I love meal prepping on Sundays because it makes me feel so accomplished for the week. Helps me from eating out for lunch, saving time at night/in the morning to put together a lunch & helps me stick to my goals💪🏼

One thing that’s essential when it comes to meal prepping is measuring out your portions! What many people are doing wrong when eating healthy and trying to slim down is their portion sizes are way too big and they’re eating too many or too less of the different food groups. Keeping track of how many servings of breads/grains, proteins, vegetables & fruits you’re eating in a day are a great way to start watching what you’re eating. Ready for this SUPER simple, low carb meal prep?!

BUTTERY CHICKEN & ZUCCHINI SKILLET
.
Ingredients:
▪️3 tbsp butter
▪️3 boneless skinless chicken breasts, diced
▪️2 zucchini, chopped
▪️2 tsp minced garlic
▪️2 tbsp dried oregano
▪️1 tsp rosemary
▪️1 tsp thyme
▪️salt & pepper to taste

Directions:
1️⃣ add the butter and garlic into a skillet and cook for about 3 minutes. Add in the diced chicken and the remaining seasoning. Cook until the chicken reaches 165 degrees and is no longer pink. Set the chicken aside on a plate
2️⃣ in the same skillet add in your chopped zucchini and sauté about 3 minutes. Then add back in the chicken and cook everything together for another 3 minutes. Either serve immediately or store in the fridge up to 5 days

BLACK BEAN + CHICKPEA VEGAN CHUNKY BURGERS 🍔

These burgers are 🔥. Every week, I try to make an effort to incorporate more plant-based foods into my diet. So here’s this week’s effort & let me tell you, YO’ GIRL BROUGHT IT.

These patties are EVERYTHING you’re looking for in a vegan burger. They’re crispy, crunchy, chunky, full of flavour & spice, heart, comforting & yes, EVEN “MEATY”. They’re full of fibre, plant-based protein, enzymes, probiotics, B12, minerals, such as magnesium + iron, antioxidants, so easy to make & SO VERSATILE! Chop ‘em up into salads, make them the star of your Buddha bowl, add them to your fave gluten-free pita, bun or sprouted bread & make the burger of your dreams topped with avo slices & Dijon mustard or simply dip ‘em in ketchup as is!

1️⃣INGREDIENTS: 
1 can organic black beans
1 can organic chickpeas
2 tbsp. psyllium husks
2 tbsp. nutritional yeast
2 tbsp. gluten-free oat flour
1 onion, diced
1 tsp. garlic powder
1 tsp. smoked paprika
1 tsp. ground cumin
2 tbsp. organic coconut vinegar
1 tsp. dried parsley
Sea salt + black pepper to taste
2️⃣HOW TO: 
Preheat oven to 350F & line a baking sheet with parchment paper.
Add black beans & chickpeas to a bowl & mash with a potato masher or fork. Leave some chunks for a chunky, delicious burger.
Add all other ingredients to the bowl with the mashed beans. Mix with a wooden spoon until combined.
Once combined, roll the batter into 10-12 patties, depending how big you want them.
Place the patties on the baking sheet & bake for 25-30 minutes, until tops are browned & you can lift the patties easily off the baking sheet.

I like to set up a burrito making station and pump out as many as I've got the supplies for. They can go right in the freezer so you don't have to worry about eating them all before the week is done. Also great if you're the kind of person who doesn't want to eat the same thing every day. FREEZER IS FRIEND.

I know I’ve been sharing a lot of calorie comparison posts lately so I wanted to remind you you don’t have to always beat yourself over caloric goals & amounts.

While the left side is fueling your body, the right side might be fueling your soul ❤️ That doesn’t mean you should have a clean eating lifestyle where you feel the need to binge on foods often.

Rather, you should have a healthy lifestyle you enjoy where you can have treats in spots you want them (NOT when someone is forcing you or on some random occasion you don’t really care about) 💫

I often get asked “What happens when I do binge eat? How do I fix?”. Quite simply forgive yourself & get back to your healthy eating routine 😉 not need for some crazy “cleanse” 😛

Meal prep Sunday .. Not everything is keto but almost low carb. I meal prep for both of us and my partner is not keto but eats keto meals for dinner. He doesn’t need to lose weight but wants to eat healthy at night. This has made my life easier as we are almost going to eat same meal. This week I prepared tuna fry, marinated chicken to bake, grilled two chicken breast, tomato sauce, made vegetables pasta for his lunch, Thai vegetable chicken curry and flattened rice snacks.

Chipotle vs Homemade Chicken Burrito Bowls. Everyone loves Chipotle right? It’s the perfect post workout meal and is incredibly flavorful. But the portions can be a bit large and the price a touch high. .

On the right is my attempt at a Chicken Burrito Bowl.😇 The nice thing about creating the bowls yourself is that you can customize it anyway you like. I have 2-3x the chicken in my homemade bowl for far less than it would cost to add extra at the restaurant. I also prefer more vegetables and less rice which is an easy sub to account for. The biggest advantage of making them at home is the price. I can make my own for just about 1/3 of the price at Chipotle. It really doesn’t take long to prepare them either. I’ve made this recipe enough times that I can be in and out in an hour 😎

I find little wrong with eating at Chipotle. It’s quality food that can certainly fit within the confines of your diet if you frame it correctly. You may have to get creative with how you construct your bowls but it is certainly doable. They tend to put a bit more rice and beans in proportion to meat which isn’t ideal but you can always ask for less rice and extra meat for an upcharge. .

Meal time is the best time! I'm so excited about this week... Not sure why, i just am! 😃
I've recently set myself this mini challenge of incorporating more non-meat based proteins in my preps. The idea is that 1/2 of the meals will be to that effect. Why? For a number of reasons;
1. Forces me to think outside the box a little bit more with my recipes
2. Broaden my horizon with other sources of protein and dietary fats 
3. Get myself eating more colourful and whole foods
4. Why not?! 😜

- Quinoa and black bean salad
- Sweet potato fries
- Steamed broccoli
- Chopped carrots, cucumber, red cabbage and tofu (use pre-marinated tofu) for summer rolls - Sweet potato blueberry muffins

#MealPrep PIZZA 🤗🍕 Ooooh yeah!

💫M E A T Z A: pizza made with a meat crust and topped with sauce, cheese and all your favorite toppings!

💫Crust:
1lb 99% lean ground turkey
1 egg 
1tb grated Parmesan cheese (1)
1tsp dry Italian seasoning
1/4tsp salt
💫Toppings:
1/4cup canned tomato sauce
3/4cup shredded lite mozzarella (3)
8 slices turkey pepperoni (1)
1tb onion, chopped
1tb bell peppers, chopped
.
Combine crust ingredients and shape into a circle (about eight inches big) on a greased baking sheet. Bake in a preheated oven at 400*F for 25min or until cooked through. Remove from the oven and drain any cooking liquids.
Top with the sauce, cheese, pepperoni, peppers and onion.
Bake 8min longer or until the cheese melts.
Cut in slices and enjoy!
Makes 4 servings 2sp each.
