Monday’s mess. I sometimes feel the pressure to reserve these messy images for my stories where they are gone after 24 hours and the pretty, put together images are fit for the permanent feed. But the messiness is a huge part of the process...the pretty part comes only at the very end of a whole lot of work and even some trial and error. Isn’t that a lot like life? I’m choosing to embrace it...will you?
Moments in which you feel most alive are moments of great adventure. 🌄
So, when do YOU feel most alive? I learned this last weekend while unplugging that many of the moments I feel most alive is when I can get on a plane and go just about anywhere. It doesn’t matter how far or with whom. Let’s. Just. Go. I just need to be traveling more. I’m not sure what that looks like, but I know it’s something I want to begin to make happen to the best of my ability. •
So let me ask you this....what do you need to be doing more of to make you come alive and embrace this great and epic adventure Christ is calling us on. It doesn’t have to be huge, but there must be something down in your heart. ❤️ •

MONDAY MESS 📆
Ready for a new week 💪🏼. Let’s start as it is still weekend bro; pizza time 🍕
1 cauliflower pizza base (not available? choose refrigerated pizza dough)
4 ounce can jackfruit (in brine or water)
3/4 cup barbecue sauce, divided
3/4 cup shredded vegan cheese (I used follow your heart mozzarella shreds)
1/4 small red onion, thinly sliced
2 tablespoons chopped fresh cilantro
Vegan ranch •
Vegan Ranch 🥣
1/2 cup vegan mayo, I used the brand “follow your heart”
1/4 cup unsweetened soy milk
2 tbsp finely chopped cilantro
1/4 tsp ground pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tbsp apple cider vinegar
Bake that pizza ⬇️
If using refrigerated store-bought dough allow the dough to come to room temperature on the counter for 10 minutes. Mean while open the can of jackfruit and rinse under fresh water. Grab each jackfruit pod and remove the tough core and seed. Shred the jackfruit with your hands or using a fork. Add the shredded jackfruit to a large pan over medium heat along with 1/2 cup bbq sauce. Mix and sauté for 10 minutes. Cut a piece of parchment to fit your cookie sheet or pizza stone onto your counter. Get the Cauliflower pizza base, or if you use dough, press and stretch the into a large circle. Spread the remaining barbecue sauce, then scatter the bbq jackfruit mixture, sprinkle the vegan mozzarella cheese shreds, then top with the thinly sliced red onion. Transfer the parchment with pizza onto the pizza stone or cookie sheet. Bake for 10 to 12 minutes, until crust is slightly browned. Sprinkle the cilantro on top and a drizzle of vegan ranch before serving.
