This is our last post following #MaltsJourney. The final part of the journey is full of twisting rootlets and turning augers!
.
During our final stage, we transfer the malt into our deculmer and screen cleaner to remove the culms (dried rootlets), thin kernels and anything else that might have snuck through along the journey. Then it is packaged into 50 lb sacks or 2000 lb totes.
.
The end of our barley's journey from farm through the malthouse marks the beginning of another life. Our fresh malt will be delivered, full of flavor, aroma, and (soon to be) fermentable sugars to brewers and distillers. They will work their artistry with malt, water, yeast, and sometimes hops, wood and fruit, to create a wide spectrum of delicious beers and spirits.

Malt’s journey then comes full circle for us at The Rake, where we get to enjoy and share the beer that began with barley growing in our farmers’ fields. .

As we approach the end of #MaltsJourney, we load the kiln. 🔥🔥

At this point, our desired level of modification has been achieved. Now we have to take a snapshot 📷 of this moment, when starch, enzymes and protein are at prime levels for brewing and distilling. During kilning, the malt is dried and preserved using hot air that is blown up through the bed of malt.
.
The hot air used in kilning reacts with the malt, causing Maillard reactions that give malt (and beer) its color and characteristic biscuity, toasty, and mildly sweet flavor. The time, temperature, and moisture content of the malt during kilning are adjusted to create our spectrum of malt offerings, from straw colored Admiral Pils to the rich mahogany Kilned Caramel 35.

To load the kiln, we do some heavy pushing, plow in hand, through the vast sea of malt and move the grain to the pit, located between our germination floors.

Two conveyors do the heavy lifting and carry the grain to our jet-slinger, a.k.a. the malt-thrower. The malt thrower also has rotating rubber paddles and a belt that launches grain and spreads it throughout the kiln.

After leveling the grain inside the kiln, we close the door, fire up the fan and heat exchanger, and let the hot air do its work for 24 hours. On some lucky days, we get courtside seats to watch the whole process! .

Producing malt takes time, water and a lot of careful control of both. The objective of steeping is raising the moisture content of the grain to between 42-45% of the total grain mass. Dry grain has 10% moisture content and different barley varieties absorb moisture at different rates. Steeping will take around 48 hours, with three wet cycles, where we soak the grain with water, and three dry cycles, where we extract the carbon dioxide that the living grain releases. We are basically watering a plant to the point were it starts to sprout, which we call chitting.

All malt starts off as grain. Our grain of choice is two-row barley for its lower protein content and more fermentable sugars. There are hundreds (if not thousands) of two-row varieties. We malt one farmer, one field at a time.  We never mix barley varieties, farms or harvests. We have malted barley from Copeland, Metcalfe and an exclusive experimental variety from UC Davis. 
We have partnered with family farms in the Sacramento Valley to grow top-quality, sustainably grown barley. The green barley stalks are young barley plants, maturing into the golden fields of barley ready for harvest. Hill-side harvesting is no easy feat. Once it captures California's terroir, the grain gets delivered to our malthouse.
