The “What the Health” documentary gave eggs such a bad rep in 2017; thereby, leaving me on the fence about eating them anymore. However, while surfing a popular vegan page they likened eggs to a females period. I was devastated and disgusted as I read it because in my head It actually made sense. So now I can no longer eat them in plain egg form. I’m not giving up baked goods with eggs completely. Remember I’m vegan-ish! Fegg Recipe- (faux eggs)
1 cup chickpea flour
1 cup minus 3T of water
3T aquafaba (if you want them fluffy)
1/4 tsp ground black pepper
1/4 tsp sea salt
1. Combine all chickpea flour dough ingredients together in a bowl, stir until there are no lumps, and set aside.
2. Pour the chickpea flour mixture into the pan and allow to sit for 2-3 minutes, like you would a regular scramble or omelet until the edges begin to dry out.
3. Scramble the mixture, scraping the bottom of the pan and allow it to sit, undisturbed for another 2 minutes before scrambling again.Continue the process until the dough begins to dry out, 4-5 minutes in total.

My most favorite place for jumah (Friday prayer) in Houston is the Islam in Spanish Mosque! The khutba (sermon) is given in Spanish, and then translated into English. Today's topic was on calamity.. On true calamities versus perceived difficulty. It was a reminder that everything happens by the permission of Allah. And though we may face difficulty, these trials might be better for us if they bring us closer to Him. Though these are rocky times, perhaps these will also be times when people will get to *really* know us, our faith, our culture. It was a powerful message, perhaps moreso because the room was full of mostly Latino Muslims. (Ie, Voldemort's worst nightmare!) P.S. Sophisticated and very dim.
They serve breakfast, brunch, lunch, dinner, and huge cafe the next door with house baked goods. I'd love to go here again.
