“This was originally going to be a burger and normal potato fries, but...I guess I never really was good at sticking to plans. 🤔 Instead, smoky tempeh sandwich with basil edamame hummus and polenta fries. I also made sure to load this sandwich up. Outside of the edamame hummus, there is also tomato, avocado and arugula along with the tempeh. All smushed between two slices of Ezekiel bread. Instead of buying edamame hummus at the store I opted for making my own. No wrong choice to opt between, but making my own allowed me to use up some ingredients that are sitting in my fridge. 😁
Tempeh: 1 block of tempeh sliced into 6 thin square slabs, 1 tbsp soy sauce, 1 tsp garlic powder, 1 tsp smoked paprika, 1 tsp cumin, 1 tsp dry basil, 2 tbsp water, 2 tsp maple syrup. Place tempeh in a Tupperware container. Whisk together remaining ingredients in a bowl and pour over tempeh. Seal Tupperware and shake container gently to help evenly marinade. Place tempeh in air frier for 8 minutes at 370 OR place on lined baking sheet to place in the oven at 400F for 10-12 minutes. Set tempeh aside to cool once fully cooked. 🥪
Basil Edamame Hummus: 1 -12oz package of frozen edamame that has been thawed, 3 tbsp tahini, Juice of 1 lemon, 6 leaves of fresh basil, 1/4 tsp salt (or more for taste), 1 tsp cumin, and 2 tsp garlic powder. Place all ingredients in food processor and pulse together to combine. Stop processing and scrap down sides, then process on high to fully blend and make smooth. 🥣
Polenta Fries: Took a tube of polenta and cut it into fry sticks. I seasoned with garlic powder and salt then placed in air fryer for 15 mins at 370 to crisp up the outside. Insanely good with ketchup. 😋

Whew, today was FULL of 🏠chores. We don't know about ya'll, but when you've spent all day cleaning, doing laundry, and working out in the yard, the last thing thing on our mind is a fancy meal

Super simple. Super yummy. Super quick

Here we have: 🍗 Chicken wings roasted with tallow (beef fat), sea salt + a squeeze of lemon 🍋, 🍠 Sweet potato fries roasted in coconut oil + sea salt, and 💚 frozen asparagus panfried in tallow. Mmm mmm 😍
Spinach bowl topped with baked salmon cooked with olive oil + @primalpalate seafood seasoning, roasted broccoli, roasted cauliflower, red cabbage and micro-greens 👏🏼 Topped it all off with tahini of course 😝 Hope you are all having a great weekend!
🍫PALEO SWEET POTATO BROWNIE 🍠 INGREDIENTS
1 large sweet potato roasted and mashed, about 1-1/2 cups
1/3 cup coconut oil melted and cooled
1/3 cup pure maple syrup
2 teaspoons pure vanilla extract
5 tablespoons raw cacao powder or unsweetened cocoa powder
3 tablespoons coconut flour
1/2 teaspoon baking powder
1/4 teaspoon sea salt
2/3 cup dark chocolate chips.
Wash and pat dry the sweet potato. Poke it several times with a fork, wrap it in foil, and roast at 400 degrees F for 60 to 70 minutes, or until very soft.
Preheat the oven to 350 degrees F and lightly oil an 8" x 8" baking dish. Line the baking dish with parchment paper.
Add all ingredients for the brownies except for the chocolate chips to a blender or food processor. Blend until completely smooth. Stir in the chocolate chips
Transfer the brownie batter to the prepared baking dish. Bake on the center rack of the oven 30 to 35 minutes, or until the center is set up. Turn off the oven and allow brownies to sit another 5 minutes in the warm oven.
Remove brownies from the oven and sprinkle with coarse sea. Allow brownies to cool at least 30 minutes. Pull on the sides of the parchment paper to release the brownies from the baking dish and transfer to a cutting board.
