It’s the little things, right? Those small victories that can just make your day. Yesterday, for me, it was finally finding some dried mango slices WITHOUT any added sugar 🙌🏻! I was so excited! I love dried mango, but not all the extra sugar added by most brands. Most brands without added sugar are not available in Canada or only available online in portions so small that I could eat them in one sitting. But, yesterday after dropping my daughter off at her art class, I popped into a local health food store and discovered that they dry their own mango, do not add any sugar, and package it up for sale (much more reasonable than most other places as well!). So, this morning for breakfast I enjoyed some delicious dried mango slices with my granola. Like I said, it’s the little things 😋...

Finallllyyy the🌞 is out and the nice weather is here. One of my fave summer treats is banana “nice” cream. It’s so refreshing, so sweet from natural sugars and easy to make! I like making chocolate pb nice cream but the flavour options are endless! Have you guys tried making it before? If not here’s my basic recipe👉 take one ripe frozen banana + 2-3 tbsp of water or milk (I like coconut milk) + tsp of vanilla + any additional flavours (1 tbsp pb, 1 tbsp cacao powder, 1/2 cup berries etc) and blend in a high powered blender until smooth and creamy. I had a really terrible stomach ache yesterday, especially into the evening. These used to happen to me all the time, and I feel fortunate that changing my diet has helped them occur less frequently. Nonetheless, when the belly acts up, I make sure I slow down, take it easy, and be extra cautious as to what I eat. This morning savory just didn’t sound right, so a simple waffle packed with whole grains, healthy fats, and bananas (which always sound good when my stomach is upset!) was in order. 🍌🍌

Waffles: 1/2 cup buckwheat flour + 1/4 cup almond flour + 1 scoop Vital Protein Collagen Peptides + 1/4 tsp baking powder + 1/4 tsp salt + cinnamon to taste + 1/2 mashed banana + 1 egg + 1/2 tsp vanilla extract + 2 tbl melted coco oil + 3/4 cup unsweetened almond milk ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Makes 2 waffles in a waffle iron. Use coconut oil spray in the iron, and cook on the medium (ish) setting until lightly browned. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
