Receita:
Comecei por fazer o puré de meia maçã: Cortei metade da maçã aos cubos, coloquei numa taça de vidro com uma colher de chá de  água e levei ao microondas potência máxima 2/3min. Depois de estar cozida desfiz em puré com a ajuda de um processador (pode usar varinha mágica ou um simples garfo). Noutra taça bati 1 ovo e juntei 2 colheres de sopa de farinha de amêndoa, 1/2 colher de sopa de farinha de coco, o puré da meia maçã, 1 colher de sopa de leite de coco (ou amêndoa, ou outro leite vegetal ou iogurte grego, ou nata), 1 colher de café de fermento, canela em pó q.b. e uma pitada de sal.

Coloquei um noz de manteiga numa frigideira pequena (18cm), e dispus a outra metade de maçã cortada em triângulos finos pela frigideira. Polvilho com canela em pó e deixei cozinhar bem de um lado e de outro. Com cuidado, introduzi a massa na frigideira. Baixei o lume no mínimo, tapei a frigideira e deixei cozinhar bem. Virei com muito carinho e deixei cozinhar do outro lado.

Ao servir polvilhei com mais canela (nunca é demais!) 😍

Paleo Sweet Potato Brownies
.
1/2 of a roasted sweet potato (skin removed)
1/2 cup mixed nut butter (I used one I grabbed at Trader Joe’s that is next level but I’m sure you can sub any nut butter here)
1 egg
1/4 cup coconut sugar
1/4 cup maple syrup
1/2 teaspoon baking soda
1 teaspoon vanilla
1/4 cup cocoa powder
.
Combine all ingredients in food processor and mix till smooth. Pour into a greased loaf pan and bake at 350 for 23-25 minutes. You can add chocolate chips or walnuts if you like but they are amazingly satisfying as is. I topped mine with a handful of #enjoylife chocolate pieces.

Then I took my mum to Church to see a baby beeing Christened. The family wore our local custumes.
So now I will relax the rest of the day and sit a while in my new massage chair 😍 with my candy and kombucha.

This is one of my favourite paleo sweets.  I started making this years ago, but couldn't stomach it whilst I was pregnant. 
This beautiful weather and my craving for sweets reminded me of this baked coconut milk custard.  It's easy to make and tastes amazing. 
1 tin of coconut milk
3 eggs
1/2 cup almond meal
2tbsp maple syrup (the real stuff)
Dust with cinnamon
Bake until it sets.  I did it at 200c for 30 minutes. 
I served it with a drizzle of maple some baked coconut chips and rose petals.

Chewy Paleo Chocolate Chip Blondies by @paleorunningmomma are always a good idea. When I want dessert lately, this is what ends up happening (I opted for more of a chocolate puddle than a drizzle - I meant to do that 😁). They inevitably get whipped up well into the evening which means I come out in the morning to  the remaining bars and ask myself... can this be breakfast?

Pro tip: If you SLIGHTLY burn the marshmallows while you’re waiting for the temperature to get to 240, because you’re impatient and turning up the heat can’t hurt THAT much... you can still call it “Toasted Marshmallow” flavored marshmallows and it’s honestly rockin’. Paleo marshmallows with maple syrup, gelatin, water, vanilla, salt, ghee, and arrowroot powder.

Moving away from politics and back to the other side of the universe with food! Today I made the ultimate blueberry paleo (mostly AIP compliant) frosting. Yep, frosting!!! I have tried so many paleo frostings and they have been slightly disappointing. Not this one. I mixed Kite Hill almond milk cream cheese, Coyo coconut yogurt, powdered Pure monk fruit sweetener, and organic frozen blueberries in the food processor. Mouthwatering, creamy, and pretty purple power! You can also use cocoa powder, vanilla, or add maple sugar for different flavors. It’s a Paleo, egg free Chocolate Cake made with zero refined sugar and yummy ingredients like cashew butter, pumpkin, banana, and @ottos_cassava_flour ❤️ I filled it with a Paleo Vegan Banana Pastry cream, and frosted it with Goat’s Milk Butter Buttercream! 😮😋 This was a first for me and it was really good. Paleo Banana Split:  My new favorite HEALTHY go-to when I have a sweet tooth snack attack 🍌🍓 Scroll through the pictures to see the process from beginning to end.

Prepare ahead of time by putting a banana and a can of organic full fat coconut milk in the fridge for at least an hour.

1. Into a bowl, slice 1/2 banana and about 6 strawberries.

2. In a Ninja blender cup, or with a fork, whip up equal amounts of the solid and liquid parts of the coconut milk. Consistency should be thick and pourable. Sweetened with honey, Truvia, or your choice of sweeteners. Pour on top of the strawberries and bananas. 
3. Sprinkle with chopped walnuts. 
4. In a microwave at 50%, heat 2 TBSP organic chocolate chips a few seconds at a time STIRRING EACH TIME until melted. 
Set aside. Heat 2 tablespoons of almond milk or your milk of choice in a separate container. Mix together the melted chips and milk to create chocolate sauce. Pour on top!

1 large Tbs of almond butter 
1 tbs of cocoa
3/4 desiccated coconut

1/2 cup of dates 
Pinch of salt 
1 tsp of cocoa butter (optional) 
Whizz up in the blender until well chopped and bake to stick together when pressed and Roll into balls and dredge in more dessicated coconut and refrigerate until stiffened.

Od rana serwuję wegańskie serniczki z sokiem z limonki i matchą, są chętni? Mi zostały już tylko dwa ale śmiało możecie zrobić je sobie sami 😜
Składniki:
✔️1/2 litra mleka kokosowego (płynnego)
✔️sok wyciśnięty z 3 limonek
✔️1,5 łyżeczki agaru
✔️3-4 łyżki syropu klonowego
✔️2 łyżeczki matchy
Agar rozpuszczamy w podgrzanym soku z limonki. Dodajemy do tego mleko, matchę i syrop, dobrze mieszamy, czekamy aż się zagotuje. Po osiągnięciu temperatury wrzenia wlewamy do naczyń i czekamy aż deserki stężeją.
Jeśli macie ochotę również na kruszonkę, nic prostrzego - blendujemy garść namoczonych wcześniej daktyli, garść migdałów i orzechów włoskich i gotowe!
Deserki będą gotowe już po niecałej godzinie.

Diese Woche gibt es leckeren Marmor Gugelhupf mit Chiasamen. Der Kuchen ist mit dem Fruchtfleisch eines Apfels gesüßt und macht ihn somit sogar keto-freundlich. 
Zum Backen habe ich statt Kokosöl das Mandelöl der @oelmuehlesolling verwendet.
Ich bin gespannt wie er euch schmeckt.

Gelado de Cheesecake de Morango 🍓

Ingredientes:
200g de natas frescas
100g de queijo quark
50g de nozes e cajus
20g de manteiga derretida 
20g de farinha de aveia 
2 colheres de sopa de açúcar mascavado
Gotas de limão
6 morangos
1 colher de sopa de Água

Preparação base:
Colocar os frutos secos num saco e passar o rolo da massa por cima de forma  a ficarem picadinhos. Depois é só juntar a aveia e a manteiga. Misturar bem e espalhar sobre a base da forma (usei tacinhas)

Preparação recheio:
Bater as natas com umas gotas de limao e 1 colher de açúcar até  ficarem em castelo, juntar o queijo e bater novamente com uma vara de arames de forma a envolver  toda a mistura.
De seguida colocar o preparado sobre a base e colocar no congelador.

Preparação cobertura:
Cortar os morangos e triturar com a varinha mágica. Adicionar gotas de limão.
Numa frigideira pequena colocar os morangos triturados, 1 colher de açúcar e 1 colher de água e mecher até  ponto estrada.
Esperar arrefecer e colocar sobre o recheio. E voltar a pôr no congelador  2h.

Oatmeal cookies get a bad wrap. 
Which is a shame because cinnamon is one of my favorite flavors.👌👌 I don't often have raisins because they are naturally sweet and thus tend to carry with them more natural sugars. Unfortunately that also means more carbs.🙈🙈 I was feeling nostalgic for an oatmeal raisin cookie. So this N'Oatmeal Cookie was born. 
They contain no oats, and are completely Paleo. 😊😊😊 They are packed with raisins, red walnuts and a healthy dose of cinnamon.

Oatmeal cookies get a bad wrap. Which is a shame because cinnamon is one of my favorite flavors.👌👌 I don't often have raisins because they are naturally sweet and thus tend to carry with them more natural sugars. Florentines para a Páscoa, sem refinados!
1. Pré-aquecer o forno a 180°C.
2. Dissolver 2 colheres de açúcar de côco em uma clara de ovo de L e envolver tudo em 1 chávena e meia de amêndoa laminada.
3. Dispor pequenas colheradas do preparado sobre papel vegetal e levar ao forno até doirarem. 
4. Enquanto as bolachas arrefecem, derreter uma tablete de chocolate negro 70% para cobrir as bases das bolachas. Barrar com a ajuda de uma colher e deixar solidificar com as bases viradas para cima. 
7. Quando estiverem firmes, virar e salpicar com um pouco mais de chocolate por cima.

Suflê  de Maçã  e Canela🍎

Para 8 pessoas:
Ingredientes:
✔8 maçãs  rainetas
✔5 claras (divididas em 2 recipientes, um com 2 e outro com 3)
✔2 gema
✔Canela
✔ 1 Colher de chá  de Mel
✔2 colheres de sopa de leite de amêndoas 
Preparação: 
Pré  aquecer o forno a 200°
Primeiro colocar  6 maças descascadas e aos pedaços a frever, uma colher de mel, o leite de amendoas e um pouco de canela. Esperar que arrefeça e triturar tudo. Juntar as 2 claras separadas previamente e as 2 gemas e bater com varas.
Bater as 3 gemas até ficarem em castelo ( uns graozinhos de sal ajudam as claras a ficarem durinhas)

Num recipiente triturar 2 maçãs cruas, previamente descascadas e cortadas aos pedaços. 
Ficamos então com 1 taça  com preparado de maçã  cozida, 1 taça  com preparado de maçã  crua e 1 taça com as claras.
Em 8 formas misturar envolvendo um pouco de cada taça de forma a ficar uma mistura bastante heterogênea. Colocar na parte de baixo do forno durante 10min para cozinhar e mudar para a parte cima para tostar.
Ao servir polvilhar com canela.

Rebuçados de Mel para Dores de Garganta🤧🌿 Ingredientes:
✔4 colheres de sopa de mel
✔2 colheres de sopa de gengibre em pó
✔2 colheres de sopa de canela
✔1 limão
✔3 folhas de hortelã

Preparação:
Numa panela em lume baixo, colocar o mel o gengibre e a canela. Quando começar a ferver juntar o sumo de um limão e as folhas de hortelã  picadinhas. Mecher bem.
Quando estiver em ponto estrada está  pronto!

Colocar gotas do preparado sobre uma folha de papel vegetal e esperar arrefecer.
Quando arrefecido, para não colarem, deve-se envolver os rebuçados  em quadradinhos de papel vegetal.

Separar as gemas das claras e bater as claras em castelo (uma pedrinha de sal ajuda as claras a ficarem  durinhas).
Derreter o chocolate com o oleo de côco  no microondas. Bater as gemas e juntar o chocolate  e a farinha.
Por fim envolver o preparado com as claras em castelo.
Colocar numa forma e ir 5/10mim ao forno.

Caso  ache muito amargo pode juntar um pouco de mel, ou simplesmente  decorar mo fim com mel.

Tacinhas de Chocolate Negro e Caju 🍫

Ingredientes:
✔1 Tablete de chocolate negro 80%
✔4 colheres de sopa leite de amêndoas
✔1 colher chá  de óleo  de côco
✔80g de cajus partidos
✔1 colher de sopa de manteiga ou ghee
✔1 colher de chá  de açúcar  mascavado

Preparação:
Derreter em banho maria ou no microondas  a tablete de chocolate com o oleo de côco  e 2 colheres de sopa de leite de amêndoas e mexer com a vara de arames.
Colocar  uma colher de chá de chocolate em forminhas, alisar e colocar  no congelador .
Numa frigideira colocar a manteiga, o açúcar , os cajus partidos e as duas colheres de leite de amêndoas. Deixar  cozinhar até  ficar em ponto caramelo.
Retirar as formas do congelador e colocar 1 colher de sopa do preparado de cajus, deixar arrefecer e colocar 1 colher do preparado de chocolate por cima  e colocar novamente no congelador pelo menos 15-20 min.

Ao invés  dos cajus pode usar amêndoas ou avelãs  assim como poderá  substituir o leite vegetal de amêndoa por leite de caju ou de avelã. Ao usar avelãs e leite se avelã  assemelha-se muito a tacinhas de nutela 😜
