Chicken cooked in the crock pot, sweet potatoes roasted for 30 mins and veggies roasted for 30 mins.
I DO add a sauce of choice every day to my chicken.. and tbh that's as much variety as I need in a day. .

#transformationtuesday: Stepping out of my comfort zone, as that is the best way for me to grow. I get a lot of questions about having loose skin after releasing 140lbs. My answer is always yes, but I have never been brave enough to share more details or even pictures. My arms have always been one of the places on my body that I have been insecure about as I carried a lot of weight in my arms. After releasing the weight, it left me with a lot of loose skin. The thing is, I would rather have loose skin than carry around a extra 140 lbs, and I am still a work in a progress. I am working on arm strength and focusing on lifting to help tighten up some of this loose skin. It’s progress, but I am happy with where I am at and it will just keep getting better.

For sanity reasons I do not count green Fibrous vegetables! My only carbs coming from Chia seed, a few berries & roasted red pepper

I reduce carbs very low, but keep my vegetables high! Insulin resistance is a huge issue! Just having 2 days a week of reducing your carbs can help make your cells sensitive and more efficient in glucose uptake. Often people try to push their carbs higher to get more of a insulin response when in fact getting your cells more sensitive by carb cycling or backloading can be a more optimal method!

My only carbs coming from Chia seed, a few berries & roasted red pepper —— I reduce carbs very low, but keep my vegetables high! Insulin resistance is a huge issue! Just having 2 days a week of reducing your carbs can help make your cells sensitive and more efficient in glucose uptake. 1. Add Chicken thighs skin on to Wide bowl
2. Add 1/4 tsp of turmeric / ginger / cinnamon & few fresh cracks of black pepper then mix allow to infuse for 20mins min
3. Preheat Oven to 180c. Add the chicken thighs, skin up, to a tray. Cook for 20 Mins then turn oven to grill and get the skin slightly crisp 😍 —

A few meal prep tips that may help. Make 1-2 large dishes over the weekend. In my opinion, Crockpot dishes are the way to go. Fairly easy and you can make in bulk. Next, wash and prep your fruits and veggies 🍏🍍🥕🥦 so you can start eating or cooking them immediately when its time to eat. I also like to hard boil eggs and have lots of avocado on hand. .

But what I was doing at the time and where most people fail is by eating the wrong foods or not eating enough. 
I LOVE how simple this program is. I mean who has time to meal prep every day for the rest of their lives to maintain a good body? Not me!! I have kids and want to live 😂 🤗No more spending Sundays meal prepping.

Well keep on reading..... As promised, here is my spin on a healthy mac and cheese

Ingredients: 
3 cups cooked chicken
4 oz high protein noodles (chickpeas, see pervious post)
1 1/2 cups almond milk
1 cup cheddar cheese
6 cups steamed broccoli
2 tablespoon gluten free flour
4 tsp grass-fed organic butter

Directions:

Cook chicken, boil noodles. 
In a medium sized pot, melt butter. Add flour and whisk until brown. Slowly yadd almond milk and cook until thick. Add in cheese and stir until melted. Add in the cooked chicken and steamed broccoli. Kid tip: cut the broccoli up really small!! And there you have it! So easy to make, filled with ingredients that you can pronounce, packed with protein and delicious!

Growing up I was always the quiet one and still am in a lot of ways. I wouldn’t talk much and would avoid any confrontation even if I was simply expressing my viewpoint. I was afraid of what others would think.

I’m re-reading a book I read years ago about women building the confidence and courage to lead. Reading through it now I see it in a whole new light. I can be hesitant to take a step forward if I cannot map out my exact path. That’s where faith and trust in my own ability comes in. I’ve had too many missed opportunities with that mentality. The good news is I am writing my future, my story from this point forward and I’m in complete control of where I go from here.

This weeks meal prep I decided to keep the macros as usual, except this time I decided to fully embrace the purpose of counting macros which is the versatility of being to eat anything within your daily intake limits.

Typically I keep it to a 80/20 ratio - 80% favorable sources (Greens, Superfoods, quinoa, etc.) and 20% unfavorables (pasta, rice, bread, etc.). I switched the ratio because I’m interested in experimenting the effects on my body to better equip me with knowledge that I can pass on and teach to my clients that I meal prep for.

Work snacks! Plus my protein bar that I have yet to have today! I know it seems like a ton of snacks but I like keeping my options open depending on what I'm feeling. They include: air popped popcorn, two clementine oranges pre peeled for easy eating, a snack pack, Smart for Life protein bar, and new for this week twizzlers! I LOVE twizzlers and as far as a candy goes licorice is far from the worst thing in my opinion! .

I Always use Salad Leaves as a base, either mixed leaves or something bitter like Rocket / arugula, Watercress, Peashoots. I avoid Raw Spinach as it is High in Oxalates which may cause problems with Digestive issues leading to Kidney Issues

🥗 Red Yellow Bell Peppers + Padron Peppers
💡 Super High in Vitamin C & provide some low carb content. I like to add some texture to salads and love Grilling vegetables & is also quick and easy whilst doing something else. I remove the skin once blistered reduces lectin content which may be an issue for some.
♨ Preheat Cast iron Griddle pan to high. Add the vegetables and char. To speed up and some weight on top of Veg

🥗 Activated Raw Walnuts + Avocado + EV Olive Oil
High in Vitamin E + Phytonutrients such as oleocanthal.
💡 I use a variety of Fat sources as each have their own benefit & try to rotate most of them .They boost the calorie content on most of my meals. I like to choose pungent / bitter oil. This is what it should taste like!

🥗 Chicken Thigh (I used dry spice mix of Turmeric + ginger + black Pepper which boost antioxidants in the body & improves inflammation)
💡I prefer to use thighs generally they have more deeper flavours and more forgiving when cooking. They are easy to cook.

1. Add Chicken thighs skin on to Wide bowl
2. Add 1/4 tsp of turmeric / ginger / cinnamon & few fresh cracks of black pepper then mix allow to infuse for 20mins min
3. Preheat Oven to 180c. Add the chicken thighs, skin up, to a tray. Cook for 20 Mins then turn oven to grill and get the skin slightly crisp 😍 —

Aaaaahhh the beauty of meal prepping!!! I will always remember the first time I meal prepped; my (almost done with) first year uni self walked out of Lidl with a nice stuffed bag in hand, headed to my (nasty ass) halls kitchen, made a big batch of this and a big batch of that, asked myself why the frick I hadn’t started this sooner, aaand I’ve never looked back. I can’t recommend it enough, give yourself 1 hour for two evenings a week to MASS MAKE food. Simply because: 🍇We all know it is healthier and MUCH less calorie dense, since you know exactly what goes in it. 🍇As a result, your progress becomes sooo much more noticeable, and in a shorter amount of time. 🍇Just as importantly, it has saved my strugglin uni student/London intern bank account - with that £6 Pret wrap you could have made 4 equally portioned (and yum!) ones (£2.50 chicken breasts, £1 avocado, £0.50 wraps, £1 tomatoes, £1 dressing). #quickmaths

2️⃣Grill an entire tray of sweet potato wedges (carbs)
3️⃣Grill an entire tray of any of the following: courgette, onions, red peppers, mushrooms, steam a whole floret of broccoli - all sprayed with a dash of olive oil (healty fats)
4️⃣ combine how you please!!!!

I am absolutely NOT a high-skilled chef (the fact that half the memes that @findixon tags me in have to do with burning food while cooking will vouch for this). But I love to learn, and an amazing amount of quick, healthy, few (and cheap) ingredient recipes are eeeverywhereeee. AND I’ll be sharing all of these few-ingredient meals that you can mass make. Check out my stories for the one-pot prawn coconut curry I made tonight, and that I got 4 portioned meals out of!!
