Hope you are well & that you’re enjoying this beautiful afternoon...My morning was a bit crazy today ( At least, I didn’t get to church late 🙌🏽✨) Earlier, this morning, I baked some Persimmon & almonds scones ( Super easy by the way!) It’s an adaptation of Tina’s recipe from the scaling back blog. Check her page @scalingback or her website out💕💕. You won’t be disappointed. I’ve had tons of scones in my life ( I used to be “addicted” to Starbucks blueberry scones 😍😍😋OMG! Anyone else?) but these ones are among the Best I’ve had in a LOOooooong time! 💯 👌🏽✨Cheers 🥂Tina & Thanks for the inspiration ! How were my scones different? 👉🏽 I used Light spelt & oat flour instead of whole-wheat flour ( as per her recipe) & I used a bit of coconut sugar along with turbinado sugar.. They literally “melt” in your mouth while being crunchy on the outside ( Thanks to the almonds & sugar combination) The Persimmon flavour gives it a little “je ne sais quoi” Just Yummmmm!! 😋 Do you eat scones? A persimmon a day keeps the doctor away!
It's too bad that many of us are not familiar with persimmons or better known as 'pisang kaki' among Malaysians.
Excellent source of fiber, low in calories & fats, and also a very good source of Vit C. And I'm getting hooked to its sweet and delicious flesh! I eat this almost everyday. (However, according to my readings, we should consume persimmons in moderation bcoz it contains fructose which might be harmful to our health in excessive amounts). #persimmonlover#favoritesnack
