Silverbeet or Swiss chard is in season right now. The leaves are fresh, big and full of flavour. 
I had some rice filling left over from the cabbage rolls I made the other night (see previous post). So for tonight’s dinner, 
I couldn’t go past making these stuffed silverbeet rolls.

To prepare the silverbeet:
1. Blanch the leaves in boiling water for 1 min.
2. Pat dry and set aside.
3. Cut the hard vein at the bottom of the leaf. 
4. Add the filling at the bottom of the leaf. 
5. Fold the edges in and roll up.

This is a delicious low FODMAP option for meat free Monday #tryfor5 
I double the filling recipe and use it to stuff other vegetables such as capsicum, zucchini or eggplant for later on in the week.

Simple tonight. 12 Waffles, 4 Vegan Sausages, 1 cup oatmeal and peanut butter, around 2800 calories. I fast daily for a number of reasons. Probably number 1 is because I’m fat and love to eat till I’m full and still want to stay lean. I think it’s working in my favor.

I've been making them the star of the show and using meat/chicken/fish as a side dish. So filling and full of important vitamins and nutrients.

One of my fave recipes -> Preheat oven to 400 °, in a large bowl combine chopped zucchini, red onion, portobello mushrooms, eggplant, Olive oil, salt, pepper and Herb de Provence. Mix well and spread out in a single even layer on a large sheet pan. Roast in oven for about 30 min (flip halfway thru). Enjoy!

Here at the Meatless Mondayzz Inc. HQ Kitchen, one of our Executive Content Creators @emsincerbox, is whipping up some sweet potato hummus!!! Super easy recipe below 👀 . 
1) Roast one sweet potato in the oven 2) drain and rinse chickpeas 3) blend together in blender or food processor 4) add garlic salt, salt, and pepper to taste! (If blending is too difficult, add some boiling water to make it easier to blend up!)

Super easy recipe below 👀 . 1) Roast one sweet potato in the oven 2) drain and rinse chickpeas 3) blend together in blender or food processor 4) add garlic salt, salt, and pepper to taste! (If blending is too difficult, add some boiling water to make it easier to blend up!)
I know some people hate #salad, but this is delicious! My dinner tonight: Kale salad with sauteed cauliflower rice w/mushrooms & grape tomatoes, tofu, cucumbers, avocado, and kimchi that I added on after I took the photo. Yum! 😋

I make tofu one way and one way only - and you are looking at it. This is hands down the BEST way to eat tofu. No weird squishy texture here. If you’re on the tofu fence, try it this way. My non-veg fiancé eats it AND likes it, so this is legit. .

Tofu Recipe below—> Squeeze liquid out of extra form tofu - nothing fancy, just squeeze it for a min or so in various places to get liquid out. 
Cut tofu into small rectangles, pretty darn thin, almost as thin as you can cut them - approx 1 inch long, 1/4 inch wide. Mix together 3 tbsp soy sauce, 1 tbsp olive oil and 1 tbsp maple syrup or agave. Place tofu pieces into a container with a lid and pour the marinade on top. Place in the fridge and flip every 5 or 10 mins for atleast 20 mins. A little longer for more flavor and have time, but for the love of saltiness do NOT marinade overnight. Place marinaded tofu on baking sheet with foil. Bake at 400 for 12 mins. Flip the tofu and continue baking for another 12-15 mins. Tofu should be browned and not very squishy in the middle. ENJOY THAT DANG TOFU!

I just re-created chicken salad. Some people call it mock-tuna salad, but I’ve never liked tuna my whole life so I don’t really know what that tastes like. This is made from mashed chickpeas!

To get the “chicken” flavor, I added spices and seasonings I would normally have had on my chicken like paprika, garlic, onion powder, dash of cayenne & some yellow curry powder.

Everything else I did exactly like I used to! Diced celery, pickle relish (I dice my own bread and butter pickles), vegan mayonnaise, lemon juice, salt & pepper aaaaand VOILA!

I obvs added greens and tomato 🤤

I must say this hits me hard and I’ve been vegetarian almost my whole life, I’ve had more vegans around me more so I am leaning that way but for now trying to do locally organically sourced dairy...
