I watched an Unnatural Vegan video this morning where she documented what she ate in a day. She had a bowl of vegetable miso soup and the recipe was from a Beyonce Vegan App. I tried getting the recipe but found out that I had to pay $14 a month (I think!) so decided to look elsewhere for another recipe (cheapskate!) Isa Chandra had one called "Chunky Miso Vegetable Soup" so I decided to make that instead. It was yummy! I didn't have some of the vegetables that she called for so I made a few changes. Her recipe called for Kidney beans but with FODMAP I can't really eat them so replaced them with canned lentils and chickpeas (I can eat 1/4 cup of chickpeas in a meal on FODMAP) It was super delicious and satisfying. LOVING IT // Who here is a fan of Miso..?! @misotasty is on our Loving It list because not only is it healthy, being a rich source of B vitamins, vitamin E, K and folic acid, it can also contribute to a healthy gut. AND let’s not forget how versatile this u-‘mmmm’-ami - rich paste is... whilst we love it as a quick and simple drink, it can be dressed up with noodles and veg to make a speedy dinner, whip tastebuds into a frenzy when paired with aubergine to produce nasu dengaku (who’s tried this..?) and is the unexpected hero in things like chocolate brownies (don’t believe us? Add a bit the next time you do a spot of baking. It’ll change your life!) @gourmetglow swears by roasties coated in some of the paste (and she knows what she’s talking about...) and we love it in stir-fries. If miso were a person, they’d be the type who got along with everyone.
One thing we’ve not tried yet, however is miso ice cream. Have you..?!
