN AND MANGO CURRY

The instagram referendum decreed it by a Brexit-esque margin so I made the chicken curry. This is a super simple low calorie high protein curry. You can make substitutions on the seasonings, ditch the mango or even the chicken, or add coconut should you so wish. Also, once you have the spices/seasonings in the cupboard it’s CRAZY cheap to make- less than £2/portion, under 300 calories (without rice) and over 40g protein. Quantities are by no means exact...

Ingredients:
1200g diced chicken breast
275g mango
450g cauliflower
480g carrots and peas
200g chopped onions
1 can chopped tomatoes
Tomato purée
Frozen chopped garlic and coriander
Curry powder, fennel seeds, fenugreek, cinnamon, cumin, ginger, chilli (I forgot to add garam masala)

Fry the onions in some fry light, add all the spices and seasoning, and keep going till the onions are soft. Add water occasionally to keep it from drying out, and some tomato purée.
Add the chicken
Add the mango and chopped tomatoes and stir
Once the chicken is cooked add the cauliflower, carrots and peas
Simmer until it’s cooked! Makes 8 decent sized portions. The end.
