In Japan this was by far our fav dish!! You need to know about this!! It is MISO TSUKEMEN (DIPPING NOODLES). Tsukemen are Japanese dipping noodles - here tan tan noodles (the thick ones). The main difference from the traditional ramen preparation is that, with tsukemen, the broth and noodles are served in separate bowls. To eat, just grab some noodles with your chopsticks, dip in the broth and slurp away! Tsukemen broth is usually much stronger and more concentrated than typical noodle soups.

Simple pleasures is Creamy Miso Cauliflower & Brussel Sprout Gratin with melted mozzarella & toasted sesame seeds. This is ideal if you have some leftover veg. Nothing extraordinary about this recipe except that it's perfect, easy & nearly impossible to mess up!

“Pan Fried Chicken Breast with Broccoli Purée, Edamame Beans, Portobello Mushrooms, Garlic Chips and Sweet and Sour Chicken Joux”
• Chicken breast was marinated in miso paste, soy sauce, ginger and brown sugar over night. To pan fry it I did it at a medium to low-medium heat in order not to over burn the sugar and the miso paste.
• Portobello mushrooms were simply pan fried with some salt.
• For broccoli purée, I part boiled some broccoli in salted water for around 3 min. no more (in order to maintain the vibrant green color), then using a túrmix i mixed with some cooking liquid and an extra virgin olive oil • Garlic chips were fried in some olive oil starting from cold and gradually heating it up.
• Edamame beans I simple boiled in a salt water following the package instructions
• For the sauce I reduced the chicken broth till the half point. At this point I have added what remained from the chicken marinade and a bit more soy sauce and sugar, and left it on the stove until a glaze
Eggplant Miso: hot right off the pan and covered with our secret sweet miso sauce and sesame.
We're not judging, but we've had several customers lick the plate clean after finishing the eggplant. It's that good, and at just 40,000 VND maybe you should order two plates!

Try this chicken asian style. See our recipe below.
1/2 cup (110g) yellow miso paste
2 cloves garlic, crushed
1 tbsp Chang’s Sesame Oil
800g skinless chicken thigh fillets, cut into 4cm wide strips
1/4 cup vegetable oil
3/4 cup self- raising flour
3/4 cup cornflour
2 tbsp sesame seeds
Fresh and Crunchy Noodle Salad:
1 bunch mint, leaves picked
1 bunch coriander, leaves picked
2 green onions, thinly sliced
2 packets Chang’s Crunchy Noodles
1/2 cup Chang’s Oriental Salad Dressing
Place miso paste, garlic and sesame oil in a large bowl and mix well to combine. Add chicken and toss to combine. Cover and set aside for 20 minutes.
Add vegetable oil to large frying pan and heat over medium-high heat until hot. Place flours in a large bowl and whisk to combine. Place the marinated chicken into the flour mixture and toss to coat.
Cook the chicken, in batches, for 2-3 minutes or until golden and cooked through. Drain on paper towel.
Sprinkle with sesame seeds and serve immediately with the fresh and crunchy noodle salad.

Miso is traditional fermented seasoning in Japan.
However, it is usual using soybeans, we used redbeans.
