Silverbeet or Swiss chard is in season right now. The leaves are fresh, big and full of flavour.
I had some rice filling left over from the cabbage rolls I made the other night (see previous post). So for tonight’s dinner,
I couldn’t go past making these stuffed silverbeet rolls.
To prepare the silverbeet:
1. Blanch the leaves in boiling water for 1 min.
2. Pat dry and set aside.
3. Cut the hard vein at the bottom of the leaf.
4. Add the filling at the bottom of the leaf.
5. Fold the edges in and roll up.
This is a delicious low FODMAP option for meat free Monday #tryfor5
I double the filling recipe and use it to stuff other vegetables such as capsicum, zucchini or eggplant for later on in the week.

Y’all I have a NEW Favorite place in Atlanta, or new to me @thespindleatl. This place the has the coooolest little café with rotating pop ups weekly. Meaning it’s a different Menu, different Chef every week! I have been 2 weeks in a ROW now 🙊•
This week I got to eat food that Wilson made, formerly of another place I frequent a lot. I am happy to see him cooking some goods this week @thespindleatl and using Sour Dough Bread from @sedodge 🤤 to make this insanely delicious Mushroom Toast. Washed it all down with my Plum Thyme “Shrub” Drink 😋
Simple tonight. 12 Waffles, 4 Vegan Sausages, 1 cup oatmeal and peanut butter, around 2800 calories. I fast daily for a number of reasons. Probably number 1 is because I’m fat and love to eat till I’m full and still want to stay lean. I think it’s working in my favor.
Roasted Veggies are a game changer for dinner time lately.
I've been making them the star of the show and using meat/chicken/fish as a side dish. So filling and full of important vitamins and nutrients.
One of my fave recipes -> Preheat oven to 400 °, in a large bowl combine chopped zucchini, red onion, portobello mushrooms, eggplant, Olive oil, salt, pepper and Herb de Provence. Mix well and spread out in a single even layer on a large sheet pan. Roast in oven for about 30 min (flip halfway thru). Enjoy!

1) Roast one sweet potato in the oven 2) drain and rinse chickpeas 3) blend together in blender or food processor 4) add garlic salt, salt, and pepper to taste! (If blending is too difficult, add some boiling water to make it easier to blend up!)

there was no cooking happening in my kitchen tonight- we were all about the peanut butter & jelly smoothie bowls! made with banana 🍌, wild blueberries, strawberries, @philosophielove berry bliss, coconut 🥥 milk, pure vanilla and a pinch of pink salt. and, topped with @woodstockfoods peanut 🥜 butter! one of my favorite hot weather, easy dinners ☀️ the texture of this got almost airy like a cloud- it was smoothie bowl perfection 💯 have a great night, guys! about to pour up some booch and hang with my main squeeze for a bit 💜 #bbwellness
I make tofu one way and one way only - and you are looking at it. This is hands down the BEST way to eat tofu. No weird squishy texture here. If you’re on the tofu fence, try it this way. My non-veg fiancé eats it AND likes it, so this is legit. .

Tofu Recipe below—> Squeeze liquid out of extra form tofu - nothing fancy, just squeeze it for a min or so in various places to get liquid out.
Cut tofu into small rectangles, pretty darn thin, almost as thin as you can cut them - approx 1 inch long, 1/4 inch wide. Mix together 3 tbsp soy sauce, 1 tbsp olive oil and 1 tbsp maple syrup or agave. Place tofu pieces into a container with a lid and pour the marinade on top. Place in the fridge and flip every 5 or 10 mins for atleast 20 mins. A little longer for more flavor and have time, but for the love of saltiness do NOT marinade overnight. Place marinaded tofu on baking sheet with foil. Bake at 400 for 12 mins. Flip the tofu and continue baking for another 12-15 mins. Tofu should be browned and not very squishy in the middle. ENJOY THAT DANG TOFU!

SOMEONE CLAP FOR ME OR SOMETHING!! 👏🏼 I’m really impressed with myself. Yet again, I’ve VEGANIZED one of my childhood favorites. Did not think it could be done or that it would be good, but I was wrong! It’s 🔥!!
I just re-created chicken salad. Some people call it mock-tuna salad, but I’ve never liked tuna my whole life so I don’t really know what that tastes like. This is made from mashed chickpeas!
To get the “chicken” flavor, I added spices and seasonings I would normally have had on my chicken like paprika, garlic, onion powder, dash of cayenne & some yellow curry powder.
Everything else I did exactly like I used to! Diced celery, pickle relish (I dice my own bread and butter pickles), vegan mayonnaise, lemon juice, salt & pepper aaaaand VOILA!
I obvs added greens and tomato 🤤
It’s simple and easy! Try it!

African-American slaves were given the leftover & “undesirable” cuts of meat from their "owners" - which has influenced today's styles of cooking. For ex, chitlins are the cleaned & prepared intestines of pigs, slow-cooked and often eaten with vinegar and hot sauce.⠀
The World Health Organization has classified processed meats – including ham, salami, bacon and frankfurts – as a Group 1 carcinogen which means that there is strong evidence that processed meats cause cancer. Tobacco smoking & asbestos are also classified as a Group 1 carcinogen.⠀
According to the American Heart Association, cardiovascular disease (CVD) ranks as the number one killer of African-Americans, claiming the lives of 36% of the more than 290,000 African Americans who die each year.⠀
Today, African-Americans have the most to gain from the health benefits of plant-based food. ⠀
African-Americans experience the highest rates of PREVENTABLE, DIET-related chronic diseases in the USA (more than any other race).⠀
Those who are privileged with a food budget and access to fresh produce should begin eliminating animal products from their food sources and move towards a plant-based diet immediately. ⠀

🥑Yesterday I added avocado to this and it was banginnn🔥. Sometimes I add or take away a little something from the meals just to switch things up a bit or just to satisfy my tastebuds.
🥗Try not to force yourself to “eat healthy”. Make healthier versions of meals you enjoy or buy healthy food that you like so you’re more apt to actually to continue eating that way. Think about creating a healthy lifestyle (long term) not a diet (short term). Just a tip! #preponpoint
what started as an attempt to replicate @elcaminofla ‘s veggie taco (impossible, btw) led to a few extra ingredients. but really, I’m not complaining, this taco was delicious, and a little extra veggies never hurt anyone 😋
