This classic glo bar by @ohsheglows is lookin' yummmmmy. Homemade granola bars have been one of my favourite things to make since my love for being in the kitchen arose. You literally can throw together a bunch of delicious, nutritious items, make them stick together and voila! The perfect hiking snack. 🌿

The recipe is vegan, however I did swap the tofu for some chicken as I’m allergic to soy. 🙅🏼♀️

Here’s what’s in this bowl:
✅ Chopped romaine ✅ Chopped cucumber 🥒 ✅ Sliced grape tomatoes 🍅 ✅ Sliced carrot 🥕 ✅ Chopped red pepper ✅ Chicken (with honey-djon dressing)
✅ Pumpkin seeds
✅ Hemp seeds .
✅ Drizzled with Tahini-Lemon Dressing (Tahini, garlic, lemon juice, nutritional yeast, avo oil, sea salt + pepper) 👌🏻

This. Crazy to remember the chaos of life with 3 kids under 3 when I started my business a little over 5 years ago. I started because I wanted to build something of my own and regain a sense of self and life apart from momming. And now, it’s come full circle. My girls are watching and following me. 10+ hours of yoga later and I’m finally sharing my lunch from earlier today! 😅 A giant bed of greens with pasta topped with Parmesan, pepitas, roasted carrots, tomatoes, corn, kukes and a side of chocolate, an almond butter @perfectbar and mini tub of cashews + dried cranberries that I brought with me to the studio today!
A common mistake people make when they work out more is that they tend to eat LESS.. or rather they think they should be eating less... which is just not the case! If you start moving your body more, you will likely have a bigger appetite and that is totally normal 👍🏽
Favorite comfort food: baked fries with a “cheesy” sauce in lettuce cups. Delicious recipe adapted from @ohsheglows - I just blended gold potatoes, carrot, cashews, onion, garlic, pink salt, and a dash of cayenne and turmeric. This tastes so cheesy and delicious. And it’s perfect for Manny who just loves dipping everything!
Matt & I are heading up the peninsula this weekend to celebrate his birthday and get away from everyone and everything - no phone, no internet, just the two of us in an off-grid cottage surrounded by lots of hike-able trails!
I'm prepping some snacks to freeze and take with us and these plantbased ginger molasses cookies have won my heart 🌿🤤
this @ohsheglows naughty & nice vegan enchilada casserole has been on rotation in our house for over three years. it’s the perfect make-ahead, easy ingredient vegan recipe. we used our fav store bought enchilada sauce + and added a can of drained lentils to stretch the casserole even further. used @eatbanza cavatappi pasta, too. this casserole is so rich in protein + veggies 🙌🏻 best part? i made this at 9:30 this morning and baked it off tonight after i was able to hang with the kids and not cook after school. best ever! hope you all have a great night! #bbwellness

It re-heats perfectly and you can pair it with chips, avocado, corn tortillas- or lollipops (that last one I totally just made up) but it pairs with a lot of stuff well. 😂

For the filling:⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
3/4 cup raw cashew butter⠀⠀⠀⠀⠀⠀
1/2 cup pure maple syrup, room temperature⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup virgin coconut oil, melted⠀⠀⠀⠀
6 tablespoons almond milk, room temperature⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 to 1 1/2 teaspoons pure peppermint extract, or to taste⠀⠀⠀⠀⠀⠀⠀⠀
1 cup packed baby spinach⠀⠀⠀⠀⠀⠀
Pinch fine sea salt⠀⠀⠀⠀⠀⠀⠀⠀
For the chocolate ganache:⠀⠀⠀⠀⠀⠀
1/2 cup non-dairy chocolate chips⠀⠀⠀
2 tablespoons full-fat coconut cream⠀⠀
Dash fine sea salt⠀⠀⠀⠀⠀⠀⠀
1 1/2 tablespoons raw cacao nibs⠀⠀⠀⠀⠀
Fresh mint leaves, for garnish (optional)
Line a 4x8 inch loaf pan with plastic wrap. This will make it easier to remove the slab after freezing. ⠀⠀
Blend all filling ingredients in a high speed blender. Pour into prepared pan and freeze until solid. ⠀⠀⠀
When frozen solid, prepare the ganache. In a medium saucepan, melt the chocolate chips, coconut cream + salt on low heat.
Remove the filling from the freezer. After placing it upside down on a plate + removing the plastic wrap, pour the ganache over top. Sprinkle with cacao nibs + serve. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
